SOUTHWEST TURKEY BURGERS

Most of the turkey burgers that I have had were overcooked and flavorless. This recipe was inspired by some friends of ours that put a Southwest spin on the burger. With a few tweaks these Southwest turkey burgers have become a staple recipe in our house. The patty is flavorful and plays well with some creamy guacamole and spicy salsa.

2 pounds ground turkey
2 large eggs, beaten
¼ cup diced yellow onion
¼ cup plain dry bread crumbs
4 tablespoons garlic-infused olive oil, divided
3 tablespoons seeded and diced fresh jalapeno peppers
2 tablespoons Worcestershire sauce
2 teaspoons prepared yellow mustard
1 teaspoon paprika
1 teaspoon chili powder
½ teaspoon ground cumin
1 teaspoon salt
½ teaspoon freshly ground black pepper
8 each whole wheat hamburger buns, toasted
½ cup guacamole
½ cup salsa

Steps:

  • Combine turkey, eggs, onion, bread crumbs, 2 tablespoons oil, jalapenos, Worcestershire, mustard, paprika, chili powder, and cumin in a bowl. Form into 8 patties. Season lightly with salt and pepper.
  • Heat remaining olive oil in a saute pan over medium to medium-high heat. Place patties in the hot pan and cover partially to help retain moisture, but not so much that the patties braise (boil). Cook until browned and halfway cooked through, about 4 minutes. Continue to cook until no longer pink and an instant-read thermometer inserted into the center reads 165 degrees F (74 degrees C), about 3 minutes more.
  • Serve patties on toasted buns with guacamole and salsa.

This recipe puts a spin on the regular turkey burger. Trying to eat healthy can get pretty bland, but this turkey burger surprised me! It was very easy to make and I had all the ingredients on hand. It's perfect for the cook who doesn't want to put in much effort, but wants to please the crowd that's eating! You can also kick up the spice to whatever level you can handle.

1 lb lean ground turkey
1/2 cup salsa
1 teaspoon garlic salt
1 teaspoon cayenne pepper
2 teaspoons Lawry's Seasoned Salt
1 teaspoon basil

Steps:

  • Start by crumbling the raw turkey meat in a large bowl. Pour in the salsa and the rest of the spices. Mix all ingredients in well with the meat. (You may add extra or less of a particular seasoning if you'd like)
  • Form 4 patties with the meat mixture. Try not to make them too tightly packed, because when they cook they puff up a little and get pretty thick.
  • Spray a large skillet with olive oil cooking spray and put it on medium heat. Cook the four burgers for about 6 minutes on each side, until browned and cooked all the way through. (you may also grill the burgers).
  • Put the burger on a bun, add cheese and whatever other toppings you would like.
  • I mixed light mayo and salsa together to make a creamy sauce to spread on top of my burger. You could also sub the light mayo for light sour cream.

1/2 cup seasoned bread crumbs
1/2 cup frozen corn, thawed
1 can (4 ounces) chopped green chiles
1 tablespoon reduced-sodium taco seasoning
1 pound lean ground turkey
4 teaspoons canola oil, divided
6 whole wheat hamburger buns, split
6 wedges The Laughing Cow queso fresco chipotle cheese, halved
Lettuce leaves, optional

Steps:

  • Preheat broiler. Mix first 4 ingredients. Add turkey; mix lightly but thoroughly. Shape into six 1/2-in.-thick patties., In a large cast-iron or other heavy skillet heat 2 teaspoons oil over medium heat. Cook burgers in batches, adding more oil as needed, until a thermometer reads 165°, 4-6 minutes per side. Keep warm., Meanwhile, place buns on a baking sheet, cut side up. Broil 3-4 in. from heat until toasted, about 30 seconds. Spread tops with cheese. Serve burgers in buns with lettuce, if desired.Freeze option: Place uncooked patties on a waxed paper-lined baking sheet; cover and freeze until firm. Remove from pan and transfer to a large freezer container; return to freezer. To use, cook frozen patties in a nonstick skillet in 2 tsp. oil over medium-low heat until a thermometer reads 165°, 6-8 minutes per side.

8 slices turkey bacon or turkey bacon with black pepper or applewood smoked bacon
1 1/3 pounds ground turkey breast, the average weight of 1 package
2 cloves garlic, finely chopped
1 large shallot or 1/4 red onion, finely chopped
2 tablespoons chopped fresh thyme leaves or 1 teaspoon dried thyme leaves
2 tablespoons chopped fresh cilantro leaves, optional - parsley may be substituted
1/2 small bell pepper, green, red or yellow, seeded and finely chopped
1 serrano or jalapeno pepper, seeded and finely chopped
2 teaspoons, 2/3 palm full, ground cumin
1 to 2 teaspoons cayenne hot sauce, several drops (recommended: Tabasco)
2 teaspoons grill seasoning blend (recommended: Montreal Steak Seasoning by McCormick)
Vegetable oil or olive oil, for drizzling
1/2 pound deli sliced pepper jack cheese
4 crusty kaiser rolls, split
1 cup sweet red pepper relish, found on condiment aisle - pepper jelly may be substituted
Red leaf lettuce
Spicy O-nuts, recipe follows

Steps:

  • Chop your garlic and veggies.
  • Cook bacon in a large nonstick skillet over medium high heat until crisp. Wipe excess grease from pan and return skillet to heat.
  • While bacon cooks, combine turkey meat, garlic, shallot or onion, thyme, cilantro or parsley, bell pepper, serrano or jalapeno pepper, cumin, hot pepper sauce, grill seasoning or salt and pepper. Divide mixture into 4 equal mounds then form meat into patties. Drizzle patties with vegetable oil to coat. Cook in skillet over medium high heat for 5 to 6 minutes on each side. Place sliced cheese over the patties in the last 2 minutes of cooking, use 1 or 2 slices for each patty, as you like.
  • Pile cooked cheeseburgers into buns. Spread sweet relish or jelly on bun tops and set red leaf lettuce into place, using the relish or jelly as glue. Top cheeseburgers with 2 slices of cooked, crisp bacon or turkey bacon and lettluce. Then serve with tortilla chips, tossed salad and/or spicy o-nuts.

This is one of our family's favorites, and it's pretty healthy, too. I usually double the recipe because it reheats beautifully. I haven't tried to freeze the burgers, but I don't know why that wouldn't work.

1 1/4 lbs ground turkey
2 tablespoons cornmeal
2 (3 ounce) cans chopped green chilies, divided
1 tablespoon lime juice, fresh is best but bottled will work
1 egg whites or 1 egg
3 teaspoons cumin, divided
2 teaspoons chili powder
1/2 teaspoon salt
1/4 teaspoon fresh ground pepper
1 tablespoon canola oil
1 cup frozen whole kernel corn or 1 (14 ounce) can whole kernel corn, well drained
1 (14 ounce) can crushed tomatoes or 14 ounces diced tomatoes

Steps:

  • In a large bowl and using your hands mix together the ground turkey, cornmeal, 1 can of the green chilis, lime juice, egg white (or egg), 2 teaspoons cumin, chili powder, salt and pepper.
  • Form turkey mixture into 4 or 5 patties.
  • Heat canola oil in a large fry pan, or if making a double recipe an electric griddle works great.
  • Fry patties about 3 to 5 minutes on each side or until no longer pink in the middle. If making a double batch, as patties are cooked, keep warm in a 150 degree oven on a heat-proof plate.
  • Meanwhile, in a small sauce pan, combine the crushed tomatoes, corn, 1 can chopped green chilis and 1 teaspoons cumin.
  • Heat the "salsa" until bubbly and thoroughly hot.
  • Serve patties with salsa spooned over the top.

⅓ cup red onion, minced
1 jalapeño pepper, minced
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon cayenne pepper
1 ½ teaspoons cumin
1 teaspoon smoked paprika
2 tablespoons vegetable oil, for cooking
sesame seed bun
shredded lettuce
sliced tomato
pepper jack cheese
avocado
½ cup mayonnaise
2 tablespoons canned chilies in adobo
½ lime, juiced

Steps:

  • Place turkey, onion, jalapeño, and spices together in a large bowl and mix together until all the ingredients are incorporated.
  • Lightly wet your hands and use them to shape 4 circular patties about 4 inches (10 cm) in diameter.
  • Heat up about 2 tablespoons of vegetable oil in a pan over medium heat.
  • Cook burgers for 2 minutes on the first side, then flip, lower heat to low, and cook them for an additional 5-6 minutes. Top with pepper jack cheese during the last minute.
  • NOTE: The turkey burgers must be cooked through. Use a meat thermometer to check each patty for an internal temperature of at least 165˚F (75˚C) before removing from pan.
  • Assemble the burgers as desired with bun, chipotle mayonnaise, lettuce, tomato, avocado, and preferred condiments.

1 1/3 lbs ground turkey breast
2 garlic cloves, finely chopped
1 large shallots or 1/4 red onion, finely chopped
2 tablespoons chopped fresh thyme
2 tablespoons chopped fresh cilantro (I usually add a bit more as I'm a cilantro lover)
1/2 small bell pepper, any color, seeded and finely chopped
1 serrano peppers or 1 jalapeno pepper, seeded and finely chopped
2 teaspoons ground cumin
1 -2 teaspoon hot sauce
2 teaspoons McCormick's Montreal Brand steak seasoning
olive oil, for drizzling
4 cheese slices
4 kaiser rolls

Steps:

  • Chop your garlic and veggies. I throw all mine in my food processor and it makes easy work of this step.
  • Combine all ingredients through grill seasoning.
  • Divide mixture into 4 equal patties. Drizzle patties with olive oil to coat. Cook on grill or in skillet over med-high heat until done. (I've found that the veggies make this so moist that they're hard to overcook, although you'll still want to keep an eye on them).
  • Place sliced cheese over the patties the last two minutes of cooking.
  • OPTIONAL (but worth it): Slather with Black Bean Spread/Dip with Lime and Cilantro (recipe posted after this one). Enjoy the rest of the dip with tortilla chips with your burger.
