2 8-inch flour tortillas
2 8-inch tomato-basil tortillas or wraps
4 4-inch yellow corn tortillas
4 large eggs
1 large can sliced green chiles
1 1/2 c milk
1 1/2 c shredded colby jack cheese
1/2 tsp pepper
Dash of salt

Steps:

  • 1. Prepare a 9" X 13" or 8" X 12" glass baking dish with cooking spray. Preheat oven to 350 degrees.
  • 2. Begin strata by tearing the 8 torillas into 1 to 2-inch pieces and setting on separate plate. Line the bottom of the dish with 1/3 of the mixed torn tortillas, overlapping only slightly. Spread 1/2 cup of the shredded cheese over top, and then 1/3 of the can of chiles.
  • 3. In medium-sized bowl, whisk eggs well and then add in the milk, pepper, and dash of salt. Mix well.
  • 4. Pour 1/2 of the egg-milk mixture over the tortilla-cheese-chile base. Reserve other half in bowl.
  • 5. Over egg-milk mixture, add next layer of 1/3 torn tortillas, 1/2 cup of cheese, and 1/3 can of chiles.
  • 6. Pour remaining half of egg-milk mixture over second tortilla-cheese-chile layer.
  • 7. Finish strata by layering remaining 1/3 of torn tortillas, 1/2 cup cheese, and 1/3 can chiles over top. (Arrange tortillas so they attractively cover entire top of dish.)
  • 8. Bake at 350 degrees for 35 minutes. OR--Prepare the night before and refrigerate overnight; microwave on high for 5 minutes (or until dish is completely warm to touch, as microwaves vary). Then, bake for 20-25 minutes until firm in center, puffed and lightly browned. Serve warm with your choice of salsa.

2-1/2 cups cubed day-old white bread
2-1/2 cups cubed day-old whole wheat bread
2/3 cup black beans, rinsed and drained
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1-1/2 cups shredded reduced-fat cheddar cheese, divided
1 cup Southwestern-style egg substitute
2 cups fat-free milk
1/4 cup minced fresh cilantro
1/4 teaspoon salt
6 tablespoons reduced-fat sour cream
6 tablespoons salsa

Steps:

  • Place half of the bread cubes in an 8-in. square baking dish coated with cooking spray. Layer with beans, spinach and half of the cheese. Top with remaining bread cubes., In a large bowl, whisk the egg substitute, milk, cilantro and salt. Pour over top. Let stand for 5 minutes., Bake, uncovered, at 350° for 40 minutes. Sprinkle with remaining cheese. Bake 5 minutes longer or until cheese is melted and a knife inserted in the center comes out clean. Let stand for 10 minutes before cutting. Serve with sour cream and salsa.,

Easy, inexpensive, and tasty. A savory moist alternative to pasta or potatoes, great as a side with grilled meat or poultry, or a main course with a side of greens. A great way to use stale bread (save in the freezer - mix and match, even bagels, but nothing sweet for this recipe!)

4 eggs
1 cup milk
1 (15 ounce) can ranch-style beans, drained
1 (14.75 ounce) can cream-style corn
1 cup shredded Cheddar cheese
1 teaspoon ground cumin
1 teaspoon paprika
½ teaspoon dried oregano
salt and pepper to taste
1 dash hot pepper sauce, or to taste
1 (1 pound) loaf day-old bread, torn into small pieces

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
  • Whisk together the eggs and milk in a large bowl. Stir in the ranch-style beans, corn and Cheddar cheese. Season with cumin, paprika, oregano, salt, pepper and hot sauce, and mix well. Add the bread cubes to the mixture and stir to distribute the cheese and beans.
  • Allow to set for about 20 minutes, until the bread has absorbed the liquid. Stir occasionally, and add more milk if necessary to make the bread moist, but not soggy. Pour into the prepared baking dish, and spread evenly.
  • Bake uncovered for 45 minutes in the preheated oven, until lightly browned and a knife inserted into the center comes out clean. Let stand a few minutes before slicing and serving.

12 corn tortillas (6 inch), quartered, divided
8 eggs
1-1/2 cups milk
1 tsp. ground cumin
1 tsp. garlic powder
6 OSCAR MAYER Chili Cheese Dogs, sliced
1 zucchini, chopped
1 red pepper, chopped
1 can (4 oz.) chopped green chiles, drained
1 pkg. (8 oz.) KRAFT Shredded Cheddar Cheese, divided
1 green onion, chopped

Steps:

  • Heat oven to 350ºF.
  • Place half the tortilla pieces in 13x9-inch baking dish sprayed with cooking spray, overlapping as necessary to form even layer.
  • Whisk eggs, milk, cumin and garlic powder in medium bowl until blended. Stir in chili cheese dogs, zucchini, peppers, chiles and 1 cup cheese; pour over tortilla layer in prepared dish.
  • Top with remaining tortillas, completely covering egg mixture. Sprinkle with remaining cheese.
  • Bake 35 to 40 min. or until center is set. Sprinkle with onions. Let stand 5 min. before serving.
