I found this recipe in a Low-Carb cookbook. The sweetness of the squash mixes well with the spice of the other ingredients. Low-carb and vegetarian!

1 spaghetti squash (3 pounds)
1 (14 ounce) can Mexican-style tomatoes, undrained
1 (14 ounce) can black beans, drained and rinsed
3/4 cup monterey jack cheese, divided
1/4 cup cilantro, finely chopped
1 teaspoon ground cumin
1/4 teaspoon garlic salt
1/4 teaspoon black pepper

Steps:

  • Preheat oven to 350°F.
  • Cut squash in half lengthwise.
  • Remove and discard seeds.
  • Place squash, cut side down, in greased baking pan.
  • Bake 45 minutes to 1 hour or until just tender.
  • Using fork, remove spaghetti-like strands from hot squash and place strands in large bowl.
  • Add tomatoes with juice, beans, 1/2 cup cheese, cilantro, cumin, garlic salt and pepper; toss well.
  • Spray 1 1/2 quart casserole with nonstick cooking spray.
  • Spoon mixture into casserole.
  • Sprinkle with remaining 1/4 cup cheese.
  • Bake uncovered, 30 to 35 minutes or until heated through.
  • Serve immediately.

1 serving cooking spray (such as Pam®)
1 (2 pound) spaghetti squash, halved and seeded
1 (15 ounce) can Mexican-style diced tomatoes, undrained
1 (15 ounce) can black beans, rinsed and drained
¾ cup shredded reduced-fat Monterey Jack cheese
¼ cup minced fresh cilantro
1 teaspoon ground cumin
¼ teaspoon garlic salt
¼ teaspoon freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a baking sheet with cooking spray.
  • Place spaghetti squash, cut-side down, on the baking sheet.
  • Bake squash in the preheated oven until skin can easily be pierced with a fork and insides are tender, 30 to 40 minutes. Remove from the oven (leave oven on) and allow to rest until cool enough to handle, about 10 minutes. Scrape out flesh with a fork and transfer to a large bowl; discard skins.
  • Spray a 1 1/2 quart casserole dish with cooking spray.
  • Add undrained tomatoes, black beans, 1/2 cup Monterey Jack cheese, cilantro, cumin, garlic salt, and pepper to the spaghetti squash; stir well to combine. Spoon into the prepared dish and sprinkle with remaining Monterey Jack cheese.
  • Bake, uncovered, until heated through, 30 to 35 minutes. Serve immediately.

Spaghetti with a twist! Not your traditional Italian-seasoned spaghetti, but a blend of southwest spices adds a unique flavor to this casserole.

2 teaspoons butter
1 pound bulk sausage
1 onion, chopped
1 green bell pepper, chopped
1 garlic clove, minced
1 teaspoon dried oregano
1 tablespoon chili powder
1 teaspoon ground cumin
2 (15 ounce) cans tomato sauce
1 pound spaghetti
2 eggs
1 cup milk
1 cup shredded Monterey Jack cheese
1 cup shredded sharp Cheddar cheese

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish with butter.
  • Cook the sausage with the onion, green bell pepper, and garlic in a large skillet over medium heat, breaking the sausage into small pieces with the back of a wooden spoon as it cooks, until no longer pink, 7 to 10 minutes. Season with the oregano, chili powder, and cumin; allow to simmer another 5 minutes. Pour the tomato sauce into the mixture; simmer another 10 minutes.
  • While the mixture simmers, bring a large pot of lightly salted water to a rolling boil; cook the spaghetti at a boil until cooked through yet firm to the bite, about 12 minutes; drain and return pasta to the pot.
  • Whisk the eggs with the milk; add to the pot with the drained pasta and toss to coat. Transfer the pasta into the prepared baking dish; top with the sausage mixture. Scatter the Monterey Jack and Cheddar cheeses over the top of the pasta and sauce. Cover the dish with aluminum foil.
  • Bake in the preheated oven until the cheeses have melted and the casserole is bubbly, about 15 minutes.

Today was my first time trying spaghetti squash and I was not disappointed. This is a super tasty low calorie meal. Hope you enjoy!

Number Of Ingredients 13

1 spaghetti squash, cooked and shredded
1 lb extra lean ground beef (or ground chicken, turkey or pork)
1 small onion, chopped
1 medium bell pepper, chopped
3 tsp garlic, minced
1/2 Tbsp taco seasoning
salt and pepper to taste
1/4 tsp red pepper flakes, optional
1/2 c refried beans (i used fat free)
1 (14-oz) can black bean, drained and rinsed
1 (10-oz) can tomatoes with chili peppers (rotel) original, mild or hot
1 c cheddar cheese, shredded
additional salt, pepper and taco seasoning for squash

Steps:

  • 1. Preheat oven to 375 degrees. Grease a 9x9" baking dish for the casserole. Use a different pan for baking the squash.
  • 2. With sharp knife slice top out of squash. Stand squash flat on the cut side. Slice squash in half. NOTE: this squash was not easy to cut, pretty tough skin.
  • 3. Scoop out the seed and membrane.
  • 4. Brush inside of each half with oil; sprinkle with salt an pepper. Place cut sides down in baking pan.
  • 5. Bake for about 40 minutes or until squash is fork tender.
  • 6. Remove from oven; let cool for about 10 minutes or until cool enough to handle.
  • 7. REDUCE oven heat to 350 degrees.
  • 8. Using a fork, scrape out the spaghetti squash. Place in bottom of prepared baking dish. Sprinkle with salt and pepper and a small amount of the taco seasoning; toss. Spread squash evenly over bottom of baking dish.
  • 9. In large skillet over medium heat, cook meat, onion, pepper, and garlic until meat is cooked. Add taco seasoning and add salt and pepper to taste. Add pepper flakes for a little more heat. Stir in refried beans and black beans. Remove from heat.
  • 10. Layer beef mixture over squash.
  • 11. Drain some of the liquid from Rotel tomatoes. Spread tomatoes evenly over top of meat layer using about 2 tbsp. of the liquid.
  • 12. Bake for 40 minutes or until bubbly. Remove from oven; sprinkle cheese evenly over top. Return to oven and bake a few more minutes until cheese has melted.

I found this recipe in a potluck cookbook collection. It is so very simple to make, you may all ready have the ingredients on hand! You can use whichever meat you prefer... I made this with the ground turkey and it was yummy!

8 ounces uncooked spaghetti
1/2 cup milk
1 egg
1 lb ground pork or 1 lb ground beef
1 cup onion, chopped
1 green bell pepper, chopped
1 garlic clove, minced
1 tablespoon chili powder
1/2 teaspoon ground cumin
1/2 teaspoon oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
2 (8 ounce) cans tomato sauce
1 (15 ounce) can light kidney beans, rinsed and drained
1 -8 ounce shredded jalapeno monterey jack and cheddar cheese blend
dried cilantro (optional)

Steps:

  • Preheat oven to 425* degrees.
  • Cook spaghetti according to package directions, drain well and return to pot. Mix the milk and egg together thoroughly and then pour into the spaghetti and mix well. Spoon mixture into a buttered 9x13 casserole dish.
  • Meanwhile, in a large saucepan, brown ground meat of choice with the onions, peppers, and garlic until browned and cooked through; drain.
  • Add the chili powder, cumin, oregano, salt, and black pepper, mix thoroughly and cook on low for 2 minutes. Add the tomato sauce and beans and cook for another 2 minutes.
  • Add meat mixture to the casserole dish and spread evenly over the spaghetti. Sprinkle the cheese on top evenly. You may sprinkle some dried cilantro over cheese if desired.
  • Bake in oven for 10 minutes until bubbly. Let stand for 5 minutes. serve!

1 can(s) cream of chicken soup
1 lb chicken breasts, boneless and skinless
1 tsp pepper
2 Tbsp chili powder, divided
1 Tbsp garlic powder
1 lb whole wheat spaghetti
16 oz 2% velveeta cheese, cubed
4 oz green chiles
1 c salsa verde
1 Tbsp dried cilantro
1 1/4 c 1% milk

Steps:

  • 1. Preheat oven to 350 Line a baking sheet with foil and spray with nonstick spray In a small bowl combine 1 tsp. pepper, 1 tbsp. chili powder & 1 tbsp. garlic powder Sprinkle both sides of each chicken breast chicken with seasoning & place in baking dish
  • 2. Cook for 20-25 minutes or until juices run clear Cut into bite size pieces and reserve on a plate Now for the Pasta: Fill large pot with water and bring to a boil Salt the water Cook pasta until desired doneness is reached Drain and return to pasta pot
  • 3. And now the Cheesy Goodness: In a microwave safe bowl combine remaining ingredients Heat in the microwave for 2 minute intervals while stirring until smooth and heated through Add chicken to cheesy mixture and stir Pour over spaghetti and gently toss to combine Serve into bowls and ENJOY!
  • 4. Optional Toppings: grated cheese, fresh hopped cilantro, chili powder or sour cream

This is a great weeknight meal. You savor every bite. I really can't believe how tasty it is with such few ingredients. The original recipe also called for sliced olives (2 1/4 oz) that you add with the mushrooms.

12 oz cooked spaghetti
1 1/2 lb ground beef
1 small onion, chopped
1 pkg taco seasoning mix
1 jar(s) spaghetti sauce (26oz)
1 can(s) sliced mushrooms, drained (4 1/2 oz)
2 c shredded, cheddar cheese

Steps:

  • 1. Cook spaghetti according to package directions. Meanwhile, in a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain.
  • 2. Stir in the taco seasoning, spaghetti sauce, and mushrooms. Drain spaghetti; stir into the beef mixture.
  • 3. • Transfer to a greased shallow 3-qt. baking dish; sprinkle with cheese. Bake, uncovered, at 350° for 25-30 minutes or until heated through. Serve with lettuce, tomatoes, sour cream and salsa.
