8 eggs
2 tablespoons milk

3 tablespoons extra virgin olive oil, divided
1/2 teaspoon salt

Steps:

  • Beat eggs with milk until incorporated. Set aside.
  • In a large nonstick skillet, heat one tablespoon of extra virgin olive oil over medium high heat. Add the chorizo to the skillet, breaking it up as it cooks. Cook for about 5 minutes, or until done, and then remove to a plate lined with paper towels. Wipe out the skillet with a couple of paper towels.
  • In the same skillet, heat remaining 2 tablespoons of olive oil over medium high heat. Add the red and green pepper and cook 3-4 minutes, until peppers begin to soften.

1/2 lb cooked chicken strips, or left over chicken
1 Tbsp taco seasoning mix
1 c corn
1/2 c chunky slasa - mild, med or hot
4 oz can green chilies
1 Tbsp black or green olives, sliced
1/4 c water
1/2 - 1 c cooked brown or white rice
1 tsp chopped cilantro (or to taste)
1/4 c shredded mexican blend cheese

Steps:

  • 1. Spray a skillet with pan spray and cook chopped onion for a minute or two.
  • 2. Add next 7 ingredients (up through water) and bring to boil. Lower heat and simmer for a few minutes.
  • 3. Add rice and simmer until heated through. If it seems too dry, add a little more water.
  • 4. Add salt and pepper to taste. Turn off heat and top with cilantro and cheese. Cover and let sit until cheese has melted.

  • In a large skillet, combine the rice, salsa, chicken, black beans (drained), chili powder, and chicken broth. Stir until everything is evenly combined. Place a tight fitting lid on the skillet, turn the heat on to high, and let the skillet come to a full boil. As soon as the skillet comes to a boil, turn the heat down to low and let it simmer for 30 minutes. Make sure it is simmering the entire time, turning the heat up slightly if needed (you should be able to hear it simmer quietly). After 30 minutes, turn off the heat, remove the lid, and fluff the mixture with a fork. All of the liquid should be absorbed and the rice should be tender. Sprinkle 1 cup of shredded cheese over top, replace the lid, and let it sit for a few minutes, or until the cheese is melted. Meanwhile, slice the green onions. Sprinkle the green onions over the melted cheese and serve hot.

A spicy macaroni skillet dinner that I found on Muellers. Although the recipe doesn't call for it, you could probably add ground beef (I just followed the original recipe).

8 oz elbow macaroni
2 Tbsp vegetable oil
1 medium onion, chopped
1 medium green bell pepper, chopped
2 clove garlic, minced
2 Tbsp chili powder
1/2 tsp ground cumin
1/2 tsp salt (optional)
2 14 oz. can(s) diced tomatoes, undrained
1 15 oz. can(s) kidney beans, rinsed and drained
1 11 oz. can(s) corn, drained
1/2 c shredded pepper jack cheese

Steps:

  • 1. Cook and drain pasta according to package directions.
  • 2. Heat oil in a large skillet over medium-high heat; add onion, green pepper, garlic, chili powder, cumin and salt; cook, stirring occasionally, for 4 minutes, or until vegetables are tender.
  • 3. Add tomatoes, kidney beans and corn; bring to a boil.
  • 4. Reduce heat; simmer, stirring occasionally, for 15 minutes.
  • 5. Toss with hot macaroni; sprinkle with cheese.

1 tablespoon vegetable oil
1 1/4 pounds boneless skinless chicken breasts, cut into 1-inch pieces
1 bag (1 pound) frozen broccoli, red peppers, onions and mushrooms
1 can (15 ounces) Progresso™ black beans, rinsed and drained
1 cup Old El Paso™ Thick 'n Chunky salsa
1 Old El Paso™ flour tortilla for burritos (8 inch) (from 11.5-ounce package), cut into 2x1-inch strips
1 cup shredded Cheddar cheese (4 ounces)

Steps:

  • In 10-inch skillet, heat oil over medium-high heat. Cook chicken in oil 3 to 4 minutes, stirring occasionally, until no longer pink in center.
  • Stir in vegetables, beans and salsa; reduce heat to medium. Cover and cook 6 to 8 minutes, stirring occasionally, until vegetables are crisp-tender.
  • Sprinkle with tortilla strips and cheese. Cover and cook about 2 minutes or until cheese is melted.
