This recipe is at least as easy as pie, probably easier. Sweet potatoes and sweet marshmallows make for a sweet dish.

1 pound sweet potatoes, peeled and cubed
1 cup brown sugar
1 (10.5 ounce) package marshmallows

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13-inch casserole dish.
  • Toss sweet potatoes with brown sugar in a bowl until coated; arrange in the prepared casserole dish. Top sweet potatoes with marshmallows.
  • Bake in the preheated oven until sweet potatoes are tender and marshmallows are browned, 35 minutes.

Ready, Set, Cook! Special Edition Contest Entry: Try this yummy cheesy zesty potato casserole! It has all of the southwest flavors I love. It's very comforting and satisfying too. It is super easy to throw together, and uses pantry staples most of us have on hand. I really enjoyed it with tuna, but I think it would be just as good Vegetarian or with cooked chicken, cooked ground beef or cooked sausage. I made this pretty mild, but it can easily be spiced up with fresh or canned jalapenos or added red pepper flakes or hot sauce. Feel free to use reduced-fat cheese.

1 (20 ounce) bag Simply Potatoes Diced Potatoes with Onion
1 (12 ounce) can tuna, drained and flaked (You could make this Vegetarian or use cooked chicken, cooked ground beef, or cooked sausage)
1 red bell pepper, seeded and diced
1 (15 ounce) can corn, drained
1 (15 ounce) can black beans, rinsed and drained
1 (4 ounce) can diced green chilies
1/4 cup pickled jalapeno pepper, chopped (to make it spicier, you can use fresh jalapenos or canned chopped jalapenos)
3 cups colby-monterey jack cheese, shredded (2 for filling, 1 to top)
1 cup sour cream
3/4 cup salsa, drained (I used Pace chunky mild salsa)
1/4 cup cilantro, minced
2 garlic cloves, minced
1 teaspoon ground cumin
1/2-1 teaspoon salt, to taste
1/2-1 tomatoes, seeded and chopped
6 green onions, sliced
sour cream, to serve
hot sauce, to serve (we like Tapatio)

Steps:

  • Preheat oven to 350°F Grease a 13x9 baking dish.
  • Mix together the first 8 ingredients through the first 2 cups of shredded cheese.
  • Mix together the sour cream, salsa, cilantro, garlic, cumin and salt and stir into the potato mixture until it's well coated.
  • Spread mix into prepared baking dish and top with remaining cup of cheese.
  • Bake for 60 minutes.
  • Remove from oven and top with fresh chopped tomatoes and sliced green onions.
  • Can serve right away, but sauce will thicken more if you let it sit 10-15 minutes.
  • Serve with sour cream and hot sauce. This is really good served alongside a crisp salad.

Sweet-potato slices provide a mellow base for the strong flavors of chipotle chile and cilantro. Crushed tortilla chips and mild grated cheese form a crunchy top to this potato gratin.

Unsalted butter, for baking dish
4 large sweet potatoes (about 4 pounds), peeled and thinly sliced into rounds
Coarse salt and freshly ground pepper
1 1/2 cups grated Chihuahua or Monterey Jack cheese (6 ounces)
1 1/2 cups Cotija or French feta cheese, crumbled (6 ounces)
1 small onion, thinly sliced
1 teaspoon finely chopped canned chipotle chile in adobo (optional)
1/4 cup plus 2 tablespoons homemade or low-sodium store-bought chicken stock, or water
1/4 cup finely chopped fresh cilantro leaves
1 cup crushed tortilla chips
Lime wedges, for garnish
Mexican crema or sour cream, for garnish (optional)

Steps:

  • Preheat oven to 350 degrees. Butter a 9-by-13- inch baking dish; set aside. Toss potatoes with 1 1/2 teaspoons salt and 1/4 teaspoon pepper. Arrange half of potatoes in buttered dish, overlapping slices. Sprinkle with half of each cheese. Top with onion.
  • Stir chipotle (if desired) into stock; drizzle over onion. Sprinkle with half the cilantro. Top with remaining potatoes; sprinkle with remaining cheeses and cilantro. Scatter chips on top.
  • Cover with foil; bake 30 minutes. Remove foil; bake until very tender and top is well browned, about 30 minutes more. Let cool slightly before serving. Serve with limes, and with crema, if desired.

5 pounds sweet potatoes, scrubbed
½ cup unsalted butter, at room temperature
½ cup white sugar
⅓ cup honey
⅓ cup light brown sugar
1 ¾ teaspoons salt, or to taste
¾ teaspoon freshly grated nutmeg, or to taste
3 large eggs, lightly beaten
2 teaspoons vanilla extract
3 cups warm milk
1 tablespoon unsalted butter, softened
1 cup light brown sugar
1 cup all-purpose flour
½ teaspoon ground cinnamon
½ teaspoon freshly grated nutmeg
¼ teaspoon salt
½ cup cold unsalted butter
1 cup pecans, chopped

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Place potatoes on a foil- or parchment-lined baking sheet.
  • Bake in the preheated oven until very tender, 1 to 1 1/2 hours. Remove from the oven and allow to cool briefly, about 5 minutes. Peel.
  • Transfer peeled sweet potatoes into a large bowl of an electric mixer fitted with beaters or a whisk attachment. Mix on low speed to begin mashing them. Add 1/2 cup butter and mix until absorbed. Add white sugar, honey, brown sugar, 1 3/4 teaspoon salt, and 3/4 teaspoon nutmeg; mix until thoroughly blended. Add eggs and vanilla and beat on medium speed for 2 minutes.
  • Reduce mixer speed to low and slowly add the heated milk. Taste and adjust salt and nutmeg if needed.
  • Grease a 9x13x2-inch baking dish with 1 tablespoon softened butter and pour potato mixture into it.
  • Pour brown sugar, flour, cinnamon, nutmeg, and salt for topping into a mixing bowl and mix well. Use your fingers to work the chilled butter into the mixture until it resembles oatmeal with some pea-sized pieces of butter in it. Stir in the pecan pieces and mix well. Sprinkle the mixture evenly over the top of the sweet potatoes.
  • Bake in the preheated oven until topping is golden brown and crisp and sweet potatoes are set, but still slightly loose in the center, 30 to 45 minutes.

1 small onion, chopped

1 cup salsa
1/4 cup minced fresh cilantro
3 teaspoons each ground cumin, chili powder and paprika
2 teaspoons garlic powder
12 corn tortillas (6 inches)
2 large tomatoes, sliced
2 cups shredded Monterey Jack or cheddar-Monterey Jack cheese

Steps:

  • Preheat oven to 375°. Crumble chorizo into a large skillet; add onion. Cook over medium heat until meat is fully cooked; drain. Add beans, tomato sauce, corn, chilies, salsa, cilantro and seasonings; heat through., Place six tortillas in the bottom of a greased 13x9-in. baking dish. Layer with 3-1/2 cups meat mixture, the tomatoes and 1 cup cheese. Top with remaining tortillas, meat mixture and cheese., Cover and bake 40 minutes. Uncover; bake 5-10 minutes or until heated through. Let stand 10 minutes before cutting.

This recipe has been in the family for years and is always a huge hit. The potatoes can be substituted for frozen hash browns making it really easy to prepare and still tastes great.

6 medium potatoes
¼ cup butter
1 (10.5 ounce) can condensed cream of mushroom soup
1 pint sour cream
⅓ cup chopped green onion
1 ½ cups shredded Cheddar cheese
½ cup crushed cornflakes cereal
2 tablespoons melted butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 2 1/2 quart casserole dish.
  • Place whole potatoes in their skins into a large pot of boiling water; cook for 25 to 30 minutes. Remove potatoes, and discard water. When cool enough to handle, peel potatoes, and grate into a medium bowl.
  • Melt 1/4 cup butter in a large skillet over medium heat. Stir in soup; cook until soup begins to bubble. Remove from stove, and mix in sour cream, green onion, and cheese. Stir in potatoes. Pour mixture into casserole dish.
  • In a resealable bag, shake together the cornflake crumbs and 2 tablespoons melted butter. Sprinkle over top of casserole.
  • Bake in a preheated oven 45 minutes.

2 cups (8 ounces) uncooked elbow macaroni
2 pounds ground beef
1 large onion, chopped
2 garlic cloves, minced
2 cans (14-1/2 ounces each) diced tomatoes, undrained
1 can (16 ounces) kidney beans, rinsed and drained
1 can (6 ounces) tomato paste
1 can (4 ounces) chopped green chiles, drained
1-1/2 teaspoons salt
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/2 teaspoon pepper
2 cups shredded Monterey Jack cheese
2 jalapeno peppers, seeded and chopped

Steps:

  • Cook macaroni according to package directions. Meanwhile, in a large saucepan, cook beef and onion over medium heat, crumbling beef, until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. Stir in next 8 ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. Drain macaroni; stir into beef mixture., Preheat oven to 375°. Transfer macaroni mixture to 2 greased 2-qt. baking dishes. Top with cheese and jalapenos. Cover and bake at 375° for 30 minutes. Uncover; bake until bubbly and heated through, about 10 minutes longer. Serve 1 casserole. Cool the second; cover and freeze up to 3 months., To use frozen casserole: Thaw in refrigerator 8 hours. Preheat oven to 375°. Remove from refrigerator 30 minutes before baking. Cover and bake, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°, 20-25 minutes.
