1 box (7.5 oz) Betty Crocker™ Suddenly Salad® ranch and bacon salad mix
1/2 cup mayonnaise or salad dressing
1 package (6 oz) refrigerated cooked fajita chicken breast strips, coarsely chopped
1 can (11 oz) Southwestern style corn, drained
1 cup halved cherry tomatoes
4 oz pepper Jack cheese, cut into 1/2-inch cubes (1 cup)
2 tablespoons chopped fresh cilantro leaves, if desired

Steps:

  • Fill 3-quart saucepan 2/3 full of water; heat to boiling. Add Pasta. Gently boil, uncovered 12 minutes, stirring occasionally; drain. Rinse with cold water to cool; drain well.
  • In small bowl, combine Seasoning mix from packet and mayonnaise. In large bowl, gently toss seasoning mixture, chicken, corn, tomatoes and cheese until mixed; stir in cooked pasta. Top with cilantro, if desired.

FOR DRESSING
2/3 c canola or vegetable oil
1/3 c fresh or bottled lime juice
2-3 clove garlic, minced
2 Tbsp southwest seasoning blend
1 tsp kosher salt
FOR SALAD
1 1/2 lb boneless, skinless chicken breasts or tenders, cubed into bite sized pieces
1 tsp southwest seasoning blend
1 16 oz box rotini pasta
1 can(s) black beans, drained and rinsed
1 c frozen corn, thawed
1 medium red bell pepper, chopped
1 bunch green onion, sliced thin including white and green part
1 pkg grape tomatoes, halved

Steps:

  • 1. In a large skillet over medium heat, cook cubed chicken breast seasoned with 1 tsp southwest seasoning until cooked through.
  • 2. While chicken is cooking, cook pasta according to package directions, drain but do not rinse.
  • 3. In a very large bowl (need room to get a good mix of ingredients), mix together all of the salad ingredients.
  • 4. In a 2 cup measuring cup, mix all of the dressing ingredients with a small whisk until fully combined. Pour dressing mixture over salad mixture in the large bowl. Mix well with a spoon until all of the salad ingredients are coated with dressing.
  • 5. I always double this recipe and my son, of course adds shredded cheddar on top! You can vary the amount of vegetables and beans according to what you like.

1/2 (16 ounce) package rotini pasta
1-2 chicken breast cooked, cooled and cubed (about 1 1/2-2c)
1/4 c vegetable oil
1/3 c lime juice
1 Tbsp chili powder, or to taste
1 Tbsp chipolte powder
2 tsp cumin
1/2 tsp salt
2 clove garlic, minced
1 small can, (drained) or 1 1/2 cups whole kernel corn
1 (15 oz) can dark or light red kidney beans, drained and rinsed
1 diced green, red or combo bell pepper
1/2 red onions. finely chopped
1/2 c fresh cilantro leaves roughly chopped
1/2 (14.5oz) can of diced tomatoes, drained well
1 small 4 oz can of black olives, drained
1 c shredded cheddar cheese or monterey jack

Steps:

  • 1. In a large bowl, whisk together oil, lime juice, chili powders, cumin, salt and garlic. Add chicken and place into the refrigerator to allow to sit while pasta cooks, cans are opened and veggies are chopped.
  • 2. Cook pasta 8-10 min and drain well. Rinse under cool water to stop cooking process and leave in strainer to completely drain and cool while gathering ingredients.
  • 3. To the bowl with the chicken, add pasta and toss to coat. Add in olives, corn, kidney beans, green bell pepper and 1/4c of the cilantro. Refrigerate or serve immediately. Add cheese and give a quick stir right before serving. Garnish with remaining 1/4c cilantro right before service. This is best making a day prior and tossing in the cheese and topping with the cilantro at the last minute.

While browsing for a pasta salad recipe, I found Inez Willenborg's Homestyle Macaroni Salad. It sounded good, but I didn't have all the ingredients, so I improvised and came up with this one. We absolutely loved it. Thank you, Inez, for the recipe that was the inspiration for this winner.

8 ounces bow tie pasta (or pasta of your choice)
2 hardboiled egg, chopped
1/2 cup celery, chopped fine
1/4 cup fresh salsa (homemade or the refrigerated variety sold in the produce section)
2 scallions, chopped
1/4 cup buttermilk
1/4 cup Miracle Whip (or mayonnaise)
1/2 teaspoon garlic powder
1/8 teaspoon cayenne pepper
1/2 teaspoon salt
1/8 teaspoon fresh ground black pepper

Steps:

  • Cook pasta in salted boiling water until tender.
  • Drain pasta and rinse with cold water.
  • Combine all remaining ingredients in a large bowl.
  • Add pasta and stir until the pasta is coated.
  • Refrigerate at least an hour before serving.

1/2 cup cold water
1/3 cup olive oil
2 tablespoons cider vinegar
1 tablespoon chopped fresh cilantro
1 to 2 tablespoons red pepper sauce, if desired
1/2 teaspoon ground cumin
1 can (15 oz) Progresso™ black or pinto beans, rinsed and drained
1 can (14.5 oz) diced tomatoes with jalapeños, drained
1 can (11 oz) whole kernel corn with red and green peppers, drained
1/2 cup sliced ripe olives
1/2 cup chopped red, yellow or green bell pepper
1 medium avocado, peeled, cut into 1/2-inch cubes
8 oz pepper Jack cheese, cut into 1/2-inch cubes (2 cups)
Romaine lettuce leaves, if desired

Steps:

  • Empty Pasta mixes into 4-quart saucepan 2/3 full of boiling water. Gently boil uncovered 12 minutes, stirring occasionally.
  • Meanwhile, in large bowl, stir together Seasoning mixes, cold water, olive oil, vinegar, cilantro, pepper sauce and cumin.

23 oz. refrigerated cheese tortellini
fresh corn kernels (from 1 ear of sweet corn)
1 1 red bell pepper, chopped
1 cup cherry or grape tomatoes, cut in half
1 cup black beans, rinsed and drained
1/2 of a small red onion, chopped
1 large Avocado, chopped
6 slices thick cut bacon, crumbled ((more or less to taste))
1/2 cup finely grated Pepper Jack cheese (or more to taste)
3/4 cup salsa ((medium for more of a kick))
1/2 cup sour cream ((may sub.plain Greek yogurt))
1/4 cup mayonnaise
juice from 1 lime ((2 tablespoons))
1 jalapeno (seeded, deveined and roughly chopped)
2 garlic cloves, peeled
1/3 cup loosely packed cilantro
1/2 tsp EACH salt, ground cumin, sugar**
1/4 tsp EACH pepper, smoked paprika
Milk as needed
Hot sauce to taste

Steps:

  • Add all of the Creamy Salsa Dressing ingredients to a blender or food processor and "chop" then puree until smooth, scraping sides down as needed. Add milk, a tablespoon at a time, to reach desired consistency.
  • Cook Tortellini in generously salted water just until al dente according to package directions (do NOT overcook - we don't want soggy tortellini). Rinse tortellini in cool water and add to a large serving bowl. Add. corn, bell pepper, tomatoes, black beans, red onion and half of the dressing. Gently toss. Cover and chill in the refrigerator for at least one hour.
  • When ready to serve, add avocado, bacon, cheese and the desired amount of dressing to the salad (you may not use all it) and gently toss to combine. Add additional dressing if needed so its nice and creamy. Taste and season with salt and pepper and hot sauce if desired.

some pasta; cooked, rinsed in cool water, drained (wagon wheel pasta is a nice touch) 1/2 pound of uncooked pasta makes enough for 4-6 servings
some salad dressing (ranch or chipotle ranch are my favorites)
some shredded or chopped lettuce
some tomato chunks
some sliced black olives
some chopped onion
some chopped peppers (green, jalapeno, etc...)
some cooked corn, drained & cooled
some black beans; cooked, rinsed in cool water, & drained
some shredded or small chunks of cheese (pepper jack, colby jack, cheddar, etc...)
some crumbled fritos
OTHER OPTIONS TO CONSIDER...
some chicken strips or chunks, seasoned with southwestern spices
some salsa
some sour cream
some crumbled bacon or bacon bits
some ranch-flavored croutons, instead of crumbled fritos

Steps:

  • 1. While pasta is cooking, prepare your chopped vegetables. If using canned corn or black beans, just rinse & drain well. Cover & refrigerate until ready to assemble the salad.
  • 2. Mix the drained & cooled pasta with some of the salad dressing. Cover and refrigerate if you are not ready to eat.
  • 3. When it's time for dinner, layer the pasta, then the vegetables, in a large pasta bowl or individual salad plates.
  • 4. Top with crumbled Fritos and shredded cheese.
  • 5. Decisions, decisions... Will you top with more salad dressing or possibly salsa & sour cream?
  • 6. Whatever you decide, enjoy!

1 c frozen corn kernels, thawed
1 can(s) Rotel tomatoes with chilis (approx. 12 oz)
1/2 c olive oil
1/3 c white vinegar
1/3 c lime (or lemon) juice
1 1/2 Tbsp garlic salt
1 tsp sugar
1 Tbsp chili powder
1/4 c cilantro, chopped

Steps:

  • 1. Boil pasta as directed on package.
  • 2. Rinse and put in a large bowl.
  • 3. Add all veggies.
  • 4. Combine oil, vinegar, lemon juice, seasonings, and cilantro. Stir into pasta mixture. Let chill a few hours to blend flavors.

I came up with this from what I had in my pantry. I used half a box of shells and half rotini. Could add olives, cheese, corn or whatever you have in a pinch. I also had a jar of ranch seasoning which I just mixed with milk and mayo.

6 ounce(s) large elbow macaroni
1 package(s) bird's eye recipe ready southwestern blend (see notes if you don't have this)

1/4 cup(s) green onion, sliced
2 tablespoon(s) chopped cilantro (optional)

Steps:

  • Bring salt and water to a boil in a large dutch oven.
  • In your colander pour package of Bird's Eye Recipe Ready Southwestern blend.
  • Once water boils add pasta and cook 7 minutes.
  • Pour over veggies in colander.
  • Shake colander to drain well and add to plastic storage container.
  • Pour dressing over pasta and veggies. Add salt, pepper and garlic to taste. Refrigerate 30 minutes.
  • Add green onion, cilantro, and cheese. Stir to combine and serve. Refresh with a couple tablespoons of dressing if desired. Enjoy!
