2 cups shredded cooked chicken breast
½ cup black beans, rinsed and drained
½ cup corn
½ cup shredded Cheddar cheese
⅓ cup diced red onion
⅓ cup chopped red bell pepper
1 jalapeno pepper, seeded and diced
1 cup ranch dressing
1 chipotle chile pepper in adobo sauce, sauce reserved
3 mini sweet peppers
½ (8 ounce) package tortilla chips
¼ cup mixed berries

Steps:

  • Place chicken, black beans, corn, Cheddar cheese, red onion, red bell pepper, and jalapeno in a large bowl; toss well. Add ranch dressing, chipotle pepper, and 2 tablespoons reserved adobo sauce. Refrigerate salad until ready to serve.
  • Serve chicken salad in a bento box, using a silicone muffin cup. Fill other compartments with sweet peppers, tortilla chips, and mixed berries.

1 tablespoon olive oil
¾ cup chopped boneless chicken breast
¼ cup seedless red grapes, halved
½ stalk celery, diced
2 tablespoons mayonnaise
1 pinch dried tarragon, or to taste
1 pinch salt to taste
1 flour tortilla
1 small apple, cored and chopped
1 teaspoon chopped walnuts, or to taste

Steps:

  • Heat oil in a skillet over medium-high heat. Saute chicken in the hot oil until browned and no longer pink, about 8 minutes. Remove from heat and let cool, about 10 minutes.
  • Stir cooled chicken, grapes, celery, and mayonnaise together in a bowl. Add tarragon and season with salt. Place chicken mixture into a compartment of a bento box.
  • Roll or gently fold the tortilla and place into the largest section of the bento box. Place apple and walnuts in additional compartments. When ready to eat, spoon chicken mixture onto the tortilla, add the other toppings, and wrap.

4 cups cubed rotisserie chicken
2 cups frozen corn, thawed
1 cup chopped roasted sweet red peppers
1 cup chopped red or sweet onion
1 cup minced fresh cilantro
DRESSING:
3 tablespoons lime juice
3 tablespoons olive oil
4 teaspoons honey
2 teaspoons ground cumin
1 teaspoon salt
1 teaspoon chili powder
1/2 teaspoon coarsely ground pepper
SALADS:
Torn mixed salad greens and sliced almonds
PITAS:
Whole wheat pita pocket halves and lettuce leaves
WRAPS:
