I always like blazing salsas. That's just me. But when it comes to my daughter, or my family and guests, I need to have something for those who don't like pure fire. This is one of the salsas I use then. One thing I like about this one, is that the flavoring is a bit fresher and not as typical of the mild salsas that taste like diced tomatoes. I think the basil is the secret weapon- it has a little bite, but it is cool to the taste. Whatever it is, everyone seems to like it!

2 large tomatoes, peeled,seeded and chopped
1/2 green pepper, finely chopped
1/2 red bell pepper, finely chopped
1/2 red onion, finely chopped
1/2 cup frozen corn, thawed
1 -3 clove garlic, minced
2 tablespoons olive oil
2 tablespoons fresh lime juice
1 tablespoon white wine vinegar
1 tablespoon chopped fresh basil
1/4 teaspoon dried oregano
1/2 cup tomato sauce
1 tablespoon sugar
salt, to taste
black pepper, to taste

Steps:

  • Mix together all ingredients and chill for several hours before using (to allow flavors to combine).

1/2 cup shredded zucchini
2 tablespoons canned diced green chiles, drained
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon black pepper
1 lb uncooked ground chicken or 1 lb ground turkey
1 tablespoon olive oil or 1 tablespoon cooking oil
1/2 cup salsa
1 green onion, chopped (2 tablespoons)
2 tablespoons snipped fresh cilantro
1 tablespoon plain low-fat yogurt
4 flour tortillas
lettuce leaf

Steps:

  • Combine zucchini, green chiles, cumin, salt, and pepper. Add ground chicken; mix well. Shape chicken mixture into four 1/2-inch-thick patties.
  • In a large skillet cook patties in hot oil over medium heat about 10 minutes or until no longer pink (165 degree F), turning once.
  • Meanwhile, combine salsa, green onion, cilantro, and yogurt. Place each burger on the upper half of a flour tortilla. Add lettuce and salsa mixture. Fold the bottom half over burger; fold the sides to the center, overlapping slightly. (If using hamburger buns, line bottoms of the toasted buns with lettuce leaves; add the burger, salsa mixture, and bun tops.).

1 can (15-1/4 ounces) whole kernel corn, drained
1 can (15 ounces) black beans, rinsed and drained
1 jar (16 ounces) mild salsa
4 boneless skinless chicken breast halves (5 ounces each)
Optional toppings: Sweet red and yellow pepper strips, sour cream, shredded cheddar cheese and sliced green onions

Steps:

  • In a 3-qt. slow cooker, layer three-fourths each of the corn and beans and half the salsa. Arrange chicken over salsa; top with remaining corn, beans and salsa. Cover and cook on low for 4-5 hours or until chicken is tender. , Shred chicken with 2 forks and return to the slow cooker; heat through. 1/2 cup pine nuts, toasted
1/2 cup red bell pepper, diced fine
2 tablespoons chopped cilantro
2 tablespoons fresh lime juice
1/4 teaspoon salt
1/2 teaspoon cayenne pepper (optional)
1 lb ground chicken meat
2 tablespoons chopped green chilies
3/4 teaspoon ground cumin
1 teaspoon mild chili powder
3 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup black beans, rinsed and drained
1 leaf lettuce
4 kaiser rolls
4 slices monterey jack cheese

Steps:
