This is the simplest, most delicious recipe that is good all year long. Warning: this is NOT a light recipe!

2 cups all-purpose flour, sifted
1 teaspoon salt
⅔ cup shortening (such as Crisco®)
6 tablespoons ice water, or as needed
4 large tomatoes, sliced
⅔ cup chopped green onions
10 leaves fresh basil, chopped
salt and ground black pepper to taste
2 cups grated Cheddar cheese
2 cups grated mozzarella cheese
2 cups mayonnaise (such as Duke's®)

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Sift together flour and salt in a bowl. Cut in shortening with a fork or pastry blender until the mixture resembles small peas. Add ice water, 1 tablespoon at a time, tossing with a fork, until flour mixture is moistened. Add just enough water that a handful of dough clumps together when squeezed. Form dough into a ball, roll out into a large rectangle, and press gently into the bottom and up the sides of a 9x12-inch casserole.
  • Bake crust in the preheated oven for 10 to 12 minutes.
  • Layer sliced tomatoes on baked crust. Sprinkle with green onions and basil, and season with salt and pepper.
  • Mix together Cheddar cheese, mozzarella cheese, and mayonnaise in a bowl. Spread cheese mixture over tomatoes.
  • Bake until edges are lightly browned and cheese mixture is melted and bubbly, 40 to 50 minutes.

An old co-worker of mine gave me this recipe, it is really easy to make and so YUMMMEEEE. I added the sour cream and ham cubes...it really adds a lot.

4 -6 tomatoes, peeled and sliced
10 fresh basil leaves, chopped
1/2 cup of finely chopped onion
1 frozen deep dish pie shell
1 cup mozzarella cheese
1 cup cheddar cheese (or any kind of cheese you have)
1 cup mayonnaise
1/2 cup sour cream
1/2 cup cubed ham (or more)
salt and pepper

Steps:

  • Preheat oven to 350 degrees.
  • Place peeled tomato slices on a doubled paper towel, sprinkle with salt and pepper and then put another paper towel on top of them to soak up some of their juice.
  • Add a thin layer of bread crumbs over the bottom of the pie crust.
  • Layer tomato slices, basil, onions and the ham cubes in the pie shell. Combine the cheeses and the mayo and sour cream in a small bowl and spread the mixture over the top of the pie filling (tomatoes, basil, onion and ham).
  • Bake for about 30-40 Minutes. Cut into slices and serve warm.

How to make Southern Tomato Slab Pie

2 1/2 cups all purpose flour
1 1/2 teaspoons sea salt
1 teaspoon sugar
1 cup cold butter, cut into cubes (2 sticks)
6-8 tablespoons cold milk
2 cups Borden® Sharp Cheddar Cheese Shreds
2 cups Borden® Four Cheese Mexican Shreds
1 1/4 cups mayonnaise
2 garlic cloves, minced
3/4 cup chopped scallions
1/2 cup sliced basil ribbons (julienne)
4 ripe tomatoes, sliced

Steps:

  • Place the flour, salt, and sugar in a food processor. Pulse to combine. Then add the cold butter cubes and pulse into a fine pebble mixture. Add 6 tablespoons cold milk and pulse until the dough comes together into a smooth ball. If needed, add 1-2 more tablespoons milk. Press the dough into a flat rectangle and wrap in plastic. Refrigerate for at least 30 minutes.
  • Preheat the oven to 350 degrees F. In a bowl, mix theBorden® Sharp Cheddar Cheese Shreds, mayonnaise, garlic, and scallions. Slice the tomatoes into 1/4 inch rounds and lay the slices on paper towels to drain off excess juices.
  • Roll the chilled dough out on a piece of wax paper, into a 12 X 17 inch rectangle. Flip the dough over onto a 10 X 15 inch jelly roll pan. Remove the wax paper. Turn the edges of the dough under and crimp with a fork against the rim of the baking sheet.
  • Spread the cheese-mayo mixture over the surface of the crust. Lay tomato slices over the mixture. Cut some tomato slice in half to fill in empty sections along the sides. Sprinkle the basil ribbons over the tomatoes. Then cover the surfaceof the pie with Borden®Four Cheese Mexican Shreds.
  • Bake on the low rack for 30 minutes, until the crust is golden and the cheese has melted. Cool for 5 minutes, then cut and serve warm.

Southern Tomato Pie
1 baked deep dish pie crust--you can use homemade or frozen here. Bake until just done, since it will brown up when it goes back in the oven with the tomatoes
4-5 medium tomatoes (heirloom or homegrown if you've got them)
handful of basil leaves, roughly chopped
1 cup mayonnaise (light mayo is fine)
1 cup grated parmesan cheese
2 tablespoons flour
fresh ground pepper
crumbled bacon (optional and obviously not vegetarian)

Steps:

  • Slice your tomatoes and drain for 10 minutes on several layers of paper towels. Sprinkle your baked, cooled pie crust with a little bit of the parmesan--this will help make a moisture barrier. If you're using bacon, sprinkle that over the cheese, and dust with a few pinches of flour. Mix together the cheese and mayo until smooth. Now, the recipe I used recommends piling in the tomatoes, sprinkling with the rest of the flour, basil, and pepper, and topping with the cheese mixture. However, after making it I would make these changes: Place a layer of tomatoes in the pie crust, cutting some pieces in wedges to make a uniform layer. Sprinkle with a little basil, pepper, and flour. Drop a few smallish spoonfuls of the cheese mixture. Repeat, making sure you leave a parger amount of the cheese mixture to really cover the top of the pie. Bake at 350 degrees for 25-30 minutes until golden brown and delicious-smelling. Let cool to room temperature. Eat up!
