A home economics teacher from Virginia gave me the recipe for this popular sweet and tangy salad. It's a hit at gatherings here in the Northeast.

Number Of Ingredients 12

2 egg yolks
1/4 cup sugar
1/4 cup cider vinegar
2 teaspoons prepared mustard
1/2 teaspoon salt
2 tablespoons butter
2 tablespoons milk
2 tablespoons mayonnaise
4 cups diced cooked chicken
1-1/2 cups diced celery
3 hard-boiled large eggs, chopped
2 tablespoons finely chopped onion

Steps:

  • In a small saucepan, combine the egg yolks, sugar, vinegar, mustard and salt. Cook and stir over medium heat until mixture reaches 160° or is thick enough to coat the back of a metal spoon. Stir in butter until melted. Cover and chill for 30 minutes. , Stir in milk and mayonnaise. In a large bowl, combine remaining ingredients. Add dressing and toss to coat. Chill until ready to serve. Refrigerate leftovers.

2 tablespoons milk
2 tablespoons mayonnaise or 2 tablespoons salad dressing
4 cups diced cooked chicken
1 1/2 cups diced celery
3 hard-boiled eggs, chopped
2 tablespoons finely chopped onions

Steps:

  • In a small saucepan, whisk egg yolks; add sugar, vinegar, mustard and salt.
  • Cook over low heat, stirring constantly, until mixture thickens.
  • Stir in butter until melted.
  • Cover, and chill for 30 minutes.
  • Add milk and mayonnaise; mix well.
  • In a large bowl, combine remaining ingredients.
  • Add dressing and mix to coat.
  • Chill until ready to serve.

2 Large Chicken breasts
1/2 - 3/4 Cup Mayo
1/2 Cup Chopped Pecans
1/2 Cup Chopped Red Grapes
1 Small Yellow Onion (Finely Diced)(or You can substitute green onions)
2 Tbs Pickle Relish or Chopped Dill Pickles
1 Tsp Garlic Powder
2 Tsp Celery Salt (+ or - to taste)
For showers or fancy schmancy parties, you can also add pineapple for a nice addition.

Steps:

  • Boil chicken breasts and allow them to cool. Shred the chicken with a fork or your hands. Mix together all other ingredients and toss with shredded chicken. Enjoy!

Number Of Ingredients 10

4 cups of cooked chicken
1 cup Celery, minced
1/2 cup Mayonnaise
1/4 cup Sweet Pickle Relish
1 teaspoon Mustard
1 Boiled Egg, chopped fine.
1/2 cup Onion, minced
1/4 teaspoon Salt
1/4 teaspoon Black Pepper
1 teaspoon Sugar, optional

Steps:

  • Chop chicken as desired and place in a medium size mixing bowl. Wash celery stalks under cool water, chop very fine. Add chopped celery to mixing bowl. Add the chopped onions. Add sweet pickle relish. Add mayonnaise. Add a little sugar if desired. Add salt. Add black pepper. Add Mustard. Add the chopped boiled egg. Stir mixture well, cover and refrigerate for at least one hour prior to serving. Serve cool and enjoy!
