10 large eggs
2-1/4 cups whole milk
1-1/2 teaspoons ground mustard
1/2 teaspoon salt
1 pound bulk pork sausage, cooked and drained
2 cups cubed white bread
1-1/2 cups shredded cheddar cheese

Steps:

  • In a large bowl, whisk the eggs, milk, mustard and salt. Stir in the sausage, bread cubes and cheese. Pour into a greased 13x9-in. baking dish. Cover and refrigerate overnight. , Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350° for 30-40 minutes or until a knife inserted in the center comes out clean. Let stand for 10 minutes before serving.

1 pound bulk pork sausage
6 large eggs
2 cups 2% milk
1 teaspoon salt
1 teaspoon ground mustard
6 slices white bread, cut into 1/2-inch cubes
1 cup shredded cheddar cheese

Steps:

  • In a skillet, brown and crumble sausage; drain and set aside. In a large bowl, beat eggs; add milk, salt and mustard. Stir in bread cubes, cheese and sausage. , Pour into a greased 11x7-in. baking dish. Cover and refrigerate for 8 hours or overnight. Remove from the refrigerator 30 minutes before baking. This easy and filling breakfast recipe is perfect for holiday guests.

Number Of Ingredients 13

3 tablespoons olive oil, divided
8 ounces ground pork sausage
1 sweet onion, diced (2 cups)
1 poblano chile, seeded and chopped (1 cup)
1 red bell pepper, seeded and chopped (1 cup)
1 ½ teaspoons kosher salt, divided
2 cups refrigerated diced potatoes (such as Simply Potatoes)
¾ teaspoon garlic powder
4 ounces Gruyère cheese, shredded (about 1 cup), divided
4 ounces extra-sharp Cheddar cheese, shredded (about 1 cup), divided
5 large eggs
¼ cup heavy whipping cream
1 tablespoon minced fresh chives

Steps:

  • Preheat oven to 425°F with oven rack about 6 inches from heat. Heat 1 tablespoon of the olive oil in a 10-inch cast-iron skillet over medium-high. Add sausage. Cook, breaking up sausage into pieces with a wooden spoon, until golden brown and just cooked through, about 4 minutes. Remove sausage to a medium bowl with a slotted spoon; set aside. Do not wipe skillet clean.
  • Add sweet onion, poblano chile, red bell pepper, and ½ teaspoon of the salt to skillet. Cook over medium-high, stirring occasionally, until onion is tender and peppers have charred in spots, about 8 minutes. Remove with slotted spoon to bowl with sausage. Wipe skillet clean.
  • Heat remaining 2 tablespoons olive oil in skillet over medium-high. Add diced potatoes to skillet in an even layer. Cook, undisturbed, until browned on bottom, about 5 minutes. Add ½ teaspoon of the salt. Continue cooking, stirring occasionally, until golden brown and crispy on most sides, about 5 minutes. Remove from heat. Return sausage and pepper mixture to skillet, and add garlic powder. Stir to combine. Stir in ½ cup each of the Gruyère and Cheddar cheeses until just combined.
  • Whisk together eggs, cream, and remaining ½ teaspoon salt in a medium bowl. Pour over mixture in skillet, and tilt pan to allow eggs to distribute. Top with remaining ½ cup each Gruyère and Cheddar cheeses. Bake in preheated oven until eggs have set and cheeses have melted, about 8 minutes. Increase oven temperature to broil, and broil until cheeses have turned golden brown, 2 to 3 minutes. Remove; let stand 5 minutes. Sprinkle with chives. Slice and serve immediately.

This recipe was in Southern Living in the early 90s. I've made in several times. Its a little bit different from most breakfast casseroles AND its easy because you make it the night before and bake it in the morning.

8 slices white bread, torn into small pieces
1 lb link sausage
2 1/2 cups milk
1/2 cup additional milk
1 cup mushroom soup
2 cups sharp cheddar cheese, grated
6 eggs
3/4 teaspoon dry mustard

Steps:

  • Place bread pieces in 9x13 inch greased casserole dish.
  • Slice sausage links into 1/2 inch thick slices. Brown sausage pieces in skillet and drain on paper towels.
  • Spread cheese on bread pieces and then layer sausage on the cheese.
  • Beat eggs, dry mustard and 2 1/2 cups milk and pour over casserole. Refrigerate overnight.
  • When ready to bake, dilute soup with the 1/2 cup milk and pour over casserole.
  • Bake at 300 degrees for 1 1/2 hours.

Grits are always great for breakfast. Serve this at your next brunch, and watch it disappear. It has all the yummy breakfast ingredients people love. Add some fresh fruit and you have a great meal. I baked this in a 9x13 dish.

4 medium sausage patties or your favorite healthy substitute
2 large eggs
2 c cooked grits
1/2 small onion, chopped
1/2 small tomato, chopped
2 c mexican blend shredded cheese
2 dash(es) salt (to taste)
2 dash(es) pepper (to taste)
2 dash(es) garlic powder
1 Tbsp butter or substitute

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. In a separate pot, cook grits approx 20 minutes, adding butter and salt to taste.
  • 3. Cook sausage patties in pan on medium high heat.
  • 4. After cooking sausage patties, chop up in bite size pieces.
  • 5. Add chopped onion, saute until soft.
  • 6. In a bowl, break eggs and stir well with fork.
  • 7. Layer sausage, onions, chopped tomato, shredded cheese, stir in grits and add eggs, stir. (in that order)
  • 8. Put in oven at 350 for 30 minutes, take out and let set for 5 minutes.

This recipe was given to me by a friend several years ago. It's easy to make and always a hit! Co-workers beg for it, and it's my husband's favorite!

1 pound pork sausage
1 (8 ounce) package refrigerated crescent roll dough
8 eggs, beaten
2 cups shredded mozzarella cheese
2 cups shredded Cheddar cheese
1 teaspoon dried oregano

Steps:

  • Place sausage in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble, and set aside.
  • Preheat oven to 325 degrees F (165 degrees C). Lightly grease a 9x13 inch baking dish.
  • Line the bottom of the prepared baking dish with crescent roll dough, and sprinkle with crumbled sausage. In a large bowl, mix beaten eggs, mozzarella, and Cheddar. Season the mixture with oregano, and pour over the sausage and crescent rolls.
  • Bake 25 to 30 minutes in the preheated oven, or until a knife inserted in the center comes out clean.
