1 (14-3/4-ounce) canned salmon
1/4 cup onion, finely chopped
1/4 cup cornmeal
1/4 cup flour
1 egg
3 tablespoons mayonnaise

Steps:

  • Open salmon and drain thoroughly. Place drained salmon in mixing bowl and flake evenly with a fork. Add onion, corn meal, flour, mayonnaise, and egg. Stir until well blended. Shape the mixture into patties about the size of an average burger or less. Cook in oil in skillet over medium heat until browned on each side. Turn once while frying. The mayonnaise helps the patties hold their shape and keeps them from being too dry.

1 lb salmon, boned and drained (reserve liquid)
1 egg
2 -3 tablespoons flour
2 -3 tablespoons cornmeal
1 piece whole wheat bread or 1 piece white bread, crumbled

Steps:

  • mix all ingredients, salt and pepper to taste. If patties seem too dry and have trouble sticking together, add in some of the reserved juice.
  • Form into patties and fry in butter or olive oil over medium heat. Brown on one side, then flip and brown on other side.

1 can(s) salmon, canned, de-boned and de-skinned if preferred.
1/4 lemon juice, fresh
10 saltine cracker crumbs
1/3 c yellow cornmeal
2 eggs
1 Tbsp onion, minced
ground pepper to taste
olive oil, for frying

Steps:

  • 1. Empty the can of Salmon into bowl and remove bones and skin if desired.
  • 2. Squeeze in juice from 1/4 section of fresh lemon.
  • 3. Add 10 finely crumbled saltine crackers.
  • 4. Add yellow cornmeal, eggs, onion and pepper.
  • 5. Mix the above very well. Using hands, make 6 to 8 patties of about 2 inches in diam.
  • 6. Heat olive oil at med to high and carefully place patties in hot oil. Cook until golden brown, flip. Patties are ready to place on paper towels to drain oil, when golden brown on both sides.

14 ounces pink salmon (skinless and boneless)
1/2 cup Italian seasoned breadcrumbs
1 teaspoon seasoning (Everglades seasoning)
1 teaspoon parsley
1/2 tablespoon lemon juice
1 egg
1/4 cup mayonnaise
1 tablespoon oil (your prefered brand and taste)

Steps:

  • Mix Salmon, bread crumbs, everglades, parsley, lemon juice, mayo, oil and egg in bowl.
  • Form into patties of desired size.
  • lightly oil or grease pan and fry on medium to desire on each side (4 to 7 min) or you can grill if you prefer.

2 can(s) pink or alaskan salmon, i use boneless/skinless
2 large eggs
1 medium onion, finely minced ( do not use food processor)
1/2 c bread crumbs (i use progresso or contadina)
1 c shredded cheddar or cheddar/jack cheese
salt & pepper to taste, sometimes i use garlic salt instead of regular
3 Tbsp oil, for frying (i use canola oil)

Steps:

  • 1. 1. Drain the salmon and pick out round backbones and larger pieces of skin if you don't use the boneless/skinless type. 2. Put salmon in a large bowl and add eggs, onion, cheddar cheese, breadcrumbs and salt and pepper. 3. Mix together until well blended and form into patties. I usually get 8 or 9 out of 2 cans of salmon. 4. Pour oil into skillet and heat on medium-high heat. I always use my cast iron skillet, but you can also use a non-stick skillet. 5. Place patties in pan and fry about 3-5 minutes on each side, until well browned and crisp. 6. Drain on paper towel lined plate for a few minutes before serving. 7. Serve with ketchup or tartar sauce. (My son used to smother his with ketchup and my husband used to ask him if he wanted a little bit of salmon patties with his ketchup).
