FANTASTIC RAISIN-COCONUT PIE

This is one of my favorite pie recipes, it's buttery fantastic, and the filling always bakes out perfectly, this recipe makes two pies, good thing cause you will be eating one yourself lol! You can use a frozen pie crust for this, but still prebake for 8 minutes. If you are a cinnamon-lover then use the 4 teaspoons. I promise, you will love this pie!!!! Prep time does not include making the pie crusts.

Yield 2 (9-inch) pies

Number Of Ingredients 11

2 (9 inch) prepared pie crusts
2 cups raisins
1 cup butter, softened (no subsitiutes)
1 cup sugar
1 cup packed brown sugar
6 large eggs
1 tablespoon vanilla
3 -4 teaspoons cinnamon
1 cup chopped pecans or 1 cup walnuts
1 cup soft flaked coconut
whipped cream or vanilla ice cream

Steps:

  • Set oven to 400 degrees.
  • Line two 9-inch pie plates with pastry, flute as desired.
  • Prick holes all over the pastry using a fork.
  • Bake for 8 minutes; cool on wire racks.
  • Place the raisins in a saucepan and cover with water, bring to a boil, then remove from heat; set aside.
  • In a mixing bowl cream butter with both sugars.
  • Beat in eggs, vanilla and cinnamon until thoroughly combined.
  • Drain the raisins, then stir into the creamed mixture along with nuts and coconut (the mixture with look slightly curdled).
  • Evenly divide the mixture between the two crusts.
  • Place the pies on a baking sheet.
  • Bake at 350 degrees (bottom oven rack) for 30-35 minutes or until set.
  • Cool and top with whipped cream or ice cream.
  • DELICIOUS!

Number Of Ingredients 9

2 cups raisins
2 cups water
½ cup packed brown sugar
2 tablespoons cornstarch
½ teaspoon ground cinnamon
¼ teaspoon salt
1 tablespoon distilled white vinegar
1 tablespoon butter
1 recipe pastry for a 9 inch double crust pie

Steps:

  • Combine raisins and water in a small saucepan. Boil 5 minutes. Blend brown sugar, cornstarch, cinnamon, and salt together; add to hot raisins. Cook and stir until syrup is clear. Remove from heat, and stir in vinegar and butter or margarine. Cool slightly.
  • Turn filling into a pastry lined pan. Cover with top crust. Seal edges, and cut slits in the top crust.
  • Bake at 425 degrees F (220 degrees C) for 30 to 35 minutes.

SOUTHERN STYLE COCONUT PIE



Southern Style Coconut Pie image

This recipe is easy to make, and tried and true. I add about 1/3 cup more grated coconut than called for in the recipe, and also add a dash of nutmeg sprinkled over the top before baking. If you like your pie sweeter, add a bit more sugar too! Serve either warm or cooled to room temperature, it really is delicious! We love it!

1 cup butter, softened
1/2 cup sugar
2 eggs, beaten
1 cup milk
2 cups coconut
1 teaspoon vanilla
1 pinch baking soda
1/2 teaspoon nutmeg
1 (9 inch) pie shells

Steps:

  • Preheat oven to 350-degrees.
  • Pre-bake the pie shell for 5 - 7 minutes. (Prick it with a fork 4 to 5 times first).
  • In a large bowl, make the filling by blending with an electric mixer all the ingredients, starting with the butter and sugar, then add the other ingredients.
  • Pour into the pre-baked pie shell.
  • Bake at 350-degrees until filling is golden brown, about 30 to 40 minutes.
  • Serve warm or cooled to room temperature.
