SOUTHERN PULLED-PORK SANDWICHES
Pork shoulder, a well-marbled cut available at most supermarkets, turns fork-tender after long, slow cooking. Ours is especially succulent with a spice rub and vinegar.

Steps:
- Preheat oven to 350 degrees, with racks in lower and upper positions. In a small bowl, combine sugar, cayenne, 1 tablespoon salt, and 1 teaspoon pepper.
- Place pork in a 5-quart Dutch oven or large heavy-bottomed pot; rub with spice mixture.
- In a medium bowl, combine vinegar, garlic, and 1/2 cup water; pour over pork. Cover pot, and place in oven on lower rack. Bake until pork is very tender and separates easily when pulled with a fork, 2 to 2 1/2 hours.
- Transfer pork to a work surface, reserving pan juices. With two forks, shred meat. Transfer to a large bowl, and toss with pan juices to moisten (you may not need all the juices). Pile pork on rolls, and top with barbecue sauce, if desired.

- Mix together the barbecue sauce, ketchup, onion, celery, water, garlic, honey, brown sugar, Worcestershire sauce, chili powder, hot pepper sauce, salt, and black pepper in a slow cooker until thoroughly combined. Place the pork roast into the mixture, spoon sauce over the meat, and set the cooker to Low. Cook 7 to 8 hours; to serve, shred the meat with 2 forks, and serve with sauce.

- Place pork in a 3- or 4-qt. slow cooker. Combine the mustard, molasses, brown sugar and soy sauce; pour over roast. Cover and cook on low for 6-8 hours or until meat is tender., Remove meat; cool slightly. Skim fat from cooking juices; transfer to a large saucepan. Bring to a boil over medium-high heat. Combine cornstarch and water until smooth; gradually stir into juices. Return to a boil; cook and stir for 2 minutes or until thickened., Shred meat with two forks; return to the slow cooker. - Preheat oven to 275f.
- Mix together mustard,oregano,pepper flakes and salt.
- Rub over meat;set aside.
- In a small roasting pan,heat oil over medium heat.
- Add onion and garlic;cook 8 minutes.
- Add tomato juice,vinegar,sugar and worcestershire.
- Increase heat to high;cook 10 minutes.
- Add pork and cover.
- Place in oven and cook for 3 hours.
- Uncover and continue cooking,basting from time to time,until meat is tender,11/2 hours more.
- Remove meat.
- Over high heat boil sauce,removing fat until thickened.
- Shred meat and add to sauce.
- Serve on buns.

- Set an oven rack in the lowest position and preheat the oven to 300°F. Combine the paprika, brown sugar, garlic powder, mustard powder, onion powder and 2 tablespoons salt in a small bowl. Evenly rub half the spice mixture over the pork in a large bowl. Set the remaining spice mixture aside. Place the pork skin-side up in a large Food Network 5.5-qt Enameled Cast-Iron Dutch Oven or roasting pan. Roast, covered, until the meat is falling apart and easily pulls away from the bone, 4 to 5 hours. Let the pork rest, covered, for 30 minutes. Shred the pork using 2 forks and mix with the juices in the bottom of the pot. Bring the cider vinegar to a simmer in a small pot over medium heat and add the reserved spice mixture. Simmer until the sugar is dissolved, about 1 minute, then pour over the pork. Mix well to combine. Serve the warm pulled pork on the buns with the coleslaw.

I make this about every couple of weeks. My kids love this,and so does my brother, my husband, who is not crazy about BBQ even likes this dish...he can't help it, he is from up north and his family doesn't do BBQ.It has taken me a good 9 years to get him to eat a lot of our southern cuisine,lol

- 1. Combine salt,pepper,garlic and onion powers,paprika,brown sugar and poultry seasoning in small bowl. This will be the dry rub for your roast.
- 2. Make sure you kitchen sink is very clean.Wash your pork roast under cold water.While still in sink(this makes for less mess),sprinkle your dry rub all over the roast,massaging it in as you go.
- 3. Pour the 1/2 cup of water into crock pot,then place your roast into your crock pot.Let it cook on high for about 5 hours or medium for 8 hours, if you are not going to be home.
- 4. Now for the BBQ sauce,in medium sauce pan,combine your mustard,butter,apple cider vinegar,white and brown sugars and black pepper.Cook on med-low heat for about 5-10 minutes.Remove from heat and let it cool.-Note: this sauce can be adjusted to your liking,you can use more or less of the vinegar and sugars according to your tastes.
- 5. When roast is done to the point of falling apart, remove it from crock pot.Taking a fork pull meat apart and remove any bone or fat that may be left on the meat.Pour the juice from the roast into a bowl and use it to make rice or discard it.
- 6. Take 2 forks and pull all the meat apart,so it looks shredded.Place back into the crock pot and pour as much sauce as you like over the meat,mix thoroughly, cook on high for another 30 minutes.Serve with rice made from the roast drippings or on buns for an awesome BBQ sandwich.

- Cut the pork roast into large chunks. Season generously with the Cajun seasoning. Melt butter in a large skillet over medium-high heat. Add pork, and brown on all sides. Remove from the skillet, and transfer to a slow cooker.
- Add the onion and garlic to the skillet, and cook for a few minutes until tender. Stir in the water scraping the bottom to include all of the browned pork bits from the bottom of the pan, then pour the whole mixture into the slow cooker with the pork. Stir in liquid smoke flavoring.
- Cover, and cook on High for 6 hours, or until meat is falling apart when pierced with a fork. Remove pieces of pork from the slow cooker, and shred. Return to the slow cooker to keep warm while serving.

- Place pork in a crock pot. Using a basting brush, coat the outside of the tenderloin with bbq sauce. Pour cherry cola over the top of the tenderloin. Cola should fill up the crock pot, covering the bottom half of the tenderloin.
- Cook on low in the crock pot for 7-9hrs.
