This recipe is truly Southern, and it's been a family favorite for years. I've packed many a Christmas tin with this candy.

Number Of Ingredients 7

3 cups packed brown sugar
1 cup heavy whipping cream
2 tablespoons light corn syrup
1/4 teaspoon salt
1-1/2 cups chopped pecans
1/4 cup butter, cubed
1-1/4 teaspoons vanilla extract

Steps:

  • In a large heavy saucepan, combine the brown sugar, cream, corn syrup and salt. Bring to a boil over medium heat, stirring constantly. Cook until a candy thermometer reads 230° (thread stage), stirring occasionally., Carefully stir in pecans and butter. Cook, stirring occasionally, until a candy thermometer reads 236° (soft-ball stage)., Remove from the heat; stir in vanilla. Beat with a wooden spoon until candy thickens and begins to lose its gloss, about 4-5 minutes. , Quickly drop by heaping tablespoonfuls onto waxed paper; spread to form 2-in. patties. Let stand until set. Store in an airtight container.

Sour cream is the secret behind the unusually smooth texture of these Southern pralines.

Yield Makes 1 dozen 2-inch pralines

Number Of Ingredients 8

2 tablespoons unsalted butter, cut into small pieces
1/2 cup plus 2 tablespoons granulated sugar
1/2 cup plus 2 tablespoons dark-brown sugar
1/2 teaspoon coarse salt
1/4 cup plus 2 tablespoons sour cream
1 tablespoon bourbon
1 1/2 teaspoons pure vanilla extract
5 ounces pecan halves (1 1/3 cups), toasted

Steps:

  • Line a baking sheet with parchment. Melt butter in a saucepan over low heat. Stir in granulated and brown sugars, salt, and sour cream. Raise heat to medium-low, and cook, whisking frequently, until sugar has dissolved. Raise heat to medium-high. Cook, stirring frequently and scraping sides of pan with a spatula, until mixture reaches the soft-ball stage (240 degrees), 10 to 15 minutes.
  • Remove from heat. Carefully stir in bourbon and vanilla (mixture will steam and bubble). Let cool, without stirring, for 2 minutes. Add pecans, and beat vigorously with a spoon until slightly opaque but still creamy, about 2 minutes.
  • Drop spoonfuls onto baking sheet. (If mixture in pan begins to harden, stir in 1 teaspoon hot water, as often as needed; if it becomes runny, stir until firm.) Let stand until set, about 30 minutes.

Crisco® Original No-Stick Cooking Spray
1 ½ cups firmly packed brown sugar
1 cup granulated sugar
⅔ cup PET® Evaporated Milk
1 tablespoon light corn syrup
3 tablespoons Crisco® Butter Flavor All-Vegetable Shortening
½ teaspoon vanilla extract
1 ½ cups coarsely chopped pecans
¼ teaspoon cream of tartar

Steps:

  • Coat a baking sheet lightly with no-stick cooking spray.
  • Combine brown sugar, granulated sugar, evaporated milk and corn syrup in 3-quart saucepan. Heat to boiling over medium heat, stirring constantly. Cover and boil 1 minute. Uncover. Cook over medium heat, without stirring, to 235 degrees F on candy thermometer. Remove from heat.
  • Add shortening, vanilla, pecans and cream of tartar. Stir with wooden spoon until mixture thickens slightly. Do not overstir. Let the mixture stand 3 minutes. Drop by rounded tablespoonfuls onto prepared baking sheet. Cool until firm.

Southern decadence at it finest! These are enough to make a New Orleans native like me homesick. Cook time includes cooling time. Recipe from Foodtv.com (but its almost as good as MawMaw's recipe)

Number Of Ingredients 7

1 cup pecans
1/4 cup heavy cream
1/4 cup unsalted butter
1 cup light brown sugar, plus
2 tablespoons light brown sugar
1 teaspoon vanilla extract
1 teaspoon Bourbon (optional)

Steps:

  • Preheat oven to 325 degrees.
  • Spread the pecans on a cookie sheet and place in the oven for 3 minutes.
  • Stir and bake for 3 more minutes (Watch them closely so the don't get over toasted).
  • Line a cookie sheet with parchment paper.
  • Fit a heavy-bottomed saucepan with a candy thermometer.
  • Over high heat, cook the cream, butter and brown sugar to 240 degrees (soft ball).
  • If necessary, stir once to help dissolve the sugar.
  • Remove from the heat and let sit for 15 seconds.
  • CAREFULLY stir in the vanilla, bourbon, and toasted pecans.
  • (It might spit and sputter) Stir until the mixture looks creamy and slightly thickened.
  • Drop by tablespoonfuls onto the prepared cookie sheet.
  • Cool for 20 minutes.

1 c brown sugar, firmly packed
1 c sugar
1/2 c evaporated milk
2 Tbsp butter
1 tsp vanilla
1 dash(es) salt
1 1/2 c pecans, halved

Steps:

  • 1. Mix in saucepan brown sugar, sugar and evaporated milk. Cook to soft-ball stage. Add vanilla and dash of salt. Cook 1 minute longer. Remove from heat, Add pecans, Beat until begins to harden. Drop by spoon on waxed paper.

3 cups sugar
1 cup whole fat buttermilk
1/4 cup light corn syrup
1 pinch salt
1 teaspoon baking soda
1 teaspoon vanilla extract
4 cups of pecans

Steps:

  • Combine sugar, buttermilk, corn syrup and salt in a very large pan (it will foam considerably when soda is added) and bring to a nice rolling boil. Add soda, stir and cook until soft ball is formed when dropped in cold water. ***at 235° F on Candy thermometer, the syrup is at the "soft-ball" stage. That means that when you drop a bit of it into cold water to cool it down, it will form a soft ball.*** Then remove from heat and add vanilla. Beat until color changes and candy thickens. Stir in pecans. Drop by teaspoons on a WELL greased non stick cookie sheet, foil or wax paper. If you do not grease your pan well it will stick (DO IT FAST before the candy hardens) **I drop mine on foil**
