10 large eggs
Pinch of cayenne pepper
3 ounces ham, chopped
6 ounces muenster cheese, grated
4 tablespoons extra-virgin olive oil
3 bunches scallions, cut into 2-inch pieces
Kosher salt and freshly ground black pepper
1 large tomato, cut into wedges
1 teaspoon white wine vinegar
1 tablespoon sugar
4 ounces mesclun greens (about 4 cups)
1/2 head escarole, torn, or 1 bunch dandelion greens, trimmed

Steps:

  • Position a rack in the center of the oven and preheat the broiler. Whisk the eggs, 2 tablespoons water and the cayenne in a large bowl. Fold in the ham and half of the cheese.
  • Heat 1 tablespoon olive oil in an ovenproof 6-to-8-inch nonstick skillet over medium-high heat, swirling to coat the pan. Add the scallions, 1/4 teaspoon salt, and black pepper to taste; cook until soft, 4 to 5 minutes. Reduce the heat to medium low, pour in the egg mixture and stir gently with a rubber spatula to distribute the fillings. Cook until the bottom is just set, about 4 minutes. Sprinkle the remaining cheese on top, transfer to the oven and bake until puffed and golden, about 10 minutes. Let stand while you prepare the salad.
  • Season the tomato with salt and black pepper and toss with the vinegar, sugar and the remaining 3 tablespoons olive oil in a bowl. Add the greens and toss. Slice the pie and serve with the salad.

2 eggs, beaten
2 cups cubed fully cooked ham
2 cups shredded Cheddar cheese
1 tablespoon grated Parmesan cheese

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Press one package crescent roll dough into a 9-inch baking dish; cut remaining package crescent roll dough into 1-inch strips.
  • Stir eggs, ham, Cheddar cheese, and Parmesan cheese together in a bowl; pour mixture into prepared baking dish. Arrange crescent roll strips over ham mixture creating a crisscross pattern.

1 package (2 sheets) all-butter frozen puff pastry, defrosted but still cold
1 large egg plus 2 tablespoons water, beaten
3 tablespoons whole grain mustard
1 tablespoon apricot jam
Freshly grated black pepper
8 ounces thinly sliced country ham or Black Forrest ham
6 ounces coarsely grated aged white Cheddar
3 tablespoons champagne vinegar
1 heaping tablespoon apricot jam
Kosher salt and freshly ground black pepper
1/4 cup extra-virgin olive oil
3 ounces baby mixed greens
1/4 cup lightly toasted sliced almonds

Steps:

  • For the pie: Place a rack in the center of the oven and preheat to 400 degrees F. Line a half-sheet pan with parchment paper. Set aside.
  • Unfold or unroll one sheet of the puff pastry on a lightly floured surface. Gently roll with a rolling pin until each side is increased by about 1/2-inch. Place the pastry on the prepared baking sheet and brush the pastry from edge to edge with prepared egg wash. Combine the mustard, apricot jam and a generous amount of black pepper in a small bowl, and spread over the egg wash, leaving about an inch border between the mustard and the edge of pastry. Place the ham evenly over the mustard and then evenly spread the cheese over the ham.
  • Roll out the second piece of puff pastry as the first, increasing the size by about 1/2-inch on each side. Gently place it on top of the ham and cheese and press the edges together with your fingers. Gently fold about 1/2-inch of the edges over, creating a thick crust. Press the edges with the tines of a fork. Dip the fork in flour if it sticks to the puff pastry during pressing. Lightly brush a layer of egg wash over the top and edges of the pie. Cut a few small slits into the top of the pie and bake until cooked through and golden brown, 30 minutes.
  • For the greens: Whisk together the vinegar and jam in a small bowl, and season with salt and pepper. Slowly whisk in the oil until emulsified. Put the greens in large bowl, toss with the vinaigrette, divide among the plates and top with the almonds.

1/2 teaspoon salt
1/4 teaspoon ground mustard

1 cup milk
1 teaspoon dried minced onion
2-1/2 cups cubed fully cooked ham
1 cup frozen peas, thawed
2 hard-boiled large eggs, chopped
Pastry for single-crust pie (8 inches)

Steps:

  • Melt butter in a saucepan; stir in flour, salt, mustard and pepper until smooth. Gradually add milk and onion; bring to a boil. Cook and stir for 2 minutes or until thickened. Stir in ham, peas and eggs. Pour into an ungreased 8-in. square or 11x7-in. baking dish. On a floured surface, roll pastry to fit top of dish; place over filling. 6 hard-boiled eggs, diced (leftover from Easter?)
2 cups diced ham (leftover from Easter?)
2 cups very thick white sauce
2 tablespoons yellow mustard, added to the cooked white sauce
1 recipe pie crust, for a two-crust 9 inch pie (Use a packaged pie crust to save time.)

Steps:

  • Line pie plate with one crust.
  • Spread half of the ham across it.
  • Then spread the diced hard-boiled eggs on top of the ham.
  • Spread the other half of the ham on top of the eggs.
  • Pour the white sauce evenly over the ham and eggs.
  • Top with the second crust-- crimping the edges tightly and cutting vent holes.
  • Bake at 350 for about an hour, until the crust is golden brown.
