8 small new potatoes, halved if large
Salt and freshly ground black pepper
4 slices bacon, cut into thirds
1 medium onion, finely chopped
2 pounds fresh green beans, ends trimmed

Steps:

  • In a large saucepan or medium Dutch oven, cook bacon over medium heat until it has rendered most of its fat and has begun to brown, about 5 minutes. Add the onion and saute until translucent, about 5 minutes. Add the green beans and potatoes and enough water to just cover them. Bring to a boil, then reduce the heat to low. Season with salt and pepper, to taste, then cover the pan and simmer until the beans are very tender, about 1 hour, stirring occasionally and adding more water if necessary to keep the beans covered. As the beans get close to being done they will become quite fragile, so take care when stirring.

3 tablespoons butter
1 red onion, chopped
2 pounds fresh green beans, trimmed and snapped
8 small new potatoes, diced
1 large clove garlic, minced
¼ cup chicken broth
1 ½ teaspoons white balsamic vinegar
salt and pepper to taste

Steps:

  • Place the chopped bacon in a skillet, and cook over medium heat, stirring occasionally, until evenly browned, 8 to 10 minutes. Drain the bacon pieces on a paper towel-lined plate.
  • Melt the butter in a skillet with a lid over medium-low heat, and cook and stir the onion until translucent, about 5 minutes. Stir in the cooked bacon, green beans, potatoes, garlic, and chicken broth. Bring to a boil, cover, and simmer over low heat until the green beans are tender, about 10 minutes. Sprinkle with vinegar, salt, and pepper, and serve.

2 (14 1/2 ounce) cans cut green beans (not french-style)
4 slices thick-cut bacon
1/4 teaspoon minced garlic
salt

Steps:

  • Cook the bacon in a heavy sauce pan (do not crisp the bacon, just cook enough to extract the drippings). Remove from heat.
  • Empty the 2 cans of cut green beans into the sauce pan directly on top of the cooked bacon and drippings.
  • Add salt to taste and then the 1/4 teaspoons of minced garlic. Stir well and return to heat.
  • Bring to a boil over medium heat, then reduce heat to med-low, cover, and simmer for at least 30 minutes (1 hour is better).
  • Serve and enjoy.
  • NOTE - Use good quality canned green beans. My family prefers "flat beans" (Cut Italian Green Beans), but regular cut will taste just as good.

1 tablespoon vegetable oil
8 ounces country ham, ripped into small shards
1 1/2 pounds green beans, trimmed and halved
2 1/2 cups low-sodium chicken stock
1/2 teaspoon freshly cracked black pepper
1/2 teaspoon kosher salt

Steps:

  • Place a large nonstick skillet over medium heat. Pour in the vegetable oil. Spread the ham in the skillet in a thin layer. Cook, stirring occasionally, until it turns brown and crispy. Remove half of the ham shards from the skillet and place on a paper-towel lined plate. Leave the remaining ham and any fat that has rendered in the skillet.
  • Add the green beans, chicken stock, pepper and salt to the skillet. Reduce the heat to medium-low and simmer, stirring occasionally, until the stock reduces and darkens in color and the beans are soft but hold their shape, about 30 minutes. Pour into a serving platter and sprinkle with the reserved crispy ham.

1 (16 ounce) bag frozen green beans or 2 (14 ounce) cans green beans, do not drain
4 -6 slices bacon
1 large onion, sliced large chunks
1 dash red pepper flakes (optional)
salt and pepper

Steps:

  • Put green beans in pot- if canned add juices, if frozen add water enough to see but not cover beans- cook on medium heat.
  • Fry bacon until cooked but not too crisp- drain on paper towel.
  • Cut onion in large (thick) slices and break rings apart in to beans.
  • Crumble or rip bacon apart add to beans.
  • Add spices to taste.
  • Let cook for a few hours on low heat.
  • If want to serve sooner- turn heat up and cook until water boils down.
  • OR can put in crockpot on low all day long and let simmer.

1 lb bacon

Steps:

  • Slice bacon into 1 inch pieces, (easiest way is to cut with scissors).
  • Put bacon into a large pot and begin to fry.
  • While bacon is frying, coarsely chop onion.
  • When bacon is about 1/2 way done, add onion and continue frying until bacon is semi crisp. (Do NOT drain grease).
  • Drain green beans and dump into bacon and onions. Stir.
  • Continue to cook for 30 minutes on medium, stirring occasionally.

2 * 2 pounds green beans, cleaned and snapped
* About 1/4-pound thinly sliced country ham (see notes below)
2 * 2 medium potatoes, cut in large cubes (see notes below)
1 * 1 large onion, coarsely chopped
* Water
* Salt and pepper to taste
4 * 4 tablespoons unsalted butter

Steps:

  • Place the ham slices in a large sauté pan. Add about 3 cups of water. Bring to a boil, then reduce heat, cover and simmer until ham is tender. Remove ham from pot and cut into small pieces. Return to the pot and add the beans, potatoes and onions. Season with pepper. Add a bit more water if needed, but not too much. Bring back to a boil, then reduce heat, cover and simmer until beans are very tender, about 1 hour. (Cooking time will depend on the age of the beans.) Taste the beans and add salt if needed but, since country ham is very salty, additional salt will probably not be necessary. If there appears to be too much broth, cook on high without the cover until some of the moisture evaporates. Add butter to beans and stir until melted; replace lid and cook an additional 10 minutes. This will keep, covered, over low heat until serving. Notes: If you want a meatier main dish, add some smoked ham pieces when you add the beans. For most people, more country ham would make it too salty. Instead of large potatoes, you can use about one pound baby or creamer potatoes, halved if large. I like yukon gold, but any boiling potato is fine.

He always had fresh vegetables and while I know my mother purchased other veggies I can still picture those baskets of green beans and new potatoes...

4 or 5 c fresh green beans, snapped
3 or 4 new potatoes
1/2 small onion, chopped
chicken broth or water
salt to taste
3 slice bacon
2 or 3 Tbsp pimento, diced (i used jarred) optional

Steps:

  • 1. Wash, clean and snap green beans. Wash new potatoes and remove any bad spots; cut in half. NOTE: if potatoes are small enough it's not necessary to cut in half.
  • 2. Place beans, potatoes, and onion in appropiate size pot, cover beans with chicken broth or water. Add salt to taste and place strips of bacon on top.
  • 3. Cook over medium heat until beans and potatoes are tender. Stir in pimento if desired. Remove bacon strips before serving.

I love homemade ham & green beans with potatoes, served with a skillet of cornbread and sweet tea! For this recipe, I took two "soul-food" recipes I had and combined them to come up with this one. It's just the way I like it. You can adjust the amounts of ingredients to your own taste. If I use ham hocks, I usually only add one or two slices of bacon for added flavor, just because I like bacon flavor. But if I don't have ham hocks, I use 4- 6 slices of bacon.

1 -2 ham hock
1 -6 slice bacon (raw)
2 onions, coarsely sliced
2 teaspoons salt
1 -2 teaspoon sugar
1 teaspoon garlic, to taste
1/4-1/2 teaspoon cayenne pepper
1 tablespoon parsley (optional)
2 -3 lbs fresh green beans
1 lb potato, quartered, peeled

Steps:

  • Place ham hock and bacon in large Dutch oven pot or soup pot; cover with water.
  • Bring to a rapid boil.
  • Turn burner to medium to medium-high and let it come to a medium boil.
  • Add the sliced onion.
  • Let this cook while you wash and snap your beans (about an hour or more).
  • Wash beans, cut off ends and break in half.
  • Add beans, salt, sugar, garlic, pepper and parsley to the ham hocks.
  • Let it come to a boil, then turn burner to medium, to medium-low.
  • Let it slow boil for about an hour or more or less, depending on how well you like your beans cooked.
  • About 15-20 minutes before done, add your potatoes.
  • Boil until tender.

1 ham hock

Fabulous Southern Green Beans and New Potatoes with Ham~
2 tablespoons butter
1 onion, diced or chopped
3 cloves garlic, minced
3 or 4 ham hocks, ham end pieces or ham shanks
2 to 3 pounds of fresh green beans, cleaned and snapped
3 cans chicken broth
3 cans water (use a broth can to measure)
8 or more, new potatoes, pealed and washed
1 tablespoon sugar
Kosher salt and pepper to taste

Steps:

  • Place ham hocks or shanks in water enough to cover & let simmer a good 2 hours. Remove ham & set aside to cool. Reserve broth. When cool enough to handle, cut into chunks. In a large heavy stock pot, melt butter on medium high. Add onions and garlic and ham. Cook until onions and garlic are tender and meat has browned a bit. Turn down the heat to medium and add green beans, chicken broth and 3 cans full of the broth from the cooked ham hocks. Just cover the beans with the liquid. If you need a bit more water, add it. Cover and cook beans for about an hour. Add, sugar, salt and pepper and stir well. Add potatoes and cook covered for another 25 to 35 minutes, or until the potatoes are fork tender. Remove lid for the last 10 minutes of cook time. Check and re-season if necessary. Crock pot method: place all in the pot & cook on low all day! Before serving remove the ham & cut into pieces & stir back into the beans & potatoes!
