1/2 pound boneless sirloin steak
1 cup all-purpose flour
1 egg
1 1/2 cups buttermilk
1 teaspoon salt
1 teaspoon black pepper
Vegetable oil, for frying
2 tablespoons all-purpose flour
1 cup milk
1/2 teaspoon salt
1/2 teaspoon fresh ground pepper

Steps:

  • Flatten the sirloin to a thickness of about 1/4" and then cut into two pieces.[[4]]
  • Put the flour into a shallow bowl.
  • In another bowl, mix together the egg, buttermilk, salt, and pepper.
  • Dredge the steaks in the flour, then the egg mixture, and then again in the flour.
  • In a cast iron skillet over medium-high heat, heat about four inches of oil.
  • Cook the steaks for about four minutes on each side, then drain on paper towels.
