SOUTHERN GINGERBREAD WITH LEMON SAUCE



Southern Gingerbread with Lemon Sauce image

GINGERBREAD
1/2 c butter, melted
1/4 c shortening, melted
3/4 c brown sugar, firmly packed
3/4 c molasses
2 eggs. beaten
2 1/2 c all-purpose flour
2 tsp baking soda
1/2 tsp baking powder
2 tsp ground ginger
1 1/2 tsp ground cinnamon
1/2 tsp ground cloves
1/2 tsp ground nutmeg
1 c boiling water
LEMON SAUCE
1 c sugar
1 egg, lightly beaten
1/2 c butter
1/2 c boiling water
1 lemon, juice of

Steps:

  • 1. Combine butter, shortening, brown sugar, molasses, and eggs; beat well at medium speed of an electric mixer.
  • 2. Combine flour and the next 6 ingredients; stir well. Add the flour mixture to the molasses mixture, stirring well. Stir in the boiling water.
  • 3. Pour the batter into a greased 13 x 9 x 2 inch baking pan. Bake at 350 degrees for 30 to 40 minutes or until a wooden pick inserted in the center comes out clean. Let cool in the pan on a wire rack.
  • 4. For the sauce, combine the sugar and beaten egg in the top of a double boiler, and stir well. Add the butter boiling water, and lemon juice, and stir well. Bring water in the bottom of the double boiler to a boil; reduce heat to low, and cook, stirring constantly, until the mixture is smooth and slightly thickened. Serve cake with warm lemon sauce.

1 cup butter, softened
1 cup sugar
3 eggs
1 cup molasses
3/4 cup hot water
2-1/2 cups all-purpose flour
1-1/2 teaspoons ground ginger
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
1 cup heavy whipping cream
1 to 2 tablespoons confectioners' sugar
Additional nutmeg

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy, about 5 minutes. Add eggs; beat on low speed for 2 minutes. Stir in the molasses and hot water. Combine flour, ginger, baking soda, cinnamon, nutmeg and salt; gradually add to creamed mixture. Beat just until combined., Pour into a greased 13x9-in. baking pan. Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack., In a chilled small bowl, beat cream until it begins to thicken. Add confectioners' sugar, beat until soft peaks form. Serve with gingerbread. Sprinkle with nutmeg if desired.

3/4 c melted shortening
3/4 c brown sugar
3/4 c molasses
2 beaten eggs
2 1/2 c all purpose flour
2 tsp baking powder
1/2 tsp salt
1/2 tsp baking soda
1 1/2 tsp ginger
1 tsp cinnamon
1/4 tsp each ground cloves and nutmeg
1 c hot water

Steps:

  • 1. combine shortening, sugar and molasses
  • 2. add eggs and blend
  • 3. mix in sifted dry ingredients alternately with hot water
  • 4. pour into well greased 8 X 8 baking pan or in muffin tins
  • 5. bake in preheated 375 degree oven 25 to 45 minutes
