My dad loves to have a good old southern fish/seafood fry. This is the recipe he uses for fried oysters.

1 cup self-rising cornmeal
1 cup self-rising flour
1/4 teaspoon cayenne pepper, to taste
2 eggs
2 tablespoons milk
2 (12 ounce) containers fresh oysters, drained
vegetable oil

Steps:

  • In a mixing bowl, add the first 3 ingredients; stir to combine.
  • In another bowl, combine the egg and milk; whisk to combine.
  • Dip oysters in egg mixture, then dredge in flour mixture.
  • Add oil to 2-3 inch depth in a cast-iron dutch oven; heat to 375 degrees.
  • Fry oysters in oil until golden, turning once.
  • Drain on paper towels and serve immediately.

Ingredients for Oysters:
1 cup Saltines (lightly blender is food processor)
1 cup self-rising flour
1/2 teaspoon cayenne pepper
2 eggs
2 tablespoons milk
2 (12 ounce) containers fresh oysters, drained
Vegetable oil
Ingredients for Remoulade Sauce:
1 cup mayonnaise
1/2 tablespoon catsup
1 tablespoon whole grain mustard
Pinch of cayenne pepper
1/2 tablespoon fresh lemon juice
1 teaspoon horseradish
1 clove garlic
1/2 teaspoon Worcestershire Sauce
1/2 teaspoon celery salt
1/2 teaspoon Paprika
1/2 tablespoon capers

Steps:

  • Oysters: In one bowl, mix the saltines, flour and cayenne pepper. In a second bowl, whisk together the eggs and milk. Dip the oysters in the egg mixture, dredge thru the flour and place on wax paper. Pour at least 5 inches of oil into a cast iron Dutch oven and heat to 375 degrees using a candy/deep fry thermometer throughout the process. The key to perfect oysters is maintaining the oil at 375 degrees. This means don't cook too many oysters at a time and watch your thermometer closely. The more oil you use the greater the heat sink you create and the less the temperature will drop (i.e. don't skimp on the oil). Fry oysters until golden brown, turning once. Place on paper towels, then serve immediately. Remoulade Sauce: Place all ingredients in a mixer and blend. Refrigerate.

How to make Southern Fried Oysters

1/3 cup Paula Deen Vidalia Onion Peach Grilling Marinade
1 tablespoon sour cream
12 oysters, freshly shucked
1/2 cup all-purpose flour
2 large eggs
3 tablespoons Paula Deen Hot Sauce
1 cup panko (Japanese bread crumb)
2 cups peanut or canola oil
Kosher salt

Steps:

  • For the dipping sauce: In a smal bowl, combine the Vidalia Onion Peach Grilling Marinade and sour cream. Mix well and set aside.
  • In a small bowl, place the flour. In a second small bowl, whisk the egg and 3 tablespoons of the hot sauce. In a third small bowl, place the panko. Dredge the oysters in the flour shaking off any excess. Dip the flour dredged oysters in the egg mixture. Shake off any excess and roll oysters in the panko being sure to completely coat. Place on a baking sheet and place in the refrigerator while oil comes to temperature.
  • In a heavy skillet, heat oil to 325 degrees. Add the breaded oysters and fry until golden brown about 1-2 minutes. Drain on paper towels and immediately sprinkle with kosher salt. Serve warm with the spicy dipping sauce.
