3/4 cup quick-cooking grits
1/2 cup shredded Cheddar cheese (about 2 ounces)
Kosher salt and freshly ground black pepper
8 large eggs
2 tablespoons vegetable oil
8 ounces frozen cut okra, thawed
1 bunch scallions, chopped (white and green parts separated)
1 green bell pepper, thinly sliced
Large pinch cayenne pepper

Steps:

  • Bring 3 cups water to a boil in a medium saucepan. Add the grits, reduce the heat to medium and cook, stirring occasionally, until thickened, about 5 minutes. Remove from the heat. Stir in the cheese and season with salt and black pepper; cover to keep warm.
  • Crack the eggs into a large bowl. Heat the vegetable oil in a large nonstick skillet over medium-high heat. Add the okra, scallion whites, bell pepper, cayenne, 1/4 teaspoon salt, and black pepper to taste; cook, stirring, until the vegetables start to soften, 2 to 4 minutes.
  • Carefully slide the eggs on top of the okra mixture, keeping the yolks intact. Reduce the heat to medium; cover and cook, rotating the skillet occasionally, until the eggs are just set, about 6 minutes.
  • Serve the grits with the vegetables and eggs. Top with the scallion greens.

Steps:

  • Whisk the eggs: Whisk 3 large eggs, 1 pinch of kosher salt, 1 grind of black pepper and 3 tablespoons whole milk together until light and foamy.
  • TIP: Odds are you're going to be serving these on a plate. If so, I strongly suggest you park an ovensafe one in a low oven or in hot water while you're cooking. Cold plates suck the heat right out of food.
  • Add to the pan: Add 1 tablespoon unsalted butter to a 10-to-12-inch nonstick skillet and put it over high heat. When the butter bubbles (after about a minute), pour the eggs straight into the middle of the pan, which will force the butter to the edges, where it's needed.
  • Scramble the eggs: Stir slowly with a rubber or silicone spatula. As soon as curds (big soft lumps) of eggs begin to form, drop the heat to low and shift from stirring to folding the curds over on themselves while gently shaking the pan with the other hand.
  • Let rest: As soon as no more liquidous egg is running around the pan, kill the heat and gently transfer the scramble to the warmed plate. Let the eggs rest for 1 minute to finish cooking before serving.

3 tablespoons butter, divided
4 eggs
4 spreadable cheese wedges (such as The Laughing Cow®), cut into small pieces
2 smoked sausage links, cut into 1/4-inch slices
1 tablespoon Worcestershire sauce
1 tablespoon soy sauce
1 tablespoon brown sugar
1 teaspoon seasoned salt (such as Morton® Season-All®)
1 cup bread crumbs

Steps:

  • Melt 1 tablespoon butter in a skillet over medium heat. Whisk eggs and cheese together in a small bowl. Pour into the skillet; cook and stir until scrambled and set, 5 to 8 minutes. Remove from heat.
  • Melt remaining 2 tablespoons butter in a separate pan. Add sausage, Worcestershire sauce, soy sauce, brown sugar, and seasoned salt. Cook and stir until sugar is dissolved and sausage is browned, 5 to 8 minutes.
  • Divide scrambled eggs between 2 bowls. Place sausage mixture over the eggs. Drizzle pan drippings on top. Sprinkle bread crumbs over the bowls to create a crust.

5 eggs, beaten
2 tablespoons milk
1 onion, chopped
2 slices cooked ham, chopped
1 cup shredded Cheddar cheese
1 to taste salt and pepper to taste
⅛ teaspoon garlic powder, or to taste
2 ½ tablespoons butter

Steps:

  • In a large bowl, beat together eggs and milk. Stir in onion, ham, cheese, salt, pepper and garlic powder.
  • Melt butter in a large frying pan or skillet over medium high heat. Add eggs and cook, without stirring, until eggs begin to set. At that point, stir the eggs until roughly scrambled. Keep doing this until eggs are fully cooked, about 10 to 15 minutes. Serve warm.

1 tablespoon butter
1 cup chopped country ham
1 small red bell pepper, chopped
6 eggs
1/3 cup heavy cream
1/4 teaspoon salt
1/8 teaspoon pepper
1/2 teaspoon chili powder
1/2 teaspoon garlic powder
4 ounces shredded cheddar cheese

Steps:

  • Heat butter in a large skillet over medium-high heat.
  • Add ham and red pepper.
  • Saute until ham is browned and pepper is slightly soft.
  • Meanwhile, mix eggs, cream, salt, pepper, chili powder, and garlic in a medium bowl.
  • Whisk vigorously until the eggs are a uniform color with no streaks.
  • Spread ham mixture evenly in the pan.
  • Pour egg mixture over it without stirring.
  • As mixture begins to set, lift edges gently and allow uncooked eggs to run to the bottom.
  • Continue in this manner until eggs are almost dry.

This is my husband's favorite dish on the weekends, when we usually eat breakfast late. It is also my son-in-law's most requested dish when they come down for the weekend. It's easy to mix and match whatever of the ingredients you happen to like to suit your tastes. Light, fluffy, and flavorful. The sour cream will produce a very light fluffy egg, so don't leave it out!

12 large eggs
1 tablespoon sour cream (NOT OPTIONAL)
1 cup cheddar cheese
1/2 cup diced ham
1/4 cup diced onion
1/4 cup fresh mushrooms (or small jar, drained)
1/4 cup green bell pepper
salt and pepper
1/8 cup butter

Steps:

  • In a large skillet, melt butter over medium heat. Add mushrooms, bell peppers, and onions.
  • Saute until onions are translucent and tender.
  • Add diced ham and stir until steaming.
  • In the meantime, in large mixing bowl, crack and add the dozen eggs, salt and pepper to taste, one heaping tablespoon of sour cream.
  • Beat with wire whisk until smooth.
  • Pour over the ham and vegetable mixture in the skillet.
  • Sprinkle the top with the cheese.
  • Stir as it cooks until the eggs are no longer shiny.
