SOUTHERN MEDITERRANEAN GOAT CHEESE SPREAD OR DIP
This is my own creation inspired by, if not entirely true to, the cuisines of the Southern Mediterranean which I love. Use it as a dip, spread it on any type of toasted bread. I've used it on grilled steak to good advantage. You'll get 16 servings of 1 Tbsp each.

Steps:
- In a medium bowl crumble goat cheese. Meanwhile in a small chilled bowl, whip cream until thickened only and stir into goat cheese.
- Stir in herbs, shallot, lemon peel, and garlic. Season to taste with sea salt and pepper. Thin with additional cream, if desired. Serve on toasted pita wedges, Syrian bread or anything you wish.
- * 1/4 cup in total. Mix the herb amounts to your preference but you might want to make the parsley the main herb with smaller amounts of the remaining 3.
BACON-CHEESE DIP -- SOUTHERN LIVING
Perfect for tailgating and game-day parties! The blue cheese gives a nice tang! Posted as written. Serve with a variety pack of crackers. I have not tried this warm yet -- but this fall I will try it warmed up in my mini-crock pot and update then! Cook time of two hours is the time to chil the dip after it is made.

Steps:
- Process first 5 ingredients in a blender or food processor until smooth, stopping to scrape down sides.
- Stir in half of bacon. Cover and chill 2 hours.
- Let stand at room temperature 15 minutes before serving.
- Sprinkle with remaining bacon.
- Garnish with parsley and crumbles, if desired.

Steps:
- Melt butter in a pan over medium-low heat; whisk flour into the melted butter until smooth, about 1 minute. Stir in ketchup, chili powder, and garlic powder until incorporated.
- Slowly stir milk into mixture until smooth. Add tomatoes with green chile peppers; whisk in processed cheese food. Bring to a boil, stirring constantly, until cheese is melted, 3 to 4 minutes. Stir in reserved juice from tomatoes if dip is too thick.
