This is a very tasty burger! You have to be careful when cooking them - without egg and fill they are delicate. Add whatever other toppings you want. You need good sized buns for these burgers to hold all the condiments

1 1/2 lbs lean ground beef, more if you want larger burgers
6 tablespoons refried beans
2 jalapeno peppers, seeded, deveined and finely chopped (or milder)
4 tablespoons sweet onions, chopped
4 tablespoons hot salsa
4 slices mozzarella cheese (or other cheese)
8 mushrooms, cleaned & sliced
1 avocado, peeled, pitted and sliced
4 tablespoons sour cream (optional)
1 medium tomatoes, washed and chopped
4 slices crisp fried bacon, crumbled
4 long Italian rolls (or regular hamburger buns)
salt & pepper

Steps:

  • Divide the hamburger into 4 equal portions and make two patties from each portion (if using Italian buns make the patties oblong to fit the bun) On 4 of the 8 patties put a tbsp of refied beans, sprinkle on some jalapeno pepper and a tbsp of onions, salt& pepper Place the second pattie on top and firmly seal.
  • Really pat them so they won't fall apart while cooking.
  • If BBQing I recommend that you use a stir fry pan or use a solid grill to cook them in/on to ensure they do not end up as the fuel for the BBQ.
  • These burgers are delicate because there is no filler in them.
  • Or pan fry When the burgers are cooked on one side (apprx 6 minutes) flip and.
  • add mushrooms, cover with a lid and finish cooking.
  • Slit the buns and start toasting one side, when browned slightly add cheese and continue heating until the cheese has melted Assemble the Burger, Butter the bun if you wish, put in the bacon& mushrooms then the burger, top with the salsa, avacado& sour cream.

4 oranges
3/4 pineapple, peeled, cored, cut into bite-size pieces
1 large mango, peeled, pitted, cut into bite-size pieces
1/2 cup plus 2 tablespoons firmly packed dark brown sugar
1/2 teaspoon ground cinnamon
3 bananas, peeled, sliced
1 1/2 pints vanilla frozen yogurt

Steps:

  • Using zester, remove peel in long strips from 1 orange; reserve peel. Cut white pith from oranges. Working over bowl to collect juices and using small knife, cut between membranes of 1 orange to release segments. Transfer segments to large bowl. Squeeze juice from orange membranes into bowl with juices. Repeat with remaining oranges. Add pineapple and mango to orange segments.
  • Combine 1/3 cup juice collected from oranges, reserved orange peel, brown, sugar and cinnamon in small saucepan. Stir over low heat until sugar dissolves. Increase heat and boil until mixture thickens slightly, about 1 minute. Discard peel. Mix syrup into fruit. (Can be made 4 hours ahead. Cover and chill.)
  • Mix bananas into fruit. Scoop frozen yogurt into bowls. Spoon fruit mixture and juices over and serve.

1 can (8 ounces) kidney beans
1 can (8 ounces) whole kernel corn
1 small bell pepper
1/2 cup chunky-style salsa
1 tablespoon chopped fresh cilantro or parsley
4 flour tortillas (8 to 10 inches in diameter)
1/2 cup shredded Cheddar cheese (2 ounces)

Steps:

  • Drain the kidney beans in a strainer, rinse with cool water and place in a bowl. Drain the corn in a strainer.
  • Cut the bell pepper lengthwise in half, and cut out seeds and membrane. Chop enough of the bell pepper to measure 1/4 cup. Wrap and refrigerate any remaining bell pepper.
  • Mix the beans, corn, bell pepper, salsa and cilantro.
  • Place the tortillas on a clean counter or on waxed paper. Spread about 1/2 cup of the bean mixture over each tortilla to within 1 inch of the edge. Sprinkle 2 tablespoons cheese over each tortilla.
  • Fold opposite sides of each tortilla up toward the center about 1 inch over the filling--the sides will not meet in the center. Roll up tortilla, beginning at one of the open ends. Place wraps, seam sides down, in the microwavable dish.
  • Microwave uncovered on High 1 minute. Rotate dish 1/4 turn. Microwave 1 minute to 1 minute 30 seconds longer.

This is a quick and simple chicken recipe. Simple flavors, but could be spiced up a bit to a persons individual taste with the addition of some mexican spices, chili powder, green chilies, etc.

1 green pepper, cut in strips
4 boneless skinless chicken breasts, cut into 1-inch strips
1 tablespoon butter
2 cups cooked rice
1/3 cup sour cream
16 ounces salsa
1 cup colby or 1 cup cheddar cheese, shredded

Steps:

  • Sauté green pepper and chicken in butter or oil until lightly browned (about 5 mins).
  • Spread the rice in a greased 9x9 pan.
  • Top with peppers and chicken.
  • Mix sour cream and salsa and spoon over chicken. Sprinkle with cheese.
  • Bake 350 degrees for 25-30 minute.

1 lb ground beef
1/2 cup chopped onion
1 jalapeno, minced (optional or more to taste)
2 (8 ounce) cans tomato sauce
1 tablespoon chili powder
1/2 teaspoon salt
6 corn tortillas, cut in half
2 cups cheddar cheese, shredded (8 oz)

Steps:

  • Preheat oven to 325 and grease 1 1/2 qrt casserole dish.
  • Brown meat and drain.
  • Add onion and jalapeno (if using) and cook with meat until tender.
  • Stir in tomato sauce and seasonings.
  • Layer one-third of meat mixture, cheese and one half of tortillas in casserole dish; repeat layers, ending with cheese.
  • Bake at 325 for 20 minutes.
  • Note: Corn tortillas will soften and absorb the sauce.
  • These are recommended.
  • Flour tortillas will expand and the casserole will be too doughy-therefore flour tortillas are not recommended.
