1 (15 ounce) can whole kernel corn, drained
1 (10 ounce) can Rotel Tomatoes, diced
2 cups red bell peppers, chopped
1/2 cup fresh jalapeno pepper, chopped
1/2 cup onion, chopped
1 (8 ounce) bottle Italian dressing
1 (4 ounce) jar chopped pimiento, drained

Steps:

  • Combine all of the ingredients in a large bowl and stir gently.
  • Refrigerate mixture overnight.
  • Serve with corn chips.

This is an unusual - and delicious - play on traditional salsa. It would be perfect for your next party... and is sure to get people talking! Bonnie suggests refrigerating it overnight to let the flavors meld, but the Kitchen Crew and I couldn't bring ourselves to stop munching on it long enough to do that!

1-15oz can(s) WHOLE KERNEL CORN, DRAINED
1-10oz can(s) DICED TOMATOES AND GREEN CHILES (RECOMMENDED: RO-TEL)
2 c CHOPPED RED BELL PEPPER
1/2 c CHOPPED FRESH JALAPENO PEPPERS
1/2 c CHOPPED ONION
1-8oz bottle BOTTLE ITALIAN DRESSING
1-4oz jar(s) CHOPPED PIMENTOS, DRAINED

Steps:

  • 1. IN A LARGE BOWL, COMBINE ALL OF THE INGREDIENTS AND STIR GENTLY TO COMBINE. REFRIGERATE MIXTURE OVERNIGHT. SERVE WITH CORN CHIPS.
