2 cups all-purpose flour, divided
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
3 eggs, well beaten
1 3/4 cups sugar
1 cup vegetable oil
2 cups sliced fresh peaches
1/2 cup chopped pecans
whipped cream

Steps:

  • Combine 1 1/2 cups flour,soda,salt and cinnamon,mix well and set aside.
  • Combine eggs,sugar and oil,beat until smooth.
  • Add flour mixture.
  • Beat at low speed on mixer just until blended (batter will be thick).
  • Dredge peaches and pecans in remaning flour gently fold into batter.
  • Spoon batter into a greased and floured 13x9x2 inch baking pan.
  • Bake at 375 for 50 minutes or until toothpick comes out clean.
  • Cool completely.
  • Cut into squares and garnish each with a dollop of whipped cream.

Our state grows excellent peaches, and this is one recipe I'm quick to pull out when they are in season. It's a tender, moist cake that receives rave reviews wherever I take it. -Betty Jean Gosnell, Inman, South Carolina

1 cup butter, softened
2 cups sugar
6 large eggs, room temperature
1 teaspoon almond extract
1 teaspoon vanilla extract
3 cups all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup sour cream
2 cups diced fresh or frozen peaches
Confectioners' sugar

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Add eggs, one at a time, beating well after each addition. Beat in extracts. Combine the flour, baking soda and salt; add to the batter alternately with sour cream, beating well after each addition. Fold in the peaches., Pour into a greased and floured 10-in. fluted tube pan. Bake until a toothpick inserted in the center comes out clean, 60-70 minutes. Cool for 10 minutes before removing from pan to a wire rack to cool completely. Dust with confectioners' sugar if desired.
