SOUTH BEACH EGGS FLORENTINE
My staple low carb breakfast! Adapted for South Beach. Feel free to substitute canadian bacon, arugala, or whatever you like!

- Bring about an inch of water to boil in a saute pan. Add vinegar. Turn down to a simmer. Carefully break eggs into a small bowl and slide into the pan. The vinegar will help the whites come together. Simmer for 3 minutes using a spoon to pot water over top of eggs. Take 2 thick slices of tomato and put on plate. Salt and pepper to taste. Slice ham in half and put on top of tomato slices. Add a handful of fresh baby spinach to the top of the ham. When eggs are ready take out of the pan with a slotted spoon and place on top of spinach. Salt and pepper again to taste and enjoy!

Steps:
- Preheat grill.
- Heat oil in a large nonstick skillet over medium-high heat.
- Add onion, and cook for 5 minutes or until golden.
- Add mushrooms and salt; cook 5 minutes, stirring constantly.
- Add vinegar, remove mixture from pan.
- Set aside.
- Combine the paprika and the next 4 ingredients (paprika through black pepper).
- Divide the ground meat into 4 equal portion, shaping each into a 1/2 inch thick patty.
- Coat patties with spice mixture.
- Grill patties 4 minutes on each side or until done.
- Place burger patties on muffin halves, and top each burger with 1/4 cup onion mixture.
CANADIAN BACON, BAGEL, AND GREEN PEPPER SANDWICHES
I think my mom got this from a Pilsbury cookbook, but my sis and I both remember it fondly and make it for our appreciative boyfriends. Very easy to modify the spread, meat or vegetable to get a different taste (ex: roasted red pepper, feta and turkey).

Steps:
- Preheat oven to about 425 degrees.
- Butter each split bagel.
- Place bagels butter side up on cookie sheet
- Let warm up/toast for 5 minutes or so.
- Remove sheet from oven once toasty.
- Put cheese slice/portion on one side of each bagel.
- Put green pepper ring on top.
- Put mushroom slices/pieces inside ring.
- Sprinkle with paprika.
- On other side of bagel, put Canadian bacon.
- Increase oven heat to broil.
- Place sheet under broiler and watch carefully.
- Once cheese browns and/or ham curls, remove.
- Place one side on top of the other, let rest and enjoy.

- Heat contact grill or panini maker for 5 minutes. Spread 1 teaspoon mustard on cut sides of each bagel. On bagel bottoms, place 1 slice Canadian bacon, 1 slice tomato, 1/4 cup spinach and 1 slice cheese. Cover with bagel tops.
- Place sandwiches on grill. Close grill, pressing down lightly; cook 2 to 3 minutes or until sandwiches are hot and cheese is melted. Serve immediately.

OPEN FACED PIZZA HOAGIE
Delicious open faced hoagie that I created for my gluten and wheat intolerant husband. I added my Creamy Asparagus Soup (homemade and gluten free, of course) for a great, healthy lunch anyone would enjoy. Using the right gluten free bread product is the key to making this delicious dish.

- Preheat oven to 400 degrees Fahrenheit.
- Cut baguette into half lengthwise. Combine tomato paste, Italian Seasoning, olive oil and salt, mix well. Spread mixture liberally on cut side of bread. Sprinkle Asiago cheese on top of paste mixture, then top with olives and red peppers. Cover with cheese blend.
- Place on baking sheet; bake for 12 minutes, or until cheese is completely melted. Cut into thirds; serve warm.
