EGGPLANT OMELET (SOUTH BEACH PHASE 1)
I'm on a low carb diet and found this super simple recipe in an old edition (June 1990) of the Swiss cooking magazine 'Betty Bossy'. I adapted it so that it is suitable for the South Beach Diet Phase 1. I have not tried this yet, but I am posting it here for safe-keeping. South Beach Diet phase 1 if you use skim milk instead of the cream and olive oil instead of the butter.

Steps:
- EGGPLANT: Slice in 1/2 inch (1 cm) pieces and sprinkle with salt. Leave for 15 minutes. Dry with kitchen paper.
- Melt butter or margarine or olive oil in a frying pan. Fry the eggplants on both sides. Reduce heat.
- Mix eggs with cream (or milk) and season with nutmeg, salt and pepper.
- Pour egg mixture to the eggplants and cook covered until done.

I LOST MY NOODLES! LOW CARB/SOUTH BEACH EGGPLANT LASAGNA
I was looking for a yummy South Beach recipe to curb my Italian Cravings. I found a vegetarian lasagna recipe using eggplant slices as noodles, substituted my own meat sauce, and voila! A low carb keeper in our home! The eggplant taste is indistinguishable with all of the bold italian flavors, and adds the needed texture of the missing noodles. I've also seen zucchini strips used as the mock noodles. Try it!

Steps:
- Preheat oven to 425 degrees.
- Spray cookie sheet, arrange eggplant slices and season with salt and pepper.
- Cook slices 5 minutes on each side.
- Lower oven temp to 375.
- Brown meat, onion and garlic in olive oil for 5 minutes.
- Add red pepper and mushrooms, and cook 5 minutes.
- Add spinach, tomatoes, tomato sauce, spices and wine and simmer for 5-10 minutes.
- Blend ricotta, egg and Green onion.
- Blend together Mozzarella and Parmesan Cheese.
- Spread 1/3 of meat sauce in bottom of 9" x 13" glass pan.
- Layer ½ eggplant slices
- Dollop and Spread ½ ricotta
- Layer 1/3 mozzarella/parmesan mixture.
- REPEAT
- Add last layer of sauce, then mozzarella/parmesan mixture on top.
- Cover with foil and bake at 375 degrees for 1 hour.
- Remove foil and bake or broil another 5-10 minutes until cheese is browned.
- Let it rest 10 minutes before slicing, if you can wait that long!

QUICHE TO GO (ADAPTED FROM SOUTH BEACH DIET)
I like to call these 'Cheesy Goodness'. I'm telling you these are really great!! Now I confess I put in more veggies than they suggest on SBD and SBD uses egg substitute but, man, are they good!! My family had them for breakfast at Thanksgiving last year. You know, when your rushing aroung trying to prepare stuff and want to eat very light. They LOVED them! NOTES: Make sure you really spray entire cup and use FOIL baking cups. Paper cups don't hold up. Can be frozen and reheated in the microwave or toaster oven. Any combination of appropriate vegetables and cheeses and protein may be used. If using fresh spinach use 1 (one) pound well rinsed and blanched.

Steps:
- Defrost the spinach.
- Drain the excess liquid.
- Line a 12-cup muffin pan with foil baking cups. Spray the cups with cooking spray (VERY IMPORTANT).
- Combine the eggs, cheese, peppers, onions, spinach and any other optional ingredients in a bowl. Mix well. Divide evenly among the muffin cups. Bake at 350 degrees F for 20 minutes, or until a knife inserted in the center comes out clean.
