This SOUTHERN POTATO SALAD is creamy delicious with a perfect ratio of sweet relish, celery, Dijon mustard, mayonnaise, and Creole seasoning for a little kick. A classic Southern potato dish with few simple ingredients that is a must-have for potlucks or family dinners!

4 large russet potatoes
4 hard-boiled eggs
¼ cup diced green onion
½ cup celery (, chopped )
¼ cup sweet relish
1 tablespoon garlic (, minced )
2 tablespoons Dijon mustard
½ cup homemade mayonnaise
1 teaspoon Creole seasoning
salt and pepper to taste

Steps:

  • Peel and cut the potatoes into chunks, then add potatoes into a medium saucepan. Water should cover the potatoes at least an inch. Salt potatoes and cook until tender and soft -about 10 minutes. Drain water and let it cool.
  • Once cool, add to a large bowl together with potatoes, chopped eggs, green onion, and celery.
  • In medium bowl, mix together the sweet relish, garlic, mustard, mayonnaise, Creole seasoning, salt, and pepper.
  • Add the mayonnaise mixture together with the potato mixture. Thoroughly mix. Season with salt and pepper to taste, if desired, or as needed to taste.
  • Cover with plastic wrap and refrigerate until ready to serve.

10 eggs
12 medium white potatoes with skin
1 bunch green onions, chopped
1 (14 ounce) can sweetened condensed milk
1 ½ cups mayonnaise
1 tablespoon chopped fresh parsley, for garnish

Steps:

  • Place eggs in a saucepan and cover with water. Bring to a boil and cook for 10 minutes. Remove eggs with a slotted spoon and set aside to cool. Add whole potatoes to the water and boil until a knife is easily inserted, but they are not too soft. Drain and cool.
  • Peel and chop the eggs and place them in a large serving bowl. Stir in the green onions. When the potatoes have cooled, peel and chop then add them to the bowl. Pour in the sweetened condensed milk and stir in the mayonnaise. Sprinkle parley over the top. Chill until serving. This is best served chilled.

4 cups potatoes, diced and cooked
1/2 cup carrot, fresh grated
1/4 cup chives, fresh chopped
1/4 cup tofu sour cream or 1/4 cup sour cream
1/4 cup vegan mayonnaise or 1/4 cup Miracle Whip
1/2 teaspoon sea salt
1/2 teaspoon onion powder
1/2 teaspoon seasoning salt
1/8 teaspoon turmeric
3 tomatoes, grape for garnish
1/8 cup fresh parsley, fresh chopped for garnish

Steps:

  • Mix the sour cream, Vegenaise or miracle whip and all the seasonings together.
  • Add the rest of the ingredients and mix gently until well blended.
  • Garnish with parsley and grape tomatoes. Chill in refrigerator until serving time.

6 hard-boiled large eggs, chopped
1/2 cup thinly sliced green onions
1/4 cup chopped sweet pickles
1 teaspoon prepared mustard
1 teaspoon celery seed
1 cup mayonnaise
Salt and pepper to taste

Steps:

  • Place potatoes in a large saucepan; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, until tender, 10-15 minutes. Drain; refrigerate until cold.
