My paternal grandmother made these yummy muffin-cakes for me and my brother when we were youngsters. Note: 2 tbsp. lemon juice to 1 cup of milk will sour it.

1 cup sour milk
2 eggs
1 cup sugar
1/4 lb butter
1 teaspoon baking soda
2 cups flour
1/2 teaspoon cream of tartar
1/2 teaspoon clove
1 teaspoon cinnamon
1 teaspoon allspice
1/2 cup golden raisin

Steps:

  • 2 tablespoons lemon juice to 1 cup milk will sour it.
  • Soak raisins in hot water.
  • Drain raisins.
  • Flour raisins with 1/2 cup flour.
  • Cream butter and sugar together.
  • Add eggs.
  • Sift dry ingredients together except soda.
  • Dissolve baking soda in sour milk and add to dry ingredients.
  • Beat wet and dry ingredients together until well mixed.
  • Add floured raisins and mix .
  • Fill mixture into paper cups in muffin pan.
  • Bake 425°F for 12 minutes or until inserted toothpick comes out clean.
  • Let cool.

Another half container of milk gone bad? Here's a delicious option for the thrifty minded. The cake is warm comforting and nicely spiced. If you don't have sour milk, you can make some by placing a tablespoon of vinegar in a one cup measure and filling the rest with milk; let stand 10 minutes and you are ready to go.

1 cup white sugar (I subbed out 1/3 of the sugar with Splenda with success.)
1 1/3 cups all-purpose flour
2/3 cup whole wheat flour
1 teaspoon baking soda
1/4 teaspoon baking powder
1/2 teaspoon salt
2 teaspoons ground cinnamon
1 1/4 teaspoons ground cloves
1/2 teaspoon ginger
1/4 teaspoon nutmeg
3 tablespoons vegetable oil
6 tablespoons prune puree (I use baby food.)
1/2 teaspoon vanilla
1 cup sour nonfat milk
1/3-1/2 cup chopped walnuts (I tend to prefer nut on my cakes, but not in them. Use your own tastes as a guide.) (optional)
1/4 cup currants (optional) or 1/4 cup golden raisin (optional)

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Grease and flour a 9x9 inch baking pan.
  • Combine and sift sugar, flour, baking soda, baking powder salt, cinnamon, cloves, ginger and nutmeg.
  • Make a well in the center and pour in the milk, oil vanilla and prune puree. Mix until combined, then add nuts and currants (if using).
  • Pour into a 9x9 inch pan and bake at 350 degrees F (175 degrees C) for 45-50 minutes.

2 c brown sugar
1/2 c butter or margarine, softened
2 eggs
2 1/2 c all-purpose flour
1 1/2 tsp baking powder
1 tsp cinnamon
1 tsp nutmeg
1 tsp ground allspice
1 tsp ground cloves
1 tsp baking soda
1 c sour milk* (see my notes)
1 tsp vanilla extract

Steps:

  • 1. Preheat oven to 350 F.
  • 2. Cream sugar and butter or margarine together until fluffy; add eggs and beat until light.
  • 3. Sift together all dry ingredients, then add them alternately with the milk to the creamed mixture, beating well after each addition; mix in the vanilla.

1/2 cup shortening
1 1/2 cups brown sugar
1 teaspoon vanilla
1/2 cup milk, sour
1 teaspoon baking soda
2 teaspoons cinnamon

1/2 teaspoon nutmeg
1/4 teaspoon salt
3 cups flour

Steps:

  • Beat egg whites until stiff.
  • In another bowl cream shortening, brown sugar, egg yolks, and vanilla.
  • Cream for 5 minutes.
  • Add sour milk.
  • Sift the baking soda, cinnamon, cloves, ginger, nutmeg, salt and flour together; 1/2 cup nuts or raisins may be added to the dry ingredients.
  • Add the dry ingredients to the creamed mixture.
  • Beat for 2 minutes; fold in egg whites.
  • Pour into 2 layer pans that have been greased and lined with wax paper.
  • Spray with Pam.
  • Bake at 350 degrees Fahrenheit for 25 minutes or until done.

2 c all purpose flour
1 tsp baking soda
1/2 tsp salt
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp ground cloves
1/4 tsp ground ginger

1 c unsalted butter, softened
1 c granulated sugar
1 large egg
1 c sour milk (see note)
1 c chopped walnuts
1 c raisins (optional)
confectioners' sugar, for dusting top

Steps:

  • 1. NOTE: To make sour milk, measure out 1 cup milk and let get to room temperature. Add 1 tablespoons of vinegar or lemon juice and stir. The milk will "curdle" and is ready to use. I have just used buttermilk instead.
  • 2. Preheat oven to 350°F. Coat a 13 X 9 X 2-inch oblong baking pan with nonstick cooking spray.
  • 3. Sift the flour, baking soda, salt and spices together and set aside.
  • 4. Cream the butter and sugar together in a large mixing bowl until light and fluffy using an electric mixer set at medium speed. Beat in the egg.
  • 5. Add the dry ingredients alternately with the sour milk, beating well after each addition, using an electric mixer set at low speed. Stir in the walnuts and raisins.
  • 6. Spread the batter into prepared pan and bake for 30-40 minutes or until a toothpick stuck in the center comes out clean.
  • 7. Cool cake in pan on a wire rack. To serve, sprinkle with sifted confectioners sugar and cut into squares.
