Yield Makes 24 to 32 hors d'oeuvres

Number Of Ingredients 14

a 3/4-pound seedless piece butternut squash, peeled and cut into 3/4-inch dice (about 5 cups)
1 medium onion, unpeeled, cut into eighths
1 large garlic clove, unpeeled
1 tablespoon vegetable oil
eight 5- to 6-inch flour tortillas
1 cup chopped red bell pepper (about 1 large)
1 cup coarsely grated jack cheese
1/2 stick (1/4 cup) unsalted butter, softened

For the dip:
1 canned chipotle chili in adobo*, minced
2 teaspoons fresh lime juice
1 cup sour cream
*available at Hispanic markets and some specialty foods shops

  • To make the quesadillas:
  • Preheat oven to 400°F.

  • Heat a griddle or 7-inch non-stick skillet over moderately high heat until hot and cook quesadillas, 1 at a time, until golden, about 3 minutes on each side, transferring to a cutting board.
  • Cut each quesadilla into 6 to 8 wedges and serve warm with chipotle dip.
  • To make the dip:
  • In a small bowl stir chili and lime juice into sour cram until combined well. Dip may be made 2 days ahead and chilled, covered. Makes about 1 cup.

HERBY FARRO WITH BUTTERNUT SQUASH AND SOUR CREAM

Herby Farro With Butternut Squash and Sour Cream image

The herb and chile paste that seasons rice in arroz verde is also a great match to nutty farro and sweet butternut squash. As everything bakes in the oven, the garlic and onion lightly steam, the herbs wilt, and the farro tenderizes while maintaining its signature chew. Fresh lime zest and juice perk everything up. This dish is great with salmon, pork or chicken - or, skip the sour cream and this becomes a hearty, vegan main that partners well with black beans.

Time 1h

Yield 4 servings

Number Of Ingredients 11

1 1/2 cups chopped cilantro leaves and tender stems, plus more for garnish
1 cup chopped parsley leaves and tender stems, plus more for garnish
1/2 large yellow onion, coarsely chopped
4 garlic cloves, peeled
1/2 jalapeño, seeded (if desired) and coarsely chopped
Kosher salt and black pepper
1 tablespoon extra-virgin olive oil
1 1/2 cups farro
1 pound peeled butternut squash, cut into 3/4-inch pieces (about 3 cups)
1/2 cup sour cream
1 teaspoon lime zest plus 2 tablespoons juice (from 1 lime)

Steps:

  • Heat the oven to 375 degrees. In a blender, combine the cilantro, parsley, onion, garlic, jalapeño, 1 teaspoon salt and a few grinds of pepper on low speed until a wet, coarse paste forms, stirring and scraping the sides of the blender as needed.
  • In a large Dutch oven, heat the olive oil over medium-high, then add the farro, season with 1 teaspoon salt, and cook, stirring, until the farro smells toasty, about 2 minutes. Add the herb paste and 3 cups water. (Pour the water into the blender to get every last bit of herb paste, then pour the water into the pot.) Bring to a simmer.
  • Scatter the squash on top, cover, and bake until the farro and squash are tender, 35 to 40 minutes. (All the water may not be absorbed).
  • Meanwhile, stir together the sour cream, lime zest and 1 tablespoon lime juice in a small bowl. Season with salt and pepper.
  • Let the farro sit 5 minutes, season to taste with salt and pepper, then stir in the remaining tablespoon of lime juice. Serve the farro with a drizzle of sour cream and top with fresh parsley and cilantro leaves.

SUMMER SQUASH FRITTERS WITH BASIL & LEMONY SOUR CREAM

Summer Squash Fritters with Basil & Lemony Sour Cream image

Just a few minutes - and a handful of ingredients - to fritter greatness! These simple summertime fritters are the perfect way to make use of this prolific yellow squash.

Provided by Kare for Kitchen Treaty

Time 20m

Number Of Ingredients 12

2 medium summer squash (grated (about 4 cups grated))
2 teaspoons kosher salt
1 egg
1/4 cup all-purpose flour
1/2 cup fresh basil leaves (lightly packed, chopped, plus more basil for topping if desired)
2 tablespoons grated onion
1/4 teaspoon freshly ground black pepper
Olive oil for cooking
1/2 cup sour cream (low fat or full fat)
Zest from 1 small lemon
2 teaspoons fresh lemon juice
Pinch kosher salt

Steps:

  • In a medium bowl, toss together the grated squash and the salt. Line a fine-mesh sieve with several layers of paper towels or cheesecloth. Add salted squash to the sieve and place over a bowl to drain. Let sit for five minutes then gather up the sides of paper towels or cheesecloth and gently squeeze the liquid out of the squash (there will probably be quite a bit).
  • Add the egg to a medium bowl and beat lightly with a fork. Add the flour, basil, onion, black pepper, and the squash. Stir with fork to combine.
  • Place a large skillet over medium heat. Add 1 - 2 tablespoons of olive oil, enough to lightly coat most of the bottom of the skillet. Once the oil is hot, add fritter mixture to pan in approximately 2 tablespoon increments, working quickly to spread the fritter into a round shape before it begins to cook. I usually cook 3 fritters at a time; any more and the pan gets crowded and it's hard to manage them all. Cook for 1-2 minutes, until golden brown, and flip to cook the other side until golden and the fritter is cooked through, about 1-2 more minutes. Transfer to a paper-towel-lined plate. Add more oil to the pan and repeat with remaining batter.
  • To make the sour cream topping, add the sour cream, zest, juice, and salt to a bowl and stir to combine.
  • Serve fritters right away, topped with a drizzle of lemony sour cream and garnish with basil leaves if desired.

Categories     Vegetable     Side     Bake     Thanksgiving     Vegetarian     Stuffing/Dressing

Yield 2 servings

Number Of Ingredients 23

1 large acorn squash, cut in half and seeded, reserving the seeds for the brittle
1 tbs butter
Salt and pepper to taste
Brittle
Acorn squash seeds
1 tbs brown sugar
2 tbs maple syrup
¼ tsp cinnamon
Salt and Pepper to taste
Stuffing
1 tbsp each olive oil and butter
1 medium celery root bulb, peeled and cubed ½ inch
1 ripe pear, peeled, cored and cubed ½ inch
1 small sweet onion, diced
4 slices of dry, day old bread, cubed
3/4 cup chicken or vegetable broth
½ tsp ground sage
Salt and pepper to taste
Maple Sour Cream Sauce
¼ c. sour cream
2 tbs maple syrup
½ tsp Aleppo pepper
½ tsp ground fresh ginger

Steps:

  • Heat oven to 400 degrees. Add ½ tbs butter and salt and pepper to each half of the squash and bake while preparing the rest of the ingredients (about 45 minutes. Squash should be nearly cooked before stuffing). Meanwhile, clean and dry acorn squash seeds. Dry roast in a pan on low flame until seeds are toasted, being careful not to burn. Add remaining ingredients and increase flame to medium high, bringing mixture to boil. Cook for 10 minutes, stirring occasionally until seeds and mixture are at a hard crack stage. When done, turn seeds and mixture out on parchment paper and let cool. When cool, break into small pieces. In a large frying pan, heat oil and butter slowly, adding the onion and celery root. Cook at a medium low heat until onions are caramelized, about 20 minutes, stirring occasionally. Take off heat and stir in remaining ingredients, adjusting the broth, depending on desired moistness of stuffing. For the sauce, Combine all ingredients in small sauce pan and heat gently over low flame until spices release flavors, about 5 minutes Fill squash with stuffing and return to oven and heated through and stuffing begins to brown, about 25 minutes. Top with warm Sauce and Brittle. Makes two generous servings.
