SOUR CREAM & DILL CUCUMBERS

I grew up with your everyday sour cream, dill, and cucumber salad on our Polish table, but as I learned to cook I took this common dish and spiced it up.

4 large cucumbers
cold water
1 small onion, grated
1/2 c sour cream
1/4 c real mayo
2 tsp vinegar
1 Tbsp lemon juice
1 tsp sugar
1 - 3 Tbsp dill
1 tsp salt
1/4 tsp freshly ground black pepper
cayenne pepper

Steps:

  • 1. In a bowl, sprinkle cucumbers with salt and pour in cold water until cucumbers are just covered. Refrigerate for 30 minutes.
  • 2. While cucumbers are chilling, combine the remaining ingredients in bowl - mix well.
  • 3. After 30 minutes, drain cucumbers very well. Carefully cucumbers and sour cream mixture. Chill for at least one hour before serving.

5 C thinly sliced English cucumbers (about 2 cucumbers)
1/2 t salt
1/2 C reduced-fat sour cream
2 T white vinegar
2 T sugar
1/4 C diced red onion
1-2 T miniced fresh dill
1/8 t black pepper

Steps:

  • Peel the cucumbers if you prefer. Place cucumber slices in a colander, sprinkle with salt and toss to coat. Let stand in the refrigerator for 1-2 hours, allowing cucumbers to release some moisture. Pat cucumbers dry with paper towel. In a large bowl, combine the sour cream, vinegar and sugar. Add sliced cucmbers to the sour cream fressing along with the onion, dill and black pepper. Stir gently to coat. Chill 1 hour before serving to allow flavors to blend. Cucumbers and sour cream with dill image

This salad is best when cucumber is sliced as thin as possible , the same for the onion slices. Dill is optional. For less calories and fat content, use Fat Free or Light sour cream.

3 - long thin cucumbers
1/2 small onion sliced in very thin slices cut in half (more or less, your choice)
4-5 tablespoon(s) sour cream ( light or fat free can be used also)
1 1/2 tablespoon(s) white vinegar
1 - heaping tbs white sugar (more or less , to desired taste )
1/4 teaspoon(s) dillweed (optional)
- salt/pepper to desired taste
- note: do not use big round cucumbers, seeds are too big

Steps:

  • Rinse and peel cucumbers and onions ... Slice as thin as possible into medium size bowl ... place in refrigerator for about a 1/2 to 1 hour ... remove and drain excess water, well. Add remaining ingredients, mix well. Serve and enjoy !!
