3 tablespoons mayonnaise or salad dressing
3/4 teaspoon dried dill weed
1 large egg
2 tablespoons milk
1 can (14 3/4 oz) salmon, drained, skin and bones removed, flaked
2 medium green onions, chopped (2 tablespoons)
1 cup soft bread crumbs (about 1 1/2 slices bread)
1/4 teaspoon salt
1 tablespoon vegetable oil

Steps:

  • In small bowl, stir sauce ingredients until well mixed. Cover; refrigerate until serving.
  • In medium bowl, beat egg and milk with fork or wire whisk. Stir in remaining ingredients except oil. Shape mixture into 4 patties, about 4 inches in diameter.
  • In 10-inch nonstick skillet, heat oil over medium heat. Cook patties in oil about 8 minutes, turning once, until golden brown. Serve with sauce.

4 (6-ounce) skinless salmon fillets, cut into large chunks
1 tablespoon grill seasoning, (recommended: Montreal Seasoning by McCormick)
1 tablespoon poppy seeds
1 tablespoon sesame seeds
3 tablespoons chopped fresh dill
Extra-virgin olive oil for drizzling
1/2 cup softened cream cheese
3 scallions, whites and greens, chopped
1/2 cup sour cream
1 teaspoon lemon juice
Green leaf lettuce, for topping
Sliced beefsteak or vine ripe tomato, for topping
Sliced red onion, for topping
Crusty kaiser rolls, split and toasted

Steps:

  • Preheat outdoor grill if using to medium high. Prepare hot grill with cooking spray. Indoors, use a large skillet rather than a grill pan and preheat with a drizzle of extra-virgin olive oil to medium-high heat.
  • Place salmon in food processor and pulse to coarse grind meat to form burgers. Transfer fish to a mixing bowl and season with grill seasoning, poppy seeds, sesame seeds, and dill. Mix and form 4 patties. Drizzle the burgers with extra-virgin olive oil.
  • Cook burgers 3 minutes on each side for a pink center, 4 to 5 minutes on each side for fully cooked fish.
  • While burgers cook, combine in a bowl the cream cheese and the scallions and fold in sour cream and lemon juice.
  • Top the burgers with lettuce, tomato, onion and sauce on crusty, toasted buns.

1 cup sour cream
1/2 cup Progresso™ plain bread crumbs
1/8 teaspoon pepper
8 sandwich buns, split, or 1 round focaccia bread (about 10 inches in diameter), cut horizontally in half, then cut into 8 wedges
Leaf lettuce, if desired

Steps:

  • Heat gas or charcoal grill. In large bowl, mix all ingredients except buns and lettuce. Shape mixture into 8 patties, about 1/2 inch thick.

1 cup fresh breadcrumb
4 finely chopped green onions
1/3 cup sour cream
3 teaspoons Worcestershire sauce
1/2 teaspoon salt

This is my adopted recipe as of Feb 2005. I made this yesterday and doubled the recipe for DH and I. It was very moist and tasty. It made a great tasting hamburger. It would also be good with potatoes and a vegetable. I didn't use the microwave, I just fried it up.

2 tablespoons sour cream
1 tablespoon green onion, Sliced
2 teaspoons fine dry breadcrumbs
1/8 teaspoon salt
1 dash pepper
1/4 lb lean ground beef
1 hamburger bun (Hamburger bun should be split, toasted and buttered.)
lettuce leaf
1 slice tomatoes, thinly sliced
sour cream (optional)

Steps:

  • Stir together 2 T sour cream, green onion, bread crumbs, salt and freshly ground pepper.
  • Add ground beef; mix well.
  • Shape the ground beef mixture into one 3/4-inch thick patty.
  • Place the patty in a small baking dish.
  • Loosely cover with clear plastic wrap or waxed paper.
  • Micro-cook, loosely covered, on 100% power for 1 1/2 to 2 minutes.
  • Turn patty over; rotate the baking dish a half turn.
  • Micro-cook, loosely covered, on 100% power for another 1 1/2 to 2 minutes or until done.
  • Drain off fat.
  • Serve on toasted bun with lettuce and tomato.
  • Dolop with additional sour cream, if desired.

Cut onions in half. Marinade in above 1 hour room temp. Grill Covered

2 tsp. olive oil
1/2 cup mined onion
1/2 c. minced red pepper
3 canned pickled jalepeno chiles, stemmed and minced.
2 garlic cloves, minced
1/4 tsp dried thyme, crumbled
1 1/2 C bottled catsup
3/4 canned crushed tomatoes in heavy puree
1/2 tsp pepper

Steps:

  • Heat oil in heavy medium saucepan over low heat. Add all onions, bell pepper, chiles, garlic and thyme. Cover and cook until veggies are tender, stirring occasionally about 10 mins. Mix in catsup, tomatoes and pepper. Cover partially and simmer until thickened, stirring occasionally, 5 mins. Cover and chill. Will keep in fridge for two weeks.
