1/2 cup sour cream
1 teaspoon Dijon mustard
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon black pepper
1/4 teaspoon salt
1 tablespoon chopped chives

Steps:

  • Add the mayonnaise, sour cream, mustard, garlic powder, onion powder, black pepper, salt and chives to a bowl. Mix together, and then cover and chill until ready to serve.

Here's how to make onion dip without standing near the stove for an eternity, waiting for onions to caramelize: Roast rings of onion in the oven with the teeniest bit of sugar for 40 minutes for effortlessly faux-caramelized onions. Red onions are naturally a bit sweeter and mellower than white ones, especially when they get brown and slouchy, but lemon juice, chives and raw garlic will perk them right up. The creaminess - what we're here for - comes from three sources: sour cream, mayonnaise and Greek yogurt, a nice counter to the crisp potato chips you'll, of course, serve it with.

1 pound red onions, cut into 1/4-inch rings (about 2 large onions)
2 tablespoons olive oil
1 3/4 teaspoons kosher salt
1 teaspoon sugar
1/2 cup sour cream
1/2 cup full-fat Greek yogurt
1/4 cup mayonnaise
1 garlic clove, grated
1 tablespoon lemon juice
Black pepper, to taste
2 tablespoons minced chives
Potato chips, for serving

Steps:

  • Heat the oven to 400 degrees, and line a baking sheet with parchment paper. Arrange the onion slices in a single layer on the prepared sheet, leaving room between each. (Use 2 baking sheets if the onions won't all fit comfortably on 1.) Drizzle with olive oil, sprinkle with 1 teaspoon salt and the sugar and gently flip to coat, keeping the rings as intact as possible. Cook for 30 to 40 minutes, turning once, until soft and browning (It's O.K. if some parts get crisp and charred).
  • Let the onions cool slightly, then transfer to a cutting board and roughly chop. (You want to have small pieces of onion without making a paste.)
  • Transfer the onions to a medium bowl and add the sour cream, yogurt, mayonnaise, garlic, remaining 3/4 teaspoon salt, lemon juice and black pepper. Fold to combine.
  • Transfer to a serving dish and garnish with minced chives. Serve with potato chips.

Take plenty of time to properly caramelize a mixture of onions and shallots and you'll be greatly rewarded with a depth of flavor that you would never get from a powdered packet. Resist the urge to cook them at a higher temperature in order to rush the process - they'll burn before they brown and soften. The addition of Greek yogurt might seem unusual, but it provides a lightness and tang that sour cream can't deliver by itself.

2 tablespoons vegetable oil
1 pound yellow onions (about 3 medium), thinly sliced
2 shallots, thinly sliced
Kosher salt, freshly ground pepper
1 cup sour cream
1 cup full fat Greek yogurt or sour cream
2 tablespoons fresh lemon juice
1 clove garlic, finely grated
Olive oil, for drizzling
1/4 cup finely chopped chives

Steps:

  • Heat oil in a large skillet over medium heat.
  • Add onions and shallots and season with salt and pepper. Cook, stirring occasionally, until onions are softened and starting to turn a nice golden brown, 15 to 20 minutes. Reduce heat to low and continue to cook, stirring often to make sure the onions don't stick along the bottom of the skillet. Cook until onions are a deep golden brown and reduced by about half their original size, another 45 to 55 minutes. Resist the urge to turn up the heat to make them caramelize faster. It will lead to burning.
  • Transfer onions and shallots to a cutting board and finely chop. Place in a large bowl along with sour cream, yogurt, lemon juice and garlic. Season with salt and pepper.
  • Transfer to a serving bowl and drizzle with olive oil, season with pepper and sprinkle with chives.

2 Tbsp. (28 g) plant-based butter
1 medium sweet onion, such as Vidalia, sliced thinly
2 garlic cloves, sliced thinly
¼ tsp. (1½ g) kosher salt
¼ tsp. (1½ g) paprika
¼ tsp. (1½ g) fresh thyme leaves, plus more for garnish
8 oz. (225 g) plant-based cream cheese such as Miyoko's, Kite Hill, or Violife
1 tsp. (5 ml) freshly squeezed lemon juice
1 Tbsp. (3 g) dried chopped onions
Homemade or store-bought crispy fried shallots, for garnish (optional)
Chips or crudités, for serving

Steps:

  • Heat the plant-based butter in a medium sauté pan over medium-low heat until the butter melts, about 1 to 2 minutes.
  • Add the onion and mix well. Cook slowly, stirring occasionally, until the onions are deeply brown, about 15 minutes. Add the garlic, salt, black pepper, paprika and thyme and cook 1 to 2 minutes more or until the garlic is lightly browned.
  • Scrape onion mixture into a small food processor or blender and pulse 4 or 5 times or until the onions are puréed.
  • Add the plant-based cream cheese and lemon juice and pulse 4 or 5 times until the onions are well dispersed throughout and dip has the consistency of sour cream. Do not over-pulse, or the plant based cream cheese will begin to get loose and runny. Scrape the mixture into a bowl and stir in the dried, chopped onions if using. Garnish with crispy shallots and more thyme, if desired. Serve with chips or crudités.

I got this recipe from my husband's Aunt Dee. It's simply labeled as "Rye Boat Dip", but judging from the ingredients, I'd say this is sour cream and onion dip! I had a hard time finding other recipes to back up my guess, so I thought I'd post this as an example. If you're unfamiliar with dried beef, it'll be in the same section as Spam and other canned meats. The stuff I use comes in a glass jar. It's a little pricey in some stores-I've used only one jar and it's been delicious. Note: Cooking time is chilling time.

1/2 cup onion, minced
3 (4 1/2 ounce) packages dried beef
2 teaspoons dill weed
2 tablespoons lemon juice
2 cups mayonnaise

Steps:

  • Chop the dried beef into bite-sized pieces.
  • Mix all ingredients together.
  • Let it, covered, in the fridge overnight.
  • Optional: Just before serving, hollow out a loaf of rye bread. Tear the removed bread into bite-sized pieces. Pour dip into hollow in bread. Place torn bread around bread bowl to dip into bowl.

4 tablespoons water
1 (16-ounce) container sour cream
1/4 cup chopped chives or finely chopped scallion greens

Steps:

  • Heat oil in a 12-inch heavy skillet over medium-high heat until it shimmers, then sauté onion and shallots with 1 teaspoon salt until lightly browned, about 2 minutes.
  • Reduce heat to medium-low and continue to cook, covered, stirring frequently, until vegetables are golden brown, about 20 to 30 minutes more.
  • Remove from heat and stir in 1/4 teaspoon pepper and 2 tablespoons water, or enough to loosen any brown bits stuck to the bottom of the skillet.
  • Transfer onion mixture to a medium bowl, then stir in sour cream and remaining 2 tablespoons water. (If desired, thin to desired consistency with additional water.)
  • Stir in most of the chives, sprinkling on the rest as a garnish.
