2 cups all-purpose flour
2-1/2 cups sugar, divided
4 teaspoons baking powder
1 cup 2% milk
2 tablespoons canola oil
2 cans (14-1/2 ounces each) water-packed pitted tart red cherries, well drained
1/8 teaspoon almond extract
Optional: Whipped cream or ice cream

Steps:

  • In a bowl, combine flour, 1 cup sugar, baking powder, milk and oil; pour into a greased shallow 3-qt. baking dish. In a bowl, combine cherries, extract and remaining sugar; spoon over batter. , Bake at 375° for 40-45 minutes or until a toothpick inserted in the cake portion comes out clean. Serve warm, with whipped cream or ice cream if desired.

Our mother's recipes pleased all six of her children. One of my brothers was especially fond of her cherry pudding. Every time he came home, Mom would bake this cake-like treat. Now, I surprise him with it whenever he visits me.

1-2/3 cups sugar, divided
1 cup all-purpose flour
2 teaspoons baking powder
1/8 teaspoon salt
2/3 cup milk
1 can (14-1/2 ounces) pitted tart cherries, undrained
1 tablespoon butter

Steps:

  • In a small bowl, combine 2/3 cup sugar, flour, baking powder and salt. Stir in milk. Spread into a greased 11x7-in. baking dish; set aside., In a small saucepan, combine the cherries, butter and remaining sugar. Bring to a boil; cook and stir for 1-2 minutes or until sugar is dissolved. Spoon over crust. Bake at 350° for 30-35 minutes or until golden brown. Serve warm.

This is a recipe that was passed down from my grandmother. She used to make it frequently for her children when they were growing up. It's a delicious recipe that contains fresh sour cherries. You can substitute water for the cherry juice.

2 cups all-purpose flour
½ teaspoon salt
2 teaspoons baking powder
1 cup white sugar
½ cup butter
1 cup milk
1 teaspoon vanilla extract
4 cups pitted sour cherries
½ cup white sugar
1 ¼ cups cherry juice

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 10x10-inch baking dish.
  • In large bowl, combine flour, salt, baking powder and 1 cup sugar; stir. Add butter, milk and vanilla; beat with electric mixer for 2 minutes, or until smooth. Pour mixture into pan and cover evenly with cherries.
  • Heat cherry juice in microwave or in small saucepan, until just simmering. Sprinkle 1/2 cup of sugar over cherries, and pour hot cherry juice on top. Bake 40 to 45 minutes, or until pick inserted in center comes out clean.

1 540ml can cherry pie filling
3 tbsp butter, softened
1/2 cup sugar
1 cup flour
1/2 tsp salt
1 tsp baking powder
3/4 cup milk
1 lemon, grated
1 tbsp sugar

Steps:

  • Preheat oven to 350F.
  • Spread the cherry pie filling in a 9 inch square baking pan.
  • In a bowl, cream the butter and 1/2 cup sugar together with a mixer.
  • In another bowl, sift together flour, salt and baking powder. Add to creamed mixture alternately with milk. Stir in the lemon peel. Spread batter over cherry pie filling. Sprinkle 1 tbsp sugar on top.
  • Bake for 40 minutes or until cake tests done with a toothpick.

1/2 teaspoon ground cinnamon

PUDDING:
1/2 cup packed brown sugar

  • Preheat oven to 350 degrees. Butter a 9-inch square baking dish, and dust with flour, tapping out excess.
  • Make the topping: Stir together butter, flour, sugars, salt, and cinnamon.
  • Make the cakes: Whisk together flour, baking powder, and salt in a bowl. With a mixer, cream butter and granulated sugar in another bowl until pale and fluffy. Beat in eggs and vanilla. Working in alternating batches, add flour mixture and buttermilk, beginning and ending with flour mixture. Beat until just combined. Pour into prepared dish, and smooth with an offset spatula. Dot top with cherries, and sprinkle with crumb topping.
