TRI-BERRY OVEN PANCAKES

1 cup each raspberries, blueberries, and sliced strawberries
1 tablespoon granulated sugar
2 tablespoons unsalted butter, melted, plus 4 teaspoons for the dishes
3 extra-large eggs, at room temperature
1/2 cup milk
1/2 cup all-purpose flour
1 teaspoon pure vanilla extract
1 teaspoon grated orange zest
3/4 teaspoon kosher salt
Maple syrup and confectioners' sugar, for garnish

Steps:

  • Preheat the oven to 425 degrees.
  • Gently combine the berries and sugar in a small bowl and set aside while you make the pancakes. Place 4 (6- to 7-inch) individual gratin dishes on two sheet pans. Place 1 teaspoon of butter in each gratin dish and set aside.
  • Place the eggs in the bowl of an electric mixer fitted with a whisk attachment and beat on medium speed until mixed. Add the milk and combine. Slowly add the flour, vanilla, orange zest, 2 tablespoons melted butter, and the salt and mix just until smooth. Whisk by hand if the mixture is lumpy.
  • Place the gratin dishes in the oven for 3 minutes, until the butter is hot and bubbly. Make sure the butter covers the bottom of each dish. Immediately divide the batter equally among the gratin dishes and bake for 12 to 14 minutes, until puffed and lightly browned. Divide the berries among the dishes, drizzle with maple syrup, dust with confectioners' sugar, and serve hot.

1 1/2 cups all-purpose flour
2 tbsp white sugar
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 1/2 cups buttermilk
3 tbsp vegetable oil or melted butter
2 large eggs
1/2 tsp vanilla extract
1/2 tsp lemon zest
2/3 cup frozen blueberries, thawed in microwave
Oil or butter for frying
Butter for topping
Topping of your choice (lemon curd is nice)

Steps:

  • In a large bowl, mix together the flour, sugar, baking powder, baking soda, and salt. In a medium bowl mix together the buttermilk, butter or oil, eggs, vanilla extract, and lemon zest. Pour the wet ingredients in to the dry ingredients and mix until smooth (the batter should run off a teaspoon easily, leaving only a thin coating). Fold in the blueberries. Cover the bowl with plastic wrap, and leave in the fridge overnight. The next morning preheat the pan to medium and the oven to 170. Oil or butter pan. For 1 large pancake pour 1/3 cup batter on pan per pancake, for 4 small pancakes pour 2 tbsp batter on pan per pancake. Fry till golden brown, flip, and fry till tan. Put pancakes in oven while you fry the rest. Serve with butter spread on top and topping of your choice.

Steps:

  • Preheat oven to 425˚F (220˚C).
  • Pour pancake mix, milk, and eggs into a bowl and mix just until combined.
  • Pour batter onto a parchment-lined baking sheet and spread to the edges.
  • Place strawberry slices on top of the batter, followed by the blueberries and raspberries.
  • Bake for 15 minutes, or until golden brown.
  • Cut into squares and serve immediately, or freeze up to 1 month.
  • To reheat, place on a microwave-safe plate and heat for 20 seconds per pancake on the plate.

1 cup packed brown sugar

1/2 teaspoon rum extract

Steps:

1 teaspoon cinnamon
1 teaspoon ground cloves
2 teaspoons baking soda

1 cup brown sugar
1/2 cup shortening
1/4 cup butter
1 egg
1/2 cup molasses
1/2 cup chopped crystallized ginger
1 tablespoon grated fresh ginger
white sugar (optional) or powdered sugar, for rolling (optional)

Steps:

  • heat oven to 350
  • combine flour, powdered ginger, soda, cinnamon, cloves, salt and cayenne if using. set aside.
  • cream brown sugar, shortening and butter until fluffy.
  • add eggs molasses and beat until blended.
  • add flour mixture just until blended.
  • gently stir in crystalized ginger and fresh ginger.
  • cover and refrigerate dough for 1 hour.
  • shape dough in 1 inch balls and roll in white sugar or powdered sugar -- or nothing and place on a baking sheet. may flatten SLIGHTLY not too much or they loose thier chewiness, or not at all.
  • bake 8-10 minute cookies will be soft. check at 8 min.DO NOT OVERBAKE.
