CHICKEN AND VEGETABLE SATAY WITH SOMEN NOODLE SALAD AND PEANUT SAUCE
Steps:
- Using a food processor, combine the mirin, soy sauce, fish sauce, rice vinegar, lime juice, garlic, sambal, sweet soy sauce, sake, and green onions. Blend at high speed until the mixture achieves a smooth consistency. Divide the marinade in half and place in 2 separate pans.
- Trim the chicken breast, removing all of the fat and sinew. Cut the chicken lengthwise into 4-inch strips. Stab the skewers through the chicken and soak in 1 of the pans filled with marinade for at least 2 hours.
- Thread the prepared shiitake caps, tomatoes, onion, and eggplant onto a new set of skewers, and soak in the other pan of marinade. Let sit for at least 2 hours.
- When other elements are ready, grill skewers over medium-high heat for 3 to 4 minutes per side.
- On a large plate, spread the Peanut Sauce to cover about 3/4 of the plate. Place a radicchio cup in the center of the plate and fill with the Somen Noodle Salad. Place 4 chicken skewers and 1 vegetable skewer on the plate and garnish with the remaining 2 tablespoons green onions and peanuts.
- Prepare a medium saucepot coated with oil over medium heat. When the oil shimmers, add the shallots and saute until carmelized. Deglaze the pan with the fish sauce and add the coconut milk, peanut butter, sweet soy sauce, and sambal. Stir to combine and then bring to a boil for 2 minutes. Remove from heat, pour into a food processor, and blend until smooth.
- Bring a large pot filled with salted water to a boil, add the somen noodles cook for about 2 minutes. Immediately transfer the noodles to a bowl filled with ice water to stop the cooking. Drain the noodles and drizzle with the canola oil to prevent them from sticking.
- In a large mixing bowl, combine the noodles, radicchio, carrots, 2 tablespoons of green onions, peanut sauce, sweet soy sauce, lime juice, salt and pepper. Mix well to coat the noodles. Place in the refrigerator until ready for use.
SOMEN SALAD
This makes a great summer potluck dish. The ingredient list is flexible. You can substitute cilantro for green onion. Char siu and kamaboko can be found in oriental markets. I got this recipe from a Hawaiian friend

SAKE POACHED SALMON WITH SOMEN AND FENNEL SALAD WASABI AND LEFTOVERS: SALMON SALAD SANDWICH WITH TARO CHIPS

- In a salmon poacher or large saucepot, mix the sake, celery, carrot, onion, sugar, bay leaves, peppercorns, soy sauce, and water, to cover. Add the seasoned salmon and slowly bring the liquid to a simmer. Simmer for 3 minutes then turn off the heat. Let stand for 5 to 10 minutes depending on doneness desired. I prefer medium rare (5 minutes). In a blender, add ponzu, shallots, 1/2 tablespoon togarashi, soy, and sugar. Blend on high speed and drizzle in the oil. Season with salt and pepper. In a large bowl, mix together fennel, somen, and scallions and toss with enough vinaigrette to coat the salad. There will be some left over for plating. Check for seasoning.
- Plating: On a large plate, place a mound of the salad and top with hot salmon. Drizzle on a little of the vinaigrette and garnish with remaining togarashi and fennel fronds.
- In a bowl, mix together the wasabi aioli, salmon, and celery. Check for seasoning. Build the sandwich with the tomato and lettuce. Slice on the bias. Fry chips until golden brown and crisp. Season lightly with salt.
- In a food processor, add wasabi paste, garlic, ginger, vinegar, and yolks. While processor is on, drizzle in oil, slowly at first until it emulsifies then more quickly. Check for seasoning. Store in refrigerator. Plating: Serve sandwich with taro chips.
ASIAN SLAW AND SOMEN SALAD WITH SPICE-RUBBED TUNA
Whole-wheat somen noodles are thin, light, delicate, and soft. Similar to vermicelli, these Japanese noodles are often served cold in summer months. They add substance to this crunchy, colorful slaw.

- Cook somen noodles in large pot of boiling water until done, 2 to 3 minutes. Meanwhile, in a small bowl whisk together ginger, garlic, red-pepper flakes, sugar, soy sauce, rice vinegar, and oils; set aside. Drain noodles in a colander, rinse with cold water, and shake to drain noodles well. Place noodles in large bowl, toss with scallions and half of dressing, about 1/3 cup. Place on large round serving platter on one-third of the plate and set aside.
- Place cabbage, carrots, cucumber, radishes, cilantro leaves, and sesame seeds in the empty bowl and toss with remaining dressing. Place on serving platter adjacent to the noodles, covering another third of the platter; set aside.
- Dry tuna with paper towel, rub with oil, season with salt and five-spice powder, if using. Grill or pan-sear tuna over medium-high heat, about 1 1/2 to 3 minutes per side for rare to medium-rare steaks. Cut into 1/4-inch slices and place in a number of rows in fan pattern on remaining third section of serving platter. Place cilantro sprigs in center of platter and serve immediately.
HAINAN NOODLES/JAPANESE SOMEN SALAD
I like this recipe because it is very easy to make and that there are many different toppings. I'm originally from Hawaii so I've tasted the Japanese Somen Salad. But since I've moved to Hainan, China, I've come to like Hainan version using the same kind of noodles. The Japanese Somen Salad version I got from my mother and the Hainan Noodles I got from observing street cooks here in Hainan.

- In a small bowl, mix rice vinegar, vinegar, and soy sauce together.
- Add sugar to taste.
- Noodles:.
- Boil water with vegetable oil.
- Put the noodles in the boiling water and cook for two minutes or until the noodles hand from your chopsticks.
- Pour noodles in a colander to drain the water.
- Put drained noodles in another large bowl and add add cold tap water or ice; Let noodles cool.
- Prepare toppings and sauce.
- Put the noodles in a serving bowl and top it off with your favorite toppings.
- Pour sauce on the noodles and enjoy!

Another family favorite. I have been able to find all the ingredients here in the mainland. I buy my char su pork at Win Co as well as the somen noodles and Nori.

- 1. Cook somen noodles as directed in package when cooked place in a colender and run cold water over the noodles and let drain.
- 2. The dice the char su, cucumbers, leaf onions.
- 3. thinly slice the lettuce.
- 4. place the 3 eggs that have been slightly beaten in a medium heated skillet with oil and cook one side then flip over to the other side to cook.
- 5. take the cooked eggs out when done and cut into strips.
- 6. If you want the nori in it. cut the nori into small pieces.
- 7. NOW YOU ARE READY TO PUT TOGETHER YOUR SALAD!
- 8. Take out your platter and add the cooked somen noodles to cover the platter.
- 9. add in layers the lettuce, cucumbers, char su pork, nori, egg strips and leaf onion.
- 10. When ready to serve pour the dressing over it. Dressing recipe is listed below.
- 11. DRESSING: This needs to be made the night before you are going to use so the flavors blend.
- 12. 1/2 cup Japanese rice vinegar 1/2 cup shoyu sauce (soyu) 1/2 cup sugar ( I used brown sugar) 1/2 teaspoon sesame oil 3/4 teaspoon toasted sesame seeds
- 13. Place all in a small jar and shake up to mix well. Store in the refregerator untill ready to use.
SOMEN SALAD
This recipe was given to me years ago by my friend Sharon. It is on an old faded piece of paper that is well worn. I thought I would share it before I lose it.

Steps:
- Clean lettuce and tear into bite sized pieces. Dry lettuce in a spinner and spread pieces on a large serving platter.
- Boil one to one and a half quarts of water in a large saucepan. Drop somen noodles in boiling water and cook until soft about 3-5 minutes. Do not over cook. You can substitute soba (buckwheat noodles) if you like. Drain and place in iced water to stop cooking. Drain noodles in colandar or strainer. Coat noodles with a tablespoon of canola oil to keep them from sticking.
- Crack eggs into a small bowl and whisk until light yellow. Fry eggs, omelette style in an oiled saute pan over medium heat. Turning when eggs are set. Remove from pan and cool. Slice into thin strips and set aside.
- Slice cooked boiled ham into thin strips. You could also add shredded cooked chicken. Set aside.
- Slice char siu pork into thin strips and set aside.
- Peel and slice cucumber lengthwise. Remove seeds with a spoon. Slice cucumber into matchstick sized pieces and set aside.
- Slice kamaboko (Japanese fishcake), into thin strips about an inch long and 1/8 inch thick and set aside. You can substitute crab or surimi (imitation crab sticks) instead.
- Clean scallions (green onions). Cut off the roots and the tips of the leaves if they are brown. Chop the scallions, including the green leaves into 1/4 inch pieces and set aside.
- Additional ingredients you can add would be thinly sliced celery, diced tofu, gobo-ten, grated carrots, jicama, zucchini, or cooked shrimp.
- If sesame seeds are not already toasted, toast sesame seeds in a small dry saute pan over medium heat, shaking pot to stir the seeds until you hear them pop and they become aromatic. Remove from heat and place seeds in a bowl to cool. Be careful not to overcook them, they burn easily.
- In a jar with a tight lid (glass jars are better), combine the rice vinegar, toasted sesame seeds, sugar, soy sauce, salt, and canola oil. Cover with lid and shake until well blended. Shake again before serving. You can double the dressing if you like.
- To assemble salad, Take about 1/3 cup of noodles and make a bundle. Place bundles of noodles on the lettuce. Sprinkle chopped ham, over the noodles followed by char siu pork, cucumber, egg omelette strips, kamaboko, and any additional topping of your choice, and then top with green onions. If you prefer you can put the lettuce and somen in individual plates and keep the toppings in separate containers. Each person can choose which toppings they want.
- Immediately before serving, shake jar of dressing and pour over salad.

- Boil 1 package somen noodles. Shred 1 head lettuce. Slice thinly: ham, kamaboko, fried eggs, green onions, parsley. Sauce: Mix the above ingredients together, add sauce, mix, and serve.
SOMEN SALAD
Steps:
- Heat medium frying pan, preferably non-stick, over high heat. Lightly coat bottom and sides with 1 T oil. Add eggs, reduce heat to low. Cover and cook egg until set. Turn egg onto cutting surface. Cut into thin strips. Cook two bundles somen in 3 quarts boiling water uncovered for 3 minutes. Drain, rinse with cold water, drain. Mix rice vinegar, soy sauce, ginger juice and remaining oil until blended. Combine somen, eggs, shrimp, green onions and rice vinegar mixture in bowl; toss well. Cover and refrigerate 1 hour for flavors to blend.
SOMEN NOODLE SALAD WITH SESAME DRESSING

- To make dressing, place the sesame seeds in a mortar and pestle and grind until fine and moist. Combine the soy sauce, rice vinegar, sugar, ginger, dashi granules and 1/2 cup water in a small saucepan and bring to the boil over high heat. Reduce the heat to medium and simmer, stirring, for 2 minutes or until the dashi granules have dissolved. Remove from the heat, cool.
- Gradually combine with the ground sesame seeds, stirring to form a thick dressing.
- Cook the noodles in a large saucepan of boiling water for 2 minutes or until tender. Drain, rinse under cold water and cool completely. Cut into 10cm lengths using scissors.
- Place the snow peas in a large shallow bowl with the daikon, carrot, green onion, spinach leaves and noodles. Add the dressing and toss well to combine. Place in the fridge until ready to serve. Just before serving, sprinkle the top with toasted sesame seeds.
