HOW TO MAKE CRISPY BAKED BUFFALO CHICKEN HOT WINGS
Spicy with a kick of vinegar, these crispy baked buffalo chicken hot wings will leave the plate in no time. To serve, make sure you have lots of blue cheese dip (store-bought or the dip below) and celery. Easily double, triple, or quadruple for a crowd.

Steps:
- Heat oven to 400 degrees F. Set a wire rack inside a large rimmed baking sheet.
- Season wings with salt. Spread out in one layer on wire rack. Bake until cooked through and crispy, 35 to 45 minutes.
- Melt butter in a saucepan over medium heat. Remove saucepan from the heat, and then stir in hot sauce and garlic powder. Season with salt, to taste.
- Toss the baked chicken wings in the sauce and serve with celery and blue cheese dip.
- Stir mayonnaise, sour cream, blue cheese, and parsley together in a bowl. Season with salt and pepper, to taste.

CLASSIC HOT WINGS

- Preheat the oven to 325 degrees F. Heat 3 inches of canola oil in a heavy pot to 375 degrees F.
- Add half the chicken wing parts to the oil and fry them until they're golden brown and fully cooked, 5 to 7 minutes. Remove and drain on paper towels. Repeat with the other half of the wing parts. In a saucepan, heat the cayenne sauce and butter over medium-low heat. Add the Worcestershire and hot sauce. Let it bubble up, and then turn off the heat. Place the wings in an ovenproof dish and pour the hot sauce over the top. Toss to coat, and then bake in the oven for 15 minutes.
- Serve with blue cheese dip, celery sticks... and your favorite cold, fizzy beverage.

- Cut wings into 3 sections; discard wing tip section. In a deep cast-iron or electric skillet, heat oil to 350°. Fry chicken wings, a few at a time, about 9 minutes or until golden. - Heat oil in a deep-fryer or large saucepan to 400 degrees F (200 degrees C).
- Place flour in a bowl. Whisk eggs, 1 bottle hot sauce, and water in another bowl until smooth. Season chicken with garlic powder, salt, and pepper.
- Dip each wing into the egg mixture, then toss with flour mixture to coat. Gently shake off excess flour and set aside. Repeat with remaining chicken.
- Fry chicken in the hot oil in batches until chicken is no longer pink at the bone and skin is golden brown, about 5 minutes. Drain in a large bowl lined with paper towels, then season with salt.
- Heat butter and remaining bottle hot sauce in a saucepan over medium-high heat until butter is melted. Whisk until smooth. Remove paper towels from bowl and pour butter sauce over chicken; toss to coat.

SOME LIKE IT HOT WINGS
I use to work at this little restaurant in the mid west that made the most delicious hot sauce for wings. Here is my version. Please treat the insanity sauce as you would a hot pepper. This sauce is absolutly delicous in wraps with chicken tenders.

- Preheat the oil/shortening to 375°F Add wings to oil being careful not to crowd the pan. stir carefully to make sure the wings do stick together periodically. Cook for 7-10 minutes depending on the size of the wings. Use your Judgment.
- In a sauce pan melt the butter with Frank's hot sauce.
- Stirring constantly to make sure that the butter doesn't separate from the sauce add black pepper and Dave's insanity sauce.
- Drain wings in metal colander if you have one and toss with sauce in a zip lock bag or in a large bowl.
- Serve with your favorite dressing.
