SOLO SPAM AND PINEAPPLE CASSEROLE
This solo meal can be easily expanded, and because it uses transportable ingredients, this one dish meal can be made in a rustic setting or even in a dutch oven over campfire coals. An adventuresome cook might also consider using a crockpot.

Steps:
- Slice a washed, but not peeled potato, and mix thoroughly with diced onion and olive oil in bottom of a one and a half casserole dish.
- Follow with a layer of sliced Spam.
- Top with the pineapple.
- Mix mustard, pineapple juice and pepper in a small bowl and pour over the other ingredients.
- Cover, bake in a 400 degree (f) oven for 50 minutes or until the pototo is tender.

This side dish recipe is sooooo easy! Just 5 ingredients. It goes great with ham and pork. I've even made it on Thanksgiving.

- Heat the olive oil in a medium sized frying pan, add the onions and saute until nearly transparent.
- push the onions to one side of the pan and add thinly sliced Spam.
- Fry Spam on one side for 2 minutes, flip, and lay the cheese on top and cook until the cheese melts.
- Toast the bread, and spread the mustard on one slice.
- Add the Spam/ cheese, pile the onions on top and close the sandwich.
- Serve with potato chips, a pickle and beer.

I made this when all the kids were little and we had to stretch everything. It is good and a can of Spam goes far.

- Slice Spam about 1/2 inch thick.
- Mix stuffing mix according to package with the exception of not cooking it.
- Drain pineapple slices.
- Now grease a loaf type baking dish and start with one slice of spam (stacking on edge), then one slice of pineapple slice (on edge), then a large spoon of stuffing.
- Repeat until all is used and the dish is full.
- Bake at 375 degrees F.
- until lightly browned and heated through.
