An easy and light recipe from Barbara Gibbons, 'The Slim Gourmet'. Although I haven't tried this, I'm sure it will appeal to calorie counters as well as those on low-carb diets. Let me know what you think!

2 (12 ounce) packages fresh spinach, chopped or 2 (10 ounce) packages frozen chopped spinach, thawed
2 tablespoons minced onions
1/2 cup nonfat milk
4 slices light cheddar cheese, shredded
4 (4 ounce) sole fillets, fresh or thawed
2 tablespoons lemon juice
salt and pepper
paprika

Steps:

  • Cook fresh spinach in a tightly covered saucepan with no liquid added.
  • (If using frozen spinach, drain thoroughly but do not cook).
  • Combine spinach with onion and spread in a shallow nonstick baking pan coated with cooking spray.
  • Add milk, sprinkle with cheese, and arrange fillets over cheese in a single layer.
  • Sprinkle dish with lemon juice, salt, pepper, and paprika.
  • Cover pan tightly with foil.
  • Bake in a preheated 400 degree oven for 20 minutes.

EASY CHEESY SOLE FLORENTINE



Easy Cheesy Sole Florentine image

I made this for my Mum last night, and it was awesome. My husband who is not a big fish fan really enjoyed it as well. I used a packaged rice pilaf but you could probably use long grain and wild rice, or other flavours that you like with a chicken or vegetable flavour base. You can use any type of white fish fillets, I made it as shown below.

1 cup long grain rice, prepared
2 cups old cheddar cheese, grated
1 lb mushroom, sliced
2 cups Baby Spinach
1 large vidalia onion, diced
8 sole fillets
pepper

Steps:

  • Preheat oven to 375°F.
  • Grease a 9x13-inch glass baking pan.
  • Prepare rice (pilaf, broccoli cheese, long grain and wild or other flavour) according to package directions (butter need not be added) and spread into bottom of baking dish.
  • Distribute 1 cup of grated cheese over the rice.
  • Saute sliced mushrooms about 10 minutes or until just cooked and put in single layer over grated cheese in casserole.
  • Arrange raw spinach leaves over layer of mushrooms.
  • Saute diced onion in a bit of oil until it begins to soften and sprinkle evenly over spinach.
  • Arrange fish over the onion layer and sprinkle with pepper.
  • Top with remainder of cheese and bake for 40 minutes or until fish flakes easily with a fork.

Really Easy Baked Sole Fish With Mozzarella and Tomato image

If you are tired of the same baked fish recipe, then I think you will really enjoyed this..it's easy to put together and really good! Although the recipe calls for using sole, and that is the only kind of fish I have used for this recipe in the past, I imagine that you probably could substitute about any kind of thicker fillets for the sole, I am thinking flounder would be a good choice also.

2 lbs thick fresh sole fillets
1 1/2 cups mozzarella cheese, shredded
1 large tomatoes (extra-large)
1/2-1 teaspoon dried oregano
salt and pepper
garlic powder

Steps:

  • Set oven to 375 degrees.
  • Butter (do not use cooking spray) a 13 x 9-inch baking dish.
  • Rinse fish fillets with cold water and pat dry with a paper towel.
  • Arrange fillets in a single layer in dish.
  • Sprinkle with shredded mozza cheese.
  • Top with tomato slices.
  • Sprinkle seasonings over top.
  • Bake for 15 minutes, or until fish is "flakey" and cooked (do not over bake fis).
  • Serve immediately.

This casserole can be changed by varying the herbs used to flavor it.

3 cups soft bread cubes
1 onion, minced
1 pinch salt
1 pinch dried basil
1 pinch dried thyme
1 pinch ground savory
1 pinch dried marjoram
2 (10.75 ounce) cans condensed cream of mushroom soup
½ cup butter
½ cup milk
1 ½ pounds haddock fillets
1 cup crushed buttery round crackers

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease one 9x13 inch baking dish.
  • Mix the diced bread, onion, salt and herbs together.
  • Combine the soup with milk, stirring until creamy.
  • In the bottom of the prepared dish, layer half of the fish, half of the bread mixture and half of the soup mixture. Repeat layers and cover top with cracker crumbs and dot with butter.
  • Bake uncovered in a preheated oven for 1 hour or until fish is flaky with a fork.
