I've been looking for a soft all whole wheat bread, and I finally found it! This is in an Amish cookbook that I have, and I am writing it as it is written. I mix it with my KitchenAid. :) This is our sandwich bread that we have all the time on hand and the recipe can easily be cut into 1/3 to make just one loaf. :) 10/8/07 Corrections made to make bigger loaves. I usually use recipe #185778 to have a great rise.

Number Of Ingredients 9

3 cups warm water (110-115 degrees)
1 teaspoon sugar
2 tablespoons yeast
3 eggs
3/4 cup honey
3/4 cup Crisco (I use butter flavored)
2 tablespoons salt
11 -12 cups whole wheat flour
4 tablespoons wheat gluten (optional)

Steps:

  • Mix water with yeast and sugar and let sit until foamy (about 10 minutes). In the meanwhile, put the 3 eggs (in the shell) in a bowl of hot water (to bring the eggs to room temperature).
  • Put flour, salt, and gluten in bowl.
  • Pour in yeast mixture and stir until combined. Add in honey, eggs, and crisco until combined, scraping sides. (I usually use an egg beater for this).
  • Add more wheat flour and knead until smooth.
  • Let set in warm place for about an hour until double in size.
  • Divide into 3 loaves. Let rise again in warm place until doubled (about 1-1/2 hours).
  • Bake as regular bread (I bake about 35 minutes at 375 or until the interior of the bread is 190 degrees using electric thermometer if you have one).
  • Enjoy!

1 cup lukewarm water
2 tablespoons lukewarm water
2 tablespoons butter
3 tablespoons honey
1 cup flour
2 cups whole wheat flour
1 teaspoon salt
2 teaspoons yeast

Steps:

  • Combine all ingredients in a breadmaker, or use a stand mixer until a soft and springy dough forms.
  • Cover and let rise for 1 hour.
  • Shape and place in greased loaf pan.
  • Cover and let rise another hour.
  • Bake in preheated 375 degree oven for 38 minutes. Makes one 1.5 lb loaf.

This recipe is adapted from the buttery bread machine rolls recipe (recipe #65340) with a few small personal touches. I decided to try adding replace the flour with a percentage of wheat germ for some fiber and thankfully it still turned out very soft and tasty! I also added vanilla essence for a mild fragrance!

1 cup warm milk (70 to 80 degrees F.)
2 teaspoons vanilla essence
1/2 cup butter or 1/2 cup margarine, softened
1/4 cup sugar
2 eggs
1 1/2 teaspoons salt
3 1/2 cups all-purpose flour
1/2 cup wheat germ
2 1/4 teaspoons quick-rising yeast

Steps:

  • In bread machine pan, put in the following order: butter, warm milk, vanilla essence, eggs, sugar, flour, salt and wheat germ. And lastly yeast.
  • Select dough setting.
  • When cycle is completed, turn dough onto a lightly floured surface.
  • Shape the dough into about 16 balls and placed them into 2 greased loaf pans, but you can also shape them into buns.
  • Cover the pan (and dough) with saran wrap and leave it in a warm, draft-free place to rise for about an hour - the dough should have expanded to at least double it's original size.
  • Bake at 350 degrees for 13-16 minutes or until golden brown.

3 cups wheat flour
1 1/2 teaspoons salt
1/3 cup agave nectar or 1/3 cup honey
1 tablespoon dry buttermilk
1 1/2 tablespoons shortening
1 1/2 teaspoons active dry yeast
3 tablespoons vital wheat gluten
cinnamon (to taste)

Steps:

  • Pour warm water into bread machine pan with agave/honey and yeast. Let rest until froth forms (~8 minutes).
  • Mix dry ingredients separately. Addition of cinnamon is added for its natural preservative nature and not for taste. More shakes will add a different taste to the bread.
  • After froth forms add dry ingredients to bread machine and set on basic (white bread) setting on light crust.

I was looking for an easy but soft 100% whole wheat bread and found this on the internet. I thought it needed to be in recipezaar. This bread uses gluten and I have not tried it without. It is a very large loaf. You can double the recipe and make three 9x5 inch loaves or do one single large loaf. The bread comes out so soft and delicious. It is extremely easy to make with little effort. I use a mixer but there are directions for hand, mixer, or bread machine.

1 1/2 cups lukewarm water
3 tablespoons coconut oil or 3 tablespoons olive oil
2 tablespoons molasses or 2 tablespoons maple syrup
3 1/2 cups whole wheat flour
1 tablespoon vital wheat gluten

Steps:

  • To prepare the dough:.
  • (Hand method) Combine all ingredients and mix until you have a shaggy dough. The dough will seem wet. Let the dough rest, covered, for 20 minutes, then knead until smooth and elastic, about 10 minutes. Allow dough to rise, covered, for 1-2 hours or until puffy and nearly doubled in bulk.
  • (Mixer method) In bowl of a stand mixer fitted with the dough hook, combine all ingredients and mix them until you have a shaggy dough. The dough will seem wet. Let the dough rest for 20 minutes, then knead by machine until fairly smooth, about 5-10 minutes. Allow dough to rise, covered, for 1-2 hours or until puffy and nearly doubled in bulk.
  • (Bread machine method) Place all ingredients in bread machine and set to dough cycle.
  • To shape loaves:.
  • After the dough has risen, gently deflate, shape into a log, and place in a lightly greased 9x5 bread pan or 2 small pans. Cover with towel or lightly greased plastic wrap and allow to rise in warm place for about 30 mins to 1 hour, until its crowned about 2 inches over the rim of the pan. Preheat oven to 350 about halfway through the rising time.
  • To bake the loaves:.
  • If desired, brush top of loaf with milk or egg white and sprinkle with oatmeal, poppy seeds, etc. Bake bread in preheated 350 oven for 45 minutes or until it turns a deep brown and sounds hollow when tapped on the bottom.

I changed this from a basic whole wheat bread recipe I had. I hate hard crusts and this bread has a soft crust, stays fresh and tastes great. I've blogged about it and a lot of people have raved about it.

Number Of Ingredients 7

3 -4 cups whole wheat bread flour
1/2 cup vital wheat gluten
1 teaspoon salt
3 tablespoons olive oil
4 tablespoons honey
1 1/2 cups warm water
1 (1/4 ounce) package yeast or 4 teaspoons yeast

Steps:

  • Measure out the first three ingredients into a bowl, set aside.
  • Mix in a bowl the water (110-120 degrees), olive oil, honey and yeast.
  • Slowly mix in the flour (I use my Kitchen Aid mixer). Dough should be not sticking to the sides of the bowl. I usually end up using 3 1/2 cups of flour. I let my mixer knead the dough for 7-8 minutes. If you knead by hand, knead for 10-12 minutes. Wheat bread needs a longer knead time.
  • Place in oiled bowl in warm place, covered by a towel or plastic wrap,for about an hour or until about double in size.
  • Punch down, turn out of bowl. I make the dough into a ball and use a serrated knife to cut in half. Shape each half into a rectangular roll and place in loaf pans.
  • Cover and let rise about 45 minutes. Bake at 375 degrees for 25-30 minutes. Bread is done when it sounds hollow when tapped.

Light, soft, tasty, and healthy! Just made this bread and it is so good - thin crust and lots of soft bread. I wanted to keep a record of the recipe, so this is my first post!

Number Of Ingredients 10

1 1/4 cups whole milk, room temperature
3 tablespoons melted butter (yes, I used real butter)
1 teaspoon salt
2 tablespoons honey
1 teaspoon molasses (optional)
1 tablespoon brown sugar
1 1/2 cups whole wheat flour
1 1/2 cups all-purpose flour
1/2 cup wheat germ, room temperature if you keep yours in the fridge
1 tablespoon yeast

Steps:

  • Place all ingredients in the order listed into a bread machine. Use the dough setting and let the machine do all the kneading. My machine mixes everything, lets the dough rest, then rekneads, then rises. Takes about an hour and a half.
  • Once the machine beeps, punch the dough down and remove to a lightly floured surface. I lightly kneaded and then shaped into a loaf. Place in a greased bread pan and put someplace to rise for an hour. I used my oven and just didn't turn it on. Removed from the oven after an hour.
  • Heat oven to 325 and bake in the center of oven for 30 minutes.
  • Remove from oven and rub a tablespoon of butter all over top crust. Allow to initially cool by placing pan on a rack. Then turn the pan on its side and the loaf will come right out (as long as you thoroughly greased the pan that is).
  • I was not able to let the loaf fully cool -- as I must have the end piece while still warm :) My bread knife sliced it perfect and it held its shape anyways.

A really nice light wheat bread, great flavor. If you prefer to make only one loaf just cut the ingredients in half. YUM!

2 cup(s) warm water (110-115 degrees)
2 tablespoon(s) whole milk
4 tablespoon(s) oil, ( i use canola)
4 tablespoon(s) honey
4 tablespoon(s) brown sugar
2 teaspoon(s) salt
3 cup(s) whole wheat flour ( i use white whole wheat)
3 cup(s) all purpose flour
5 teaspoon(s) instant active dry yeast (see note below)
8 teaspoon(s) vital wheat gluten (optional)

Steps:

  • combine the first 6 ingredients in a large bowl; stir and set aside
  • in another large bowl, add the flours and mix until will combined
  • Add the flour mixture to the yeast mixture stir and turn out onto a lightly floured bread, dough is slightly sticky so you may have to dust occasionally with extra flour ( I use about 1/2 cup)
  • Knead until dough is smooth and elastic, about 10 minutes. Place dough into a well greased bowl turn once to grease the top. Cover and let rise in a warm place for 40-60 minutes or until doubled.
  • Punch dough down, turn onto lightly floured board and knead lightly for about two minutes until smooth, then form into loaves. place into greased loaf pans cover , let rise until almost doubled in size about 40 minutes.
  • Bake in a preheated 350 degree oven. I place a piece of aluminum foil over the top the after 20 minutes to prevent over browning, don't cover tightly just lay it on top Bake 30-35 minutes.
  • **** You can use regular yeast, I have not use it for this recipe but if I did I would proof the yeast in the warm water for 5-10 minutes then add the rest of the wet ingredients. You do not proof the instant yeast. also the vital wheat gluten is just something I use on occasion and it is totally optional, I think it makes a lighter loaf. You can also use regular wheat flour but I think the white wheat makes a lighter loaf. I have found that most wheat breads I make with regular wheat flour are somewhat tough in texture.
