SOFT SUGAR DROP COOKIES

This is the easiest sugar cookie I've ever made...just mix and drop! I have to give thanks to my husband's grandmother for her recipe! Whenever I make them, everyone asks for the recipe, and I'm happy to share!

1 1/2 c sugar
1/2 c shortening
1/2 c butter
2 eggs, beaten
1 c buttermilk or *sour milk
3 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 tsp lemon extract
1 tsp pure vanilla extract
3 1/2 c flour, added a little at a time

Steps:

  • 1. Heat oven to 375'F.
  • 2. Combine all ingredients including 2 cups of the flour; mix well. If the dough is not stiff enough, add flour in small amounts until thick enough to hold it's shape when you drop them onto the cookie sheet. (I used all of the flour.)
  • 3. Before baking, I place a scant spoonful of my hubby's favorite jam onto the top of some, leave some plain, then sprinkle them all with a little sugar.
  • 4. Bake 8-10 minutes...no more than 10 minutes; watch carefully.
  • 5. *To make sour milk just put 1 Tbsp. of vinegar into a measuring cup, add enough milk to measure 1 cup; stir. Voila! Sour milk.

1/3 cup corn oil or 1/3 cup canola oil
1 cup sugar
1 tablespoon vanilla
1 egg
2 1/2 cups flour
3/4 teaspoon salt
1/2 teaspoon baking soda
1/4 cup milk
1/8 cup sugar or 1/8 cup colored crystal sugar

Steps:

  • Preheat oven to 400. Lightly grease cookie sheets.
  • In a large mixing bowl, beat together oil, sugar and vanilla until crumbly. Beat in egg.
  • Gradually add in flour, salt, baking soda, and milk. Beat until well-mixed.
  • Drop by Tbsp on to lightly greased cookie sheets 2" apart.
  • Slightly flatten each with a flat-bottom glass dipped in sugar (or colored sugar).
  • Bake at 400 for 6-8 minutes or until edges barely begin to brown.
