SOFT ORANGE MARMALADE COOKIES

My family likes a soft cookie, and this recipe is one of their favorites. The frosting is so pretty and the marmalade is flavorful, plus it keeps the cookies nice and tender. -Margaret Peterson, Forest City, Iowa

1/2 cup shortening
1 cup sugar
2 large eggs
1 cup sour cream
1/2 cup orange marmalade
4 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
FROSTING:
1/2 cup butter, softened
1/4 cup orange marmalade
3 cups confectioners' sugar

Steps:

  • In a large bowl, cream shortening and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Combine sour cream and orange marmalade; set aside. Combine the flour, baking powder, baking soda and salt; add to creamed mixture alternately with sour cream mixture and mix well., Drop by tablespoonfuls 2 in. apart onto greased baking sheets. Bake at 375° for 10-12 minutes or until lightly browned. Remove to wire racks to cool completely., For frosting, in a small bowl, combine butter and marmalade. Gradually beat in confectioners' sugar until blended. Frost cookies.

These are so perfect and yummy--my mom makes these every Christmas and every Christmas I help and eat about half the delicious dough raw!! lol These couldn't be easier, either. All the spices mix together to give you the perfect dough. Try these, you won't be disappointed.

3 1/4 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 tablespoons grated orange zest
2 teaspoons ground cinnamon
1 tablespoon ground ginger
1/2 teaspoon ground cloves
1/4 teaspoon ground nutmeg
1 1/2 cups light brown sugar
1 cup unsalted butter or 1 cup margarine
2 tablespoons dark molasses
1 tablespoon water
1 large egg

Steps:

  • Mix all dry ingredients together and cut in the butter.
  • Add the wet ingredients. Knead a few seconds.
  • Roll out on a lightly floured surface pretty thick, about 1/4 inch. Cut out cookies and bake at 350 degrees F for 12-14 minutes.
  • *NOTE: Cookies should be baked but still soft and chewy, not crisp. Serving size is approximate.

Soft and Chewy Vanilla-Orange Cranberry Cookies image

These cookies remain beautifully soft for days, and their flavor is outstanding: bold orange and cranberry, complemented by a hint of aromatic vanilla.

1 2 cups dried cranberries; or a mixture of dried cranberries and toasted chopped walnuts or pecans

Steps:

  • Preheat the oven to 425°F. Lightly grease two baking sheets, or line them with parchment.
  • In a large bowl, beat together the butter, sugar, orange peel, vanilla, baking powder, and salt.
  • Beat in the egg. The mixture may look slightly curdled; that's OK.
  • Add the flour and dried cranberries (or cranberries and nuts), stirring until well combined.
  • Drop the dough by heaping teaspoonfuls onto the baking sheets, leaving about 1 1/2" between them. A level teaspoon cookie scoop works very well here; dough balls will be about 1 1/4" in diameter. Using the flat bottom of a glass dipped in sugar, flatten the cookies slightly, to a scant 1/2" thick.
  • Bake the cookies for 6 to 7 minutes, until they're barely set, and a light golden brown around the edges. Don't over-bake; if you do, the cookies will be hard, not soft and chewy. Gently lift one of the cookies and look at the bottom; if you've used parchment, it shouldn't be brown. If you're baking on a dark cookie sheet without parchment, it should be light (not dark) brown.
  • Remove the cookies from the oven, and cool them right on the pan. If you need a pan to bake the remainder of the cookies, give the cookies about 5 minutes to set before transferring them to a rack to cool completely.Yield: about 4 dozen cookies.

2/3 c shortening, butter flavor
3/4 c sugar
1 egg
1/2 c orange juice
2 Tbsp grated orange rind
2 c flour
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
GLAZE
2 1/2 Tbsp butter, softened
1 1/2 c confectioners' sugar
1 1/2 Tbsp orange juice

Steps:

  • 1. Mix all the glaze ingredients well and set aside.
  • 2. Mix shortening, sugar, and egg well and then add the dry ingredients and mix well.
  • 3. Drop by tsp. onto oookie sheets and bake 8-10 minutes till LIGHT brown.
  • 4. Cool cookies and then glaze.
