This soba noodle salad is a very simple Asian side dish and flavorful! It can be ready in about 15 minutes.

1 tablespoon rice wine vinegar
1 teaspoon minced garlic
1 teaspoon grated ginger
3 1/2 teaspoons low sodium soy sauce
1 teaspoon sesame oil
1 1/4 teaspoons brown sugar
3/4 teaspoon honey
(OPTIONAL) 1/2 tablespoon lime zest
12 oz buckwheat soba noodle ((cook according to the product packaging))
3/4 cup julienne red bell pepper
1/4 cup chopped cucumber
1/4 cup shredded purple cabbage
1/4 cup shredded carrot
2-3 tablespoons edamame
1/4 cup chopped cilantro
2-3 tablespoons crush peanuts (roasted and unsalted)
optional: 1 tablespoon chopped green onions

Steps:

  • In a medium bowl, whisk in rice wine vinegar, garlic, ginger, low sodium soy sauce, brown sugar, sesame oil, honey plus the optional lime zest. Set aside.
  • In a large salad bowl, add noodle, bell pepper, edamame, cucumber, green onions, cilantro, and carrots. Pour in the dressing, stir until well combined.
  • Serve immediately with crushed peanuts or put in the fridge for about 15-30 minutes to serve cold.

This easy Soba Noodles Recipe is healthy and simple. Loaded with tender vegetables, clean addicting flavor and succulent texture. Keep it vegan or add your favorite protein.

8-9 oz. soba noodles
1 tablespoon high heat oil (such as peanut oil, coconut oil or avocado oil)
2 cups napa cabbage, shredded
5-6 shiitake mushrooms, sliced thin
1 large carrot cut in thin strips
4 cloves garlic, roughly chopped
1-inch knob of ginger, minced
1 bell pepper, sliced in thin strips
1/2 bunch green onions, chopped fine- separating the white from the green stems
3 tablespoons sesame seeds, toasted
black sesame seeds for garnish (optional)
2 tablespoons toasted sesame oil
2 tablespoons rice vinegar
1 tablespoon maple syrup
2 tablespoons soy sauce, Braggs Liquid Aminos, or Smoked Shoyu

Steps:

  • Bring water to a boil and cook the soba noodles according to the package, (just slightly on the al dente side). Drain in cool water to remove gluten and starchiness. (This helps the texture and prevents the soba noodles from getting gummy and gluey). Set aside.
  • Stir together the sauce ingredients: sesame oil, rice vinegar, maple syrup, soy sauce.
  • Heat oil over medium-high heat in a wok or skillet. Add napa cabbage, shiitake mushrooms, carrot strips, and a sprinkle of salt. Stir constantly for 2-3 minutes. Stir in garlic and ginger for 1-2 minutes. Add bell pepper and white part of the green onion stir-frying for 2-3 minutes until just tender but still crisp.
  • Add the soba noodles and sauce. Toss together 1-2 minutes letting it thoroughly heat through.
  • Sprinkle with sesame seeds and green onions. Add black sesame seeds for garnish if desired.

1/4 cup tamari soy sauce
2 tablespoons fish sauce
3 tablespoons sesame oil
1 tablespoon chili oil
2 cloves minced garlic
1 teaspoon grated ginger
1 lime, juiced
1 tablespoon orange juice
3 tablespoons sake
1 lb dried soba noodles
3 tablespoons peanut oil
8 ounces shitake mushrooms, stemmed and sliced
salt, pepper
1 tablespoon sake
3 oranges, peeled and segmented
1 cucumber, cut in matchsticks
1/4 cup chopped cilantro
1/4 cup toated sesame seeds
1 bunch scallion, sliced

Steps:

  • mix all ingredients for salad dressing and let it sit for 30 minutes.
  • meanwhile in a large pot of boiling water cook noodles about 4 minutes until tender, drain and rinse in cold water.
  • add 2 tbsp of dressing.
  • in skillet add oil and saute mushrooms until cooked, season with salt& pepper and cool.
  • in a large bowl add noodles, dressing, mushrooms, etc stirring to mix well.
  • garnish with extra sesame seeds and scallions.

1/4 cup rice-wine vinegar
1 teaspoon grated peeled fresh ginger
2 teaspoons tamari or low-sodium soy sauce
1/4 teaspoon fish sauce
2 teaspoons freshly squeezed lime juice
2 pinches cayenne pepper
4 tablespoons safflower oil
1 teaspoon toasted sesame oil
Coarse salt and freshly ground pepper
12 ounces soba noodles (not 100 percent soba)
1 green mango, peeled and julienned
1 large red pepper, stemmed, seeded, cored, and julienned
1 medium carrot, julienned
3 scallions, thinly sliced on the bias
1/4 cup thinly sliced fresh mint
1/4 cup thinly sliced fresh basil
Lime wedges, for serving

Steps:

  • In a small bowl, mix together vinegar, ginger, tamari, fish sauce, lime juice, and cayenne pepper. Slowly whisk in oils until well combined; season with salt and pepper. Set dressing aside.
  • Fill a medium pot of water and bring to a boil over high heat. Add soba noodles and cook according to the package directions, until al dente, 4 to 5 minutes. Drain and rinse with cold water.
  • Transfer noodles to a large bowl and add mango, red pepper, carrot, scallions, mint, and basil. Season with salt and pepper; toss to combine.
  • Drizzle with dressing; you may not need to use all the dressing. Serve salad with lime wedges.
