2 cups flour
1 tablespoon dry onion soup mix
1 1/2 teaspoons sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt

Steps:

  • Measure ingredient in medium bowl, and store in an airtight container.
  • add directions on a label attached to jar.
  • INSTRUCTIONS:.
  • Pour mix into large mixing bowl -- combine well.make a well in the center.
  • beat together 1 egg, 1/3 cup oil, 1 cup shredded cheddar cheese, and 1 cup milk.combine with mix.
  • stir just until moistened.
  • fill 12 greased muffin cups 3/4 full.
  • bake at 400* for 15-20 minutes.
  • cool 5 minutes, then remove from muffin pans.

This makes a nice gift in a jar, but I like to mix it up in a zipper-bag to take out in the RV. I do this with other baking recipes also, so we don't have to carry large amounts of flour, sugar, etc. Just add the wet ingredients and bake.

1 3/4 cup(s) all purpose flour
2 tablespoon(s) granulated sugar
3 teaspoon(s) baking powder
1/2 teaspoon(s) baking soda
1 teaspoon(s) ground cinnamon
1/2 teaspoon(s) ground nutmeg
1/4 teaspoon(s) ground ginger
1/4 teaspoon(s) ground cloves
1/2 teaspoon(s) salt
4 tablespoon(s) powdered buttermilk

Steps:

  • Combine all the ingredients in a medium bowl.
  • Place in a pretty airtight jar, or a large zipper-type freezer bag. Seal.
  • Attach these instructions to the gift tag: Spicy Muffins Makes 1 dozen Contents of jar (or bag) 1/4 cup butter or margarine, melted 1 egg 1 teaspoon vanilla extract 1 cup water Heat the oven to 400 degrees F. Grease 12 muffin tins. In a large bowl, combine the muffin mix with the butter, egg, vanilla extract and water. Stir the mixture until the ingredients are blended. Do not over-mix. The batter will be lumpy. Fill muffin tins 2/3 full, and bake for 15 minutes.

300g self-raising flour
2 tsp baking powder
2 tsp ground cinnamon
2 tsp ground mixed spice
100g pecan or walnuts
140g tropical dried fruit medley
100g light muscovado sugar

Steps:

  • Layer all the ingredients in a 1 litre glass or plastic preserving jar in the order the ingredients are listed.
  • Write the following method on a gift label: 'Tip the contents of the jar into a large mixing bowl. Make a well in the centre and add 2 beaten eggs, 300ml/½pt milk and 100g/4oz melted butter. Mix quickly and lightly to a soft batter. Divide between 12 muffin cases. Bake at 190C/fan 170C/gas 5 for 18-20 mins. Use within 4 weeks.' Attach the label and a wooden spoon to the top of the jar with some raffia or coloured ribbon.

Delightful festive spiced muffins, studded with jewel coloured fruit and nuts - just the thing for Christmas morning! I love all types of "mixes" in a jar! Soups, biscuits, spices, cookies and cake mixes etc! However, this muffin mix is my favourite - it makes a wonderful gift, or I make it for us, as it looks so pretty & festive sitting in the kitchen waiting to be baked! Try to use really colourful dried fruits with a good mix of tastes and textures. For those of you who cannot source Mixed Spice, an essential ingredient, I have a recipe posted on Zaar: Recipe #266688. This muffin mix is always popular as a gift, and I do try to find unusual shaped jars and hand-made paper or card for the baking instructions. A wooden spoon tied around the neck of the jar is another winning idea - and don't forget the Holly sprig!

  • Write the following method on a gift label:.

8 cups all-purpose flour
1 cup sugar
1/3 cup baking powder
1 tablespoon salt
1 cup shortening
ADDITIONAL INGREDIENTS:
1 egg
1 cup milk
FOR CHEDDAR MUFFINS:
3/4 cup shredded cheddar cheese
1/4 cup crumbled cooked bacon
2 tablespoons minced chives
FOR CINNAMON-RAISIN MUFFINS:
1/2 cup raisins
1/4 teaspoon ground cinnamon

Steps:

  • In a large bowl, combine the flour, sugar, baking powder and salt. Cut in shortening until the mixture resembles coarse crumbs. Store in airtight containers in a cool, dry place or in the freezer for up to 6 months. Yield: 4 batches (10 cups). , To prepare plain muffins: Place 2-1/2 cups muffin mix in a bowl. Whisk egg and milk; stir into dry ingredients just until moistened. Fill greased or paper-lined muffin cups two-thirds full. Bake at 425° for 15-20 minutes or until a toothpick comes out clean. Let stand for 5 minutes before removing to a wire rack. , To prepare cheddar muffins: In a bowl, combine 2-1/2 cups muffin mix, cheese, bacon and chives. Whisk egg and milk; stir into cheese mixture just until moistened.
