6 tablespoons white sugar, divided
2 teaspoons ground cinnamon, divided
1 ½ teaspoons salt
1 teaspoon cream of tartar
¾ cup unsalted butter, melted
1 tablespoon apple cider vinegar
1 tablespoon water
5 Granny Smith apples - peeled, cored, and sliced
½ cup white sugar
3 tablespoons all-purpose flour
1 teaspoon ground cinnamon
¼ teaspoon sea salt

Steps:

  • Preheat oven to 425 degrees F (220 degrees C); position rack in the bottom third of oven.
  • Whisk 2 1/2 cups flour, 2 tablespoons sugar, 1 teaspoon cinnamon, 1 1/2 teaspoons salt, and cream of tartar in a large bowl. Drizzle in butter. Stir crust mixture until just combined and crumbly.
  • Transfer 1 1/4 cups of crust mixture into a separate bowl; add the remaining 1/4 cup sugar and 1 teaspoon cinnamon. Knead with your fingertips until well combined but still crumbly. Cover with plastic wrap; freeze crumb topping until ready to use.
  • Pour vinegar and water into the remaining crust mixture. Mix to form a dough; transfer to a lightly floured work surface and knead until smooth. Press dough onto the bottom and sides of a pie plate using a flat-bottomed measuring cup to make the bottom crust. Crimp edges with a lightly floured fork. Freeze until ready to use.
  • Toss apples, 1/2 cup sugar, 3 tablespoons flour, 1 teaspoon cinnamon, and sea salt together in a large bowl. Pile over the bottom crust and cover with the crumb topping.
  • Bake on the bottom rack of the preheated oven until lightly browned, about 20 minutes.
  • Reduce oven temperature to 350 degrees F (174 degrees C). Turn pie and continue baking, covering crust aluminum foil or a pie shield halfway through, until crust is golden brown, about 50 minutes. Cool on a wire rack before slicing, about 1 hour.

3 large egg yolks
3 cups whole milk
2/3 cup sugar
5 tablespoons cornstarch
1/4 teaspoon fine salt
2 tablespoons unsalted butter
2 teaspoons pure vanilla extract
Raspberry Topping:
2 tablespoons cornstarch
10 ounces frozen raspberries
1/3 tablespoon sugar
1 prepared 9-inch graham cracker pie crust
One 15-ounce can peaches, cut into 1/2-inch dice (about 1 cup)
10 snickerdoodle cookies, crumbled

Steps:

  • For the pudding: Put the eggs yolks in a medium bowl. Whisk together the milk, sugar, cornstarch and salt in a medium saucepan, and bring to a low simmer over medium heat, whisking constantly to prevent sticking on the bottom. Once the mixture comes to a simmer, continue whisking until it is just thicker than heavy cream, 3 to 4 minutes. Remove the saucepan from the heat, pour about 1 cup of the mixture into the egg yolks and whisk to combine. Pour this milk-egg mixture back into the milk mixture in the saucepan. Return the saucepan to medium heat, and whisk until very thick, 3 to 4 minutes. (When you drag the whisk through the thickened pudding, the streaks should hold firm for a few seconds.)
  • Whisk the butter and vanilla into the pudding, and transfer it to a large bowl to cool. Set the bowl in some ice water and whisk frequently to help the pudding cool faster.
  • For the raspberry topping: While the pudding cools, stir together 2 tablespoons water and the cornstarch in a small bowl. Heat the raspberries and sugar in a medium skillet over medium heat, stirring occasionally, until the raspberries thaw and break down and the sugar dissolves completely, 3 to 4 minutes. Stir in the cornstarch mixture, and bring to a simmer, stirring constantly; continue cooking and stirring until the mixture thickens enough to coat the back of a spoon, 1 to 2 minutes. Remove the skillet from the heat, and let the mixture cool completely.
  • Build the pie: Spread 1/2 the cooled pudding into an even layer in the pie crust. Scatter the peaches over the pudding, then the cookies over the peaches. Finish with an even layer of the remaining pudding. Cover with a piece of plastic wrap, and refrigerate for 1 hour. Spread the raspberry topping over the pudding. (Stir the topping first to smooth out if needed.) Refrigerate the pie until the pudding is completely set, about 2 hours. Slice and serve.

4 tablespoons (1/2 stick) unsalted butter, room temperature, plus more for pan
1 teaspoon ground cinnamon
1/2 cup plus 1 tablespoon sugar, divided
3/4 cup all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon kosher salt
1 large egg yolk
1/2 teaspoon vanilla extract
For the filling:
4 ounces cream cheese, room temperature
3/4 cup canned pumpkin purée
3/4 cup pure maple syrup, preferably dark
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/4 teaspoon kosher salt
1/2 teaspoon ground cinnamon, plus more for sprinkling
1 tablespoon brandy
1 3/4 teaspoons unflavored gelatin

Steps:

  • Make the crust:
  • Preheat oven to 375°F. Butter pie pan.
  • Whisk cinnamon and 1 Tbsp. sugar in a large bowl. Whisk flour, baking soda, and salt in a medium bowl.
  • Beat 4 Tbsp. butter and remaining 1/2 cup sugar in the bowl of a stand mixer fitted with the paddle attachment on medium-high speed until pale and fluffy, about 3 minutes. Add egg yolk and vanilla and beat until just combined. Reduce speed to low and gradually add flour mixture; beat until just combined.
  • Transfer dough to a work surface, flatten into a disc, then press into cinnamon sugar to coat both sides. Transfer to prepared pan and press evenly into bottom and up sides with a flat measuring cup. Poke holes all over the bottom with a fork, then freeze 15 minutes.
  • Bake crust until lightly golden brown, 10-12 minutes. Let cool completely.
  • Make the filling:
  • Beat cream cheese and pumpkin purée in the bowl of stand mixer fitted with the paddle attachment on high speed until smooth, about 3 minutes. Add maple syrup, ginger, nutmeg, salt, and 1/2 tsp. cinnamon and continue to beat until streak-free.
  • Meanwhile, cook brandy, gelatin, and 1/4 cup water in a small saucepan over low heat, stirring constantly, until dissolved. Stir into pumpkin mixture.
  • Using an electric mixer on high speed, beat 1/2 cup cream in a large bowl until stiff peaks form, then fold into pumpkin mixture. Pour filling into crust and smooth surface. Chill at least 6 hours or up to overnight.

  • To make Snickerdoodle layer: Sift together flour, baking powder and salt and set aside. In large bowl, beat together butter, sugar, egg and vanilla until smooth.Stir in the flour mixture until well blended. Spread evenly in prepared pan.

  • To make drizzle: After the bars are completely cool, place the chopped white chocolate into a bowl or zip-lock bag and melt on low power. When it's completely melted, add the pumpkin pie spice and mix. Use a spoon or cut a small corner off the bag and drizzle the melted chocolate over the top of the bars and let it cool and harden.
  • Use the parchment paper to lift the bars out of the pan. Place on a cutting board and cut into bars.

4 ounces cream cheese, room temperature
3/4 cup canned pumpkin purée
3/4 cup pure maple syrup, preferably dark
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/4 teaspoon kosher salt
1/2 teaspoon ground cinnamon, plus more for sprinkling
1 tablespoon brandy
1 3/4 teaspoons unflavored gelatin
1 1/2 cups heavy cream, divided
A 9" pie pan (not deep dish)

Steps:

  • PreparationMake the crust: Preheat oven to 375°F. Butter pie pan.
  • Whisk cinnamon and 1 Tbsp. sugar in a large bowl. Whisk flour, baking soda, and salt in a medium bowl.
  • Beat 4 Tbsp. butter and remaining 1/2 cup sugar in the bowl of a stand mixer fitted with the paddle attachment on medium-high speed until pale and fluffy, about 3 minutes. Add egg yolk and vanilla and beat until just combined. Reduce speed to low and gradually add flour mixture; beat until just combined.
  • Transfer dough to a work surface, flatten into a disc, then press into cinnamon sugar to coat both sides. Transfer to prepared pan and press evenly into bottom and up sides with a flat measuring cup. Poke holes all over the bottom with a fork, then freeze 15 minutes.
  • Bake crust until lightly golden brown, 10-12 minutes. Let cool completely.
  • Make the filling: Beat cream cheese and pumpkin purée in the bowl of stand mixer fitted with the paddle attachment on high speed until smooth, about 3 minutes. Add maple syrup, ginger, nutmeg, salt, and 1/2 tsp. cinnamon and continue to beat until streak-free.
  • Meanwhile, cook brandy, gelatin, and 1/4 cup water in a small saucepan over low heat, stirring constantly, until dissolved. Stir into pumpkin mixture.
  • Using an electric mixer on high speed, beat 1/2 cup cream in a large bowl until stiff peaks form, then fold into pumpkin mixture. Pour filling into crust and smooth surface. Chill at least 6 hours or up to overnight.
  • Before serving, beat remaining 1 cup cream in a large bowl with electric mixer on high speed until soft peaks form. Top pie with whipped cream and sprinkle with cinnamon.
  • Do Ahead Crust can be made up to six hours before filling. Filled pie can be stored in the refrigerator for one day before serving.

2 1/2 cups all-purpose flour
6 tablespoons white sugar, divided
2 teaspoons ground cinnamon, divided
1 1/2 teaspoons salt
1 teaspoon cream of tartar
3/4 cup unsalted butter, melted
1 tablespoon apple cider vinegar
1 tablespoon water
Filling:
5 Granny Smith apples - peeled, cored, and sliced
1/2 cup white sugar
3 tablespoons all-purpose flour
1 teaspoon ground cinnamon
1/4 teaspoon sea salt

Steps:

  • Preheat oven to 425 degrees F (220 degrees C); position rack in the bottom third of oven.
  • Whisk 2 1/2 cups flour, 2 tablespoons sugar, 1 teaspoon cinnamon, 1 1/2 teaspoons salt, and cream of tartar in a large bowl. Drizzle in butter. Stir crust mixture until just combined and crumbly.
  • Transfer 1 1/4 cups of crust mixture into a separate bowl; add the remaining 1/4 cup sugar and 1 teaspoon cinnamon. Knead with your fingertips until well combined but still crumbly. Cover with plastic wrap; freeze crumb topping until ready to use.
  • Pour vinegar and water into the remaining crust mixture. Mix to form a dough; transfer to a lightly floured work surface and knead until smooth. Press dough onto the bottom and sides of a pie plate using a flat-bottomed measuring cup to make the bottom crust. Crimp edges with a lightly floured fork. Freeze until ready to use.
  • Toss apples, 1/2 cup sugar, 3 tablespoons flour, 1 teaspoon cinnamon, and sea salt together in a large bowl. Pile over the bottom crust and cover with the crumb topping.
  • Bake on the bottom rack of the preheated oven until lightly browned, about 20 minutes.
  • Reduce oven temperature to 350 degrees F (174 degrees C). Turn pie and continue baking, covering crust aluminum foil or a pie shield halfway through, until crust is golden brown, about 50 minutes. Cool on a wire rack before slicing, about 1 hour.
