BLUE CHEESE, BACON, & ONION SPREAD



Blue Cheese, Bacon, & Onion Spread image

Easy cheese spread with bacon, onion, and blue cheese!

6 slices bacon (chopped)
1/2 cup onion (chopped)
1 clove garlic (minced)
4 ounces cream cheese (softened)
1/2 cup blue cheese (crumbled)
Salt & Pepper to taste
Serving suggestions: vegetables, crackers, toasted baguette slices, pretzels, etc.

Steps:

  • Place bacon, onion, and garlic in a medium skillet over medium-high heat. Cook until bacon is crispy and onion is cooked through. Remove from heat and set aside to cool.
  • In a medium mixing bowl mix together cream cheese, blue cheese, bacon, onion, and garlic until well combined (or place in a food processor and process several times until just combined). Add salt and pepper to taste.
  • Refrigerate until ready to serve.

2 lbs cheddar cheese
1 garlic clove (minced)
1/2 medium onion (minced)
1/4 teaspoon cayenne pepper
1/4 teaspoon Tabasco sauce
salt
stale beer or milk

Steps:

  • Put cheese and garlic through food grinder.
  • Add other seasonings and mix thoroughly.
  • Thin down with stale beer or milk till of desired dipping consistency.
  • Use with chips or if preferred, do not make so thin and stuff celery with it or spread on crackers.

Use brick cream cheese for a spread, or spreadable cream cheese for a dip. Serve with crispy crackers, toast, or bagels.

1 (8 ounce) package cream cheese
1 (8 ounce) container cold pack aged sharp Cheddar cheese (such as MacLaren's Imperial Sharp Cold Pack Cheddar Cheese product)
¼ cup finely chopped red onion
1 tablespoon Worcestershire sauce
2 teaspoons freshly ground black pepper
1 teaspoon paprika
1 dash hot sauce, or to taste

Steps:

  • Place cream cheese and cold pack Cheddar cheese in a microwave-safe bowl; slice cheese into chunks with a knife. Microwave cheese in 30-second intervals on high just until softened, stirring between intervals.
  • Stir red onion, Worcestershire sauce, black pepper, paprika, and hot sauce into cheese mixture with a fork until evenly combined; spoon into an airtight container and refrigerate, 8 hours to overnight.
  • Remove cheese spread from refrigerator about 30 minutes before serving.

1 cup finely shredded Cheddar cheese (4 oz)
1/4 cup chive and onion cream cheese (from 8-oz container)
2 tablespoons milk
2 teaspoons Worcestershire sauce
1 teaspoon Dijon mustard
Fresh chives, chopped, if desired
Apple slices, celery sticks and/or assorted crackers

Steps:

  • In food processor, place all ingredients except chives and apples; process 15 to 20 seconds or until smooth. If desired, dip can be refrigerated 1 hour before serving. Sprinkle with chives. Serve dip with apples, celery and/or crackers. Refrigerate any remaining dip.

1 cup beer
1 pound extra-sharp Cheddar cheese, shredded
2 cloves garlic, minced
1 teaspoon dry mustard powder
½ teaspoon freshly ground black pepper
½ teaspoon cayenne pepper
¼ teaspoon salt
¼ teaspoon hot pepper sauce (such as Tabasco®)
¼ teaspoon Worcestershire sauce
1 pinch cayenne pepper, or to taste

Steps:

  • Pour beer into a bowl and whisk until beer loses its carbonation, about 30 seconds. Set aside.
  • Place shredded cheese into the work bowl of a food processor; add garlic, dry mustard powder, black pepper, 1/2 teaspoon cayenne pepper, salt, hot sauce, Worcestershire sauce, and flat beer.
  • Process until smooth and creamy, pulsing a few times, scraping the sides, and blending for about 2 total minutes. Taste and adjust seasoning. If adding more seasoning, pulse a few times to mix.
  • Transfer cheese spread to a bowl and sprinkle with a pinch of cayenne pepper. Spread tastes best when refrigerated overnight to blend flavors, but it can be served right away if needed.
