We love pork chops and I am always looking for different ways to cook them. After reading many recipes over the last few days, this is what I came up with using ingredients I had on hand. They came out very tasty and the family loved them. That always makes me happy!

4-6 porck chops
1 c flour
4 Tbsp olive oil, extra virgin
1 small onion, chopped
1/2 small bell pepper, chopped
2 Tbsp minced garlic
salt,pepper, garlic powder, onion powder to taste
1 pkg sliced mushrooms
1 box stove top pork stuffing mix
1 3/4 c boiling water or broth
1 can(s) cream of mushroom soup, undiluted
1/2 c buttermilk
1/4 c wine

Steps:

  • 1. In a plate or flat bowl, season the flour with salt, garlic and onion powder and pepper, to taste
  • 2. Heat olive oil in large skillet while dredging the chops in the seasoned flour. Place seasoned chops in hot oil and brown each side. Reduce heat and continue cooking chops for approx 3 - 4 minutes per side. Remove chops from skillet.
  • 3. To the oil in the skillet, add the chopped onions, bell pepper, mushrooms and minced garlic. Saute' until veggies are soft and mushrooms are reduced.
  • 4. Add the wine to the skillet stirring and scraping to deglaze. Heat the water or broth to boil in microwave, then add to skillet. Bring to another boil. Turn off the heat and stir in the Stove Top stuffing mix.
  • 5. Place the stuffing into a prepared 9x13 baking dish and top with the chops.
  • 6. Mix the mushroom soup and buttermilk together. Add black pepper to taste. Pour this gravy over the chops. Cover dish with foil and bake @ 350 degrees for 45 minutes. Remove foil and bake another 15-20 minutes.

1 teaspoon salt
1/2 teaspoon pepper
6 bone-in pork loin chops (3/4-inch thick and 8 ounces each)
2 tablespoons canola oil
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 cup sour cream, divided
2/3 cup chicken broth
1/2 teaspoon ground ginger
1/4 teaspoon dried rosemary, crushed
1 can (2.8 ounces) french-fried onions, divided

Steps:

  • Preheat oven to 350°. In a shallow bowl, combine flour, salt and pepper. Add pork chops, 1 at a time, and turn to coat. , In a large skillet, brown pork chops in oil on both sides. Arrange in a single layer in an ungreased 13x9-in. baking dish. In a large bowl, combine soup, 1/2 cup sour cream, broth, ginger and rosemary; pour over chops. Sprinkle with half the onions. , Cover and bake until tender, 45-50 minutes. Stir remaining sour cream into sauce. Sprinkle with remaining onions. Bake, uncovered, until onions are browned, about 10 minutes longer.

1/4 cup plus 2 tablespoons all-purpose flour
4 cups thinly sliced onions
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 tablespoon chopped garlic
4 bay leaves
3 1/2 cups chicken stock
3/4 cup plus 2 tablespoons water
1 pound smoked sausage or andouille, cut crosswise into 1-inch slices
1 pound russet potatoes, peeled and cut into 1-inch cubes
Steamed white rice or rice pilaf, for serving
8 thinly cut (about 1/2-inch thick) pork chops (about 3 pounds total)
2 teaspoons Essence, recipe follows
1/2 cup olive oil
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Steps:

  • Season both sides of the chops with the Essence.
  • Heat the olive oil in a large, heavy pot or Dutch oven over high heat. Add the pork chops, 3 or 4 at a time, and lightly brown, about 2 minutes per side. Remove the pork chops and transfer to a platter. Set aside.
  • Reduce the heat to medium. Add the flour and stir constantly until the roux is the color of peanut butter, about 4 minutes. Add the onions, salt, and black pepper. Cook, stirring, until the onions are slightly soft, about 5 minutes. Add the garlic, bay leaves, chicken stock, and water and bring to a boil. Return the pork chops to the pot. Reduce the heat to medium-low, cover, and simmer for 45 minutes. Add the smoked sausage and the potatoes. Bring to a boil; reduce the heat to medium-low, and cook, uncovered, stirring occasionally, for 30 minutes. Remove the bay leaves.
  • Remove from the heat. Serve with either steamed white rice or rice pilaf.
  • Combine all ingredients thoroughly.

These chops are definitely food for the soul. And let's face it, there's nothing better than a plate of "reminds me of home" comfort food to warm the body or lift the spirit. You can't get more comforting than smothered pork chops in the oven. Serve with mashed potatoes and fresh corn on the cob. The extra sauce from the chops can be used as gravy for mashed potatoes.

5 tablespoons butter
1 tablespoon minced garlic
5 boneless pork chops
1 (16 ounce) container sour cream
2 (10.75 ounce) cans condensed cream of mushroom soup

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Melt butter in a large skillet over medium-high heat until it begins to bubble, being careful not to burn. Stir in minced garlic and cook until fragrant, about 1 minute. Add pork chops and cook until browned, about 3 minutes per side. Transfer chops to a large baking dish, leaving pan drippings in the skillet.
  • Bake chops in the preheated oven for 20 minutes.
  • Meanwhile, add sour cream to the skillet and whisk together with the pan drippings until smooth. Add canned soup and whisk until incorporated.

4 pork chops (1 inch thick)
2 tablespoons vegetable oil
3 cups day-old French bread cubes (1/2 inch)
1/4 cup butter, melted
1/4 cup chicken broth
2 tablespoons chopped celery

1/4 teaspoon poultry seasoning
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1/3 cup water

Steps:

  • In a skillet, brown the pork chops in oil. Place chops in an ungreased shallow baking pan. Toss bread cubes, butter, broth, celery, onion and poultry seasoning. When the days get colder, this easy casserole is the kind of cozy dinner that'll warm you right up any night of the week. It starts with a creamy mashed potato base that gets topped with tender, seasoned pork chops and finished with a hearty helping of savory caramelized onions and mushrooms.

1 pouch (4.7 oz) Betty Crocker™ creamy butter mashed potatoes
Water, butter and milk called for on mashed potato pouch
2 oz cream cheese, softened
2 tablespoons chopped fresh Italian (flat-leaf) parsley
1 tablespoon chopped fresh thyme leaves
3 tablespoons butter
4 boneless pork loin chops, 1/2 to 3/4 inch thick (6 oz each), trimmed of fat
3/4 teaspoon salt
1/4 teaspoon pepper
2 medium onions, halved and cut into 1/4-inch slices (4 cups)
1 package (8 oz) cremini mushrooms, sliced
1 cup Progresso™ chicken broth (from 32-oz carton)
1 teaspoon Worcestershire sauce
4 teaspoons Gold Medal™ all-purpose flour

Steps:

  • Heat oven to 400°F. Spray bottom of 11x8-inch (2-quart) glass baking dish with cooking spray. Make mashed potatoes as directed on pouch; stir in cream cheese, 1 tablespoon of the parsley and 2 teaspoons of the thyme. Spoon mixture into bottom of baking dish; set aside.
  • In 12-inch skillet, heat 1 tablespoon of the butter over medium-high heat. Season pork with 1/2 teaspoon of the salt and the pepper; add to skillet. Cook 1 to 2 minutes on each side or until browned on both sides; arrange pork on top of potatoes in baking dish.
  • Add remaining 2 tablespoons butter, the onions, remaining 1 teaspoon thyme and 1/4 teaspoon salt to skillet. Cook 7 to 8 minutes over medium-high heat, stirring frequently, until onions are browned and tender. Stir in mushrooms; reduce heat to medium, and continue cooking 4 to 5 minutes or until tender.
  • In 1-cup glass measuring cup, mix chicken broth, Worcestershire sauce and flour. Pour into skillet; heat to boiling. Cook and stir 3 to 5 minutes or until sauce is thickened. Spoon mixture on top of pork chops in baking dish.
  • Bake 18 to 25 minutes or until pork registers 145°F with instant-read thermometer. Garnish with remaining 1 tablespoon parsley before serving.
