Steps:
- Place bacon in a large, deep skillet. Cook over medium high heat until the fat begins to render. Stir in onions and garlic; let cook for 1 minute. Stir in beans and water. Let the beans cook until the water has evaporated and the beans are tender. If the beans are not tender once the water has evaporated, add a small amount more water and let them cook until tender. Season with salt and pepper (to taste) and serve.

KETO SMOTHERED GREEN BEANS
These garlic-seasoned green beans are sauteed until crisp-tender, then topped with cheese and bacon for a delicious keto side dish. Use your favorite seasoning on the beans, or try a different cheese for variety. I like to shred my own cheese as I find it melts better than the bagged variety.

- Cook bacon in an oven-proof skillet over medium-high heat until brown and crispy, 5 to 6 minutes. Remove with a slotted spoon to a paper towel-lined plate, reserving bacon grease in the skillet. Reduce heat to medium and add enough butter to equal 2 tablespoons of fat in the skillet.
- Add green beans to the skillet and season with salt and pepper to taste. Sprinkle with garlic powder, toss to coat, and saute for 3 to 4 minutes. Add water to help steam the beans. Continue cooking until water has evaporated and beans are crisp-tender or cooked to your liking, 3 to 4 more minutes.
- Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Top beans with shredded Cheddar cheese and sprinkle with cooked bacon.
- Place skillet under broiler until cheese has melted, about 1 minute. Serve immediately.

- Heat a large skillet over medium heat. Add bacon, and cook until browned, but not yet crispy. Push bacon to the sides of the skillet and add the onions and garlic to the bacon grease. Cook and stir until onions are barely translucent. Stir in the green beans, and cook for 15 minutes, stirring occasionally.
- Pour in the water, and mix in the brown sugar, Worcestershire sauce, salt and pepper. Simmer over low heat uncovered until water has evaporated and green beans are tender, about 1 hour.

- Heat butter and 1 tablespoon oil in a 12-inch heavy skillet over medium heat until foam subsides. Cook shallots and garlic with 1/4 teaspoon salt and 1/8 teaspoon pepper, stirring occasionally, until pale golden, about 5 minutes.
- Add wine and boil until reduced by half. Add cream, 1/2 cup water, sage, 1/4 teaspoon salt, and 1/8 teaspoon pepper and bring just to a boil. Add green beans and simmer, tightly covered, stirring occasionally, until beans are tender and liquid is slightly thickened, 20 to 25 minutes. Transfer to a bowl and keep warm, covered.
- Clean skillet, then heat remaining 2 tablespoons oil in skillet over medium-high heat until it shimmers. Pat pork dry and season with 1/2 teaspoon salt and 1/4 teaspoon pepper, then cook, turning once, until lightly browned and just cooked through, about 4 minutes total. Transfer pork to a plate. Pour off oil in skillet. Return skillet to medium-high heat and add remaining tablespoon water, stirring and scraping up brown bits. Stir in bean mixture and meat juices from plate and heat over medium heat. Stir in parmesan.
- Serve pork over green beans.

I got this dish from my mother's friend. This dish does tend to be more soupy than creamy but it also produces extremely moist pork chops.

- Mix the soup, sour cream, spices, & beans together. Place the chops in the pan then pour the soup & bean mixture over the chops.

Recipe comes courtesy of "Emeril Live". I watched him make these recently and just had to give them a try. Very good side dish recipe and even my 11 year old scarfed them up. Did modify the recipe to fit our tastes a bit, but did stay with all of his ingredients. Prep time includes trimming the beans, chopping the bacon, and mincing the garlic & shallots.

- Bring a large pot of salted water to a boil.
- Add the beans and cook until tender, 2 to 3 minutes.
- Drain in colander and transfer to an ice bath.
- Drain well.
- Fry the bacon in a large skillet and cook until crisp and golden (approximately 5 minutes).
- Add the shallots& garlic and cook for 2 minutes.
- Add the flour and cook, stiring constantly for 2 minutes.

- 1. Properly wash your potatoes and beans, dice the potatoes and ham and set aside. 2. In a large pot or Dutch oven, heat the vegetable oil over medium-high heat, add the onions, bell pepper, celery and ham and sauté until the vegetables are wilted. About 5 minutes or so. 3. Stir in the garlic and cook for a minute or so, then add in the beans and potatoes and stir fry for about another 3-5 minutes, making sure everything is well mixed and incorporated. 4. Poor in the chicken stock, cover and heat to simmer. 5. After about 5 minutes, add the diced green onions. Simmer for at least 30 minutes, tasting periodically and adjusting seasoning with salt, pepper, garlic powder and hot sauce to taste. 6. Serve as a side or over rice as a main dish, if you're so inclined. Will make about 6-8 servings.
