1 tablespoon salt
1 tablespoon dark brown sugar
1 tablespoon chipotle powder
1 tablespoon dried sage powder
6 pounds pork butt, bone in
1 cup vinegar
3 tablespoons brown sugar
6 jalapenos, minced
1 tablespoon dry rub
1 1/2 pounds small red potatoes
1 1/2 pounds Yukon gold potatoes
2 pounds yams
2 tablespoons Dijon mustard
2 tablespoons mayonnaise
2 tablespoons lemon juice
2 teaspoons celery seed
4 tablespoons chopped scallions
Salt and pepper, to taste

Steps:

  • In a bowl mix all the spices together. Save 1 tablespoon of the rub for sauce. Rub the rest of the mixture vigorously into the pork. Wrap the pork and refrigerate for 24 h
  • Place vinegar, sugar, jalapeno and dry rub mixture into a medium saucepan over medium hot heat and bring to a boil. Reduce the heat and simmer for 10 minutes. Remove from heat.
  • Preparation: Using only one side of the grill, build a fire with 6 to 10 pounds of charcoal. You will control the heat of the fire by restricting the air flow. Add presoaked hickory chips on the charcoal and smoke should develop. Place the pork butt on the opposite side of the grill as the fire and close the lid. Shut down all air flow possible and maintain a temperature of 225 to 250 degrees for 5 1/2 to 6 1/2 hours; or until the internal temperature of the meat reaches 180 degrees--this is the hard part of barbequing. Remove the pork from the grill and wrap it in heavy duty foil. Let it sit covered in foil for 30 minutes. Unwrap the pork and remove the skin and excess fat. Tear the pork into shreds with forks or your fingers. Place the shredded pork in a bowl and toss with the sauce. Pile the pork high on a bun and serve wit
  • Wash all the potatoes. Cut the yams into quarters. Wrap the potatoes in foil. Place all the potatoes in the foil in a single layer on the grill and roast for 1/2 hour. Remove the potatoes from the grill and allow to cool. Cut the red, Yukon gold and 1/2 of the yams into 1/2-inch pieces. Take the remaining pound of yams and remove the skin. Blend the skinless yams, mustard, mayonnaise, lemon juice and celery seed until smooth. Fold in the scallions and cut potatoes and season with salt and pepper. Refrigerate for 2 hours before serving.

1 large red bell pepper
2 tablespoons olive oil
1 1/2 pounds large red potatoes, scrubbed and sliced 1/4-inch thick
2 tablespoons white wine vinegar
3 ears corn, shucked
1/4 cup plain yogurt
1/2 cup mayonnaise
1 canned chipotle in adobo sauce, seeded and minced to a paste, plus 1/2 teaspoon adobo sauce
2 tablespoons chopped cilantro
Kosher salt

Steps:

  • Rub the pepper with a little of the oil and grill it on the rack about 5 to 6 inches from the heat source, turning frequently, until it is charred on all sides, about 10 to 15 minutes. Transfer it to a bowl and cover the bowl with plastic wrap. When cool enough to handle, peel the pepper and remove the seeds, Chop the pepper and set aside. Let the grill fire cool to medium heat.
  • Toss the potatoes with 1 tablespoon of the oil and salt to taste and arrange in one layer on the rack. Grill, turning frequently, until browned and tender, 15 to 25 minutes. Transfer the potatoes to a large bowl and while still hot, toss with the vinegar. Rub the corn with the remaining oil, season with salt and grill, turning frequently, until the corn is lightly golden on all sides, 10 to 15 minutes. Cut the corn off the cob and add to the bowl with the potatoes. In a small bowl whisk together the yogurt, mayonnaise, chipotle, adobo sauce, and salt, to taste. Add the chipotle mayonnaise, red pepper, and cilantro to the potato salad and toss gently.

500g bag new potato
2 large corn cobs
½ red onion , thinly sliced
juice 1 lime
2 tbsp olive oil
2 garlic cloves , crushed
½- 1 tsp sweet smoked paprika
4 skinless chicken breasts , each halved across the middle to make 2 thin escalopes
small bunch coriander , leaves roughly chopped
lime wedges, optional, to serve

Steps:

  • Bring to the boil a saucepan of water big enough to hold all the potatoes and corn. Cook the potatoes for 12 mins, adding the corn after 6 mins, until both are tender. Drain well.
  • Meanwhile, mix the sliced red onion with the lime juice and half the oil in a large salad bowl. Mix the remaining oil with the garlic, paprika and some seasoning in a shallow bowl, then toss in the chicken until thoroughly coated.
  • Heat a griddle pan, then griddle the chicken for 3 mins on each side until cooked through. Tip the potatoes into the bowl with the onions. Stand a corn cob on one end on a chopping board, then slice down the length, cutting off the kernels in strips. Mix into the potato salad with the coriander and seasoning, then serve alongside the smoky griddled chicken, with lime wedges, if using.

2 pounds red potatoes
½ pound bacon
1 cup mayonnaise
¼ cup freshly grated Parmesan cheese
1 tablespoon ground paprika
1 tablespoon ground mustard powder
1 tablespoon chopped fresh flat-leaf parsley
1 tablespoon chopped fresh chives
1 teaspoon Worcestershire sauce
1 teaspoon minced garlic
1 teaspoon seasoned salt (such as Jane's Krazy Mixed-Up Salt®)
½ cup chopped red onion

Steps:

  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain and cut into bite-sized pieces.
  • At the same time, place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels and chop when cool enough to handle. Transfer 3 tablespoons bacon drippings to a large bowl.

1 pound red potatoes
1 pound sweet potatoes
1 tablespoon apple cider vinegar
1/4 cup mayonnaise
1/4 cup plain Greek yogurt
2 teaspoons honey
1 teaspoon chopped chipotle chile plus 2 teaspoons adobo sauce (from 1 can chipotle chiles in adobo sauce)
Kosher salt and freshly ground black pepper
1/2 cup chopped green onions (from about 2)
2 ounces smoked Gouda cheese, cut into 1/4-inch cubes (see Cook's Note)
Suggested garnishes: Smoked paprika, chopped fresh cilantro

Steps:

  • Cut the new potatoes and sweet potatoes into 1-inch cubes (do not peel) and put in a medium pot (see Cook's Note). Add cold water to cover and bring to a boil. Lower the heat to medium and cook until barely fork-tender, 12 minutes. Drain the potatoes in a colander and immediately drizzle the vinegar over them; let cool.

2 1/2 lb petite red potatoes, scrubbed, patted dry, and quartered
1 Tbsp kosher salt, plus more to taste, divided
6 Tbsp olive oil, divided
4 oz chorizo sausage, casings removed, chopped
2/3 c diced sweet onions
2 garlic cloves, minced
2 Tbsp coarsely chopped oregano
1/4 c spicy brown mustard
3 Tbsp honey
1 tsp sherry vinegar
3/4 tsp smoked paprika
1/4 tsp crushed red pepper flakes, or to taste
2/3 c diced fire-roasted red peppers
1/4 c chopped flat-leaf parsley
3 eggs, hard-boiled, peeled, cut into half-moon slices
2 tsp non-pareil capers (small size capers)
2 parsley sprigs, for garnish, if desired

Steps:

  • 1. In a large pot, add potatoes and 1 tablespoon kosher salt. Cover potatoes with water by about 1 inch. Bring to a boil, over medium high heat. Reduce to simmer; cover. Cook, about 18-20 minutes, or until fork tender. Drain. Transfer to a large bowl; let potatoes cool slightly.
  • 2. Meanwhile, over medium high heat, heat 1 tablespoon olive oil in a large nonstick skillet. Add chorizo; cook chorizo about 8-10 minutes, or until slightly crisped. Transfer to a paper-lined plate. Set aside. Drain drippings in skillet, reserving about 1 tablespoon drippings in skillet. In same skillet, add 4 tablespoons olive oil, garlic, and onions. Cook, stirring, 3-4 minutes or until onions are tender. Add oregano; cook 1 additional minute. Remove from heat. Stir in mustard, honey, vinegar, smoked paprika and red pepper flakes until well combined. Set mustard-onion dressing aside.
  • 3. While potatoes are still warm, add crumbled chorizo, red peppers, parsley, eggs, and mustard-onion dressing. Season with kosher salt to taste. Gently stir to mix ingredients.
  • 4. In a small skillet, over medium heat, heat remaining 1 tablespoon olive oil. Add capers; cook 1-2 minutes, or until they begin to pop and crisp slightly.
  • 5. To serve, spoon potato salad in a large serving bowl; sprinkle with crisped capers. If desired, garnish with parsley sprigs. Serve room temperature.

400g can red kidney beans , drained and rinsed
3 spring onions , finely sliced
small bunch of coriander , chopped
1 tbsp chipotle paste
2 tbsp sunflower oil
2 tbsp mayonnaise
juice 1 lime
1 Little Gem lettuce , torn
½ cucumber , halved lengthways and sliced on the diagonal
1 carrot , halved lengthways and sliced on the diagonal

Steps:

  • Microwave the sweet potato on High for 6 mins until tender. Lightly mash the beans, then add the potatoes, 2 spring onions, coriander, chipotle paste and seasoning. Mash a little more until the potato is combined. Shape into 4 cakes.
  • Heat the oil in a non-stick frying pan, then fry the bean cakes for 4-5 mins each side.
  • Meanwhile, mix the mayo, lime juice and seasoning in a bowl. Add remaining onion and salad ingredients and toss well. Serve alongside the bean cakes.

1 teaspoon smoked Spanish paprika

1 jar (6 ounces) marinated quartered artichoke hearts
1 cup sour cream
1/4 cup mayonnaise
1 celery rib, thinly sliced
2 tablespoons capers, drained
2 green onions, sliced
3 tablespoons minced fresh basil

Steps:

  • Scrub potatoes; cut into 1-in. pieces. Place in a large bowl; drizzle with oil and sprinkle with paprika and salt. Toss to coat. Transfer to a greased 15x10x1-in. baking pan. 5 pound(s) russet potatoes
1 jar(s) Best Foods/Hellman's real mayonnaise, 30 oz.
1/3 cup(s) onion powder
- salt, to taste
2 tablespoon(s) liquid smoke flavoring
2 tablespoon(s) yellow mustard
1 package(s) pepper bacon
- hard boiled eggs

Steps:

  • Boil potatoes.
  • In a separate saucepan, also boil one egg per potato until hard-cooked.
  • While potatoes and eggs are cooking, cook bacon until crispy.
  • Cool and break bacon into pieces.
  • Cool cooked potatoes, then peel. Cut up potatoes into chunks and place in a large bowl.
  • Cool eggs by running cold water over them.
  • When cool enough to handle, peel eggs and use an egg slicer, to cut lengthwise, then turn egg, and cut crosswise to produce small chopped eggs.
  • Sprinkle potatoes and eggs with salt, and lightly mix. Set aside.
  • In a mixing bowl, mix by hand: Mayonnaise (real mayo, NOT reduced fat), onion powder, liquid smoke, and yellow mustard. Set aside.
  • Mix bacon into potato and egg mixture.
  • Pour sauce over all and mix with a wooden spoon. Salt to taste if necessary.
  • Make sure the sauce is good and creamy. If the salad is too dry, add more mayo until creamy.
  • Chill salad and serve. YUM!

2 small - medium poblano peppers
2 lbs. small red potatoes
2 T. Chipotle Tabasco sauce
½ cup fresh or frozen corn kernels
1/3 cup mayonnaise
1/3 cup low-fat sour cream
1 canned chipotle chile, drained and minced
½ cup chopped roasted red peppers from jar, drained well
2 scallions, thinly sliced
Coarse Kosher salt
Pepper
½ t. ancho chile powder

Steps:

  • Char poblanos over gas flame or grill until blackened on all sides. Enclose in plastic bag; let stand 10 minutes. Peel and chop poblanos (should have approximately ½ cup) and set aside. Steam potatoes until just tender, about 15-20 minutes, depending on size. Cool slightly, and quarter warm potatoes. In a bowl immediately toss potatoes with Chipotle Tabasco sauce. Cook corn kernels in boiling salted water until crisp-tender, about 3 minutes. Drain well and set aside. Combine mayonnaise, sour cream, and chipotle chile. Add to potatoes along with poblanos, red peppers, corn kernels, and scallions. Toss to coat. Season with salt and pepper. Sprinkle with ancho chile powder as garnish.

1 1/2 pounds small red potatoes
1 tablespoon salt
6 slices bacon
4 tablespoons vegetable oil
5 scallions
2 tablespoons cider vinegar
coarse black pepper to taste

Steps:

  • In a 3-quart saucepan combine potatoes with cold water to cover by 2 inches and bring to a boil. Add salt and simmer, covered, until potatoes are just tender, 10 to 15 minutes. In a colander drain potatoes and cool. (Potatoes may be boiled 2 days ahead and chilled, covered.)
  • Prepare grill.
  • In a skillet cook bacon over moderate heat until crisp. Transfer bacon to paper towels to drain and reserve 1 tablespoon drippings. Break bacon into large bits.
  • Halve potatoes and toss gently with 1 tablespoon oil to coat well. Arrange potatoes, cut sides down, on an oiled rack set 5 to 6 inches over glowing coals and grill until golden, 4 to 5 minutes. (Alternatively, potatoes may be grilled in a hot well-seasoned large ridged grill pan over moderately high heat.)
  • Cut scallions crosswise into 1 1/2-inch pieces and quarter pieces lengthwise.
  • In a large bowl toss potatoes with reserved drippings, bacon, remaining 3 tablespoons oil, vinegar, scallions, pepper, and salt to taste. Serve potato salad at room temperature.
