This is my favorite kale salad. It is super nutrient-dense and loaded with healthy fats and lots of flavor. The technique of 'massaging' the kale is very important since it breaks it down, softens the texture, and makes it more palatable. Please take the time to remove the leaves from the stems. The stems are tough and very bitter. Use any kind of kale for this recipe.

1 bunch green kale, stemmed and leaves roughly chopped
1 bunch red kale, stemmed and leaves roughly chopped
½ cup chopped pecans
¼ cup apple cider vinegar
1 tablespoon honey
1 ½ teaspoons chipotle pepper powder
1 ½ teaspoons smoked paprika
1 teaspoon liquid amino acid (such as Bragg®)
1 avocado - peeled, pitted, and chopped

Steps:

  • Combine green kale, red kale, pecans, apple cider vinegar, honey, chipotle pepper powder, paprika, and liquid amino acid together in a bowl. Massage the kale mixture together using your hands until leaves are evenly coated and starting to soften, about 3 minutes; fold in avocado.

1 ⅓ pounds kale, stems removed and leaves chopped
2 ⅓ cups frozen baby lima beans, thawed
⅔ cup grated Gouda cheese
⅔ cup pitted and chopped Kalamata olives
⅔ cup thinly-sliced sun-dried tomatoes
1 ⅓ cups olive oil
½ cup lemon juice
2 ⅔ tablespoons smoked paprika
2 ½ tablespoons honey
1 tablespoon ground chipotle chile pepper
2 ⅔ teaspoons balsamic vinegar
2 teaspoons ground black pepper
1 ¾ teaspoons kosher salt

Steps:

  • Mix kale, lima beans, Gouda cheese, Kalamata olives, and sun-dried tomatoes together in a bowl.
  • Whisk olive oil, lemon juice, paprika, honey, chipotle pepper, balsamic vinegar, black pepper, and kosher salt together in a bowl until dressing is smooth; pour over kale mixture and toss to coat.
